I would have had a smile on my face for years and years. I know they appreciated everything I did and everything I do for them - but sometimes when you "hear" it when they don't know you are listening ........

Herbed Chicken and Steamed Veggies in MINUTES

Here's another recipe that works great in our SmartSteamer 

(yes the one that is on Sale this month at 50% off)

 Herbed Chicken with Steamed Vegetables

Ingredients
1/2 cup fresh basil leaves
1 green onion
2 tbsp. Italian parsley
2 tbsp. capers, drained
1 tbsp. fresh lemon juice
1 clove garlic, peeled
3 tbsp. extra virgin olive oil
1 tsp. Dijon mustard
1 1/2 cups fat-free chicken broth
2 boneless chicken breasts
1/2 lb./225g green beans, trimmed
1 red pepper, cored and cut into thick strips

Place first eight ingredients in base of Chop 'N Prep™ Chef. Replace cover, twist to seal and pull cord 4-5 times to chop and combine ingredients. Remove blade and transfer sauce to a small bowl. 

Place chicken broth in Water Tray of Tupperware® SmartSteamer. Place chicken in Steamer Base; season with salt and pepper and brush with sauce. Place green beans and red pepper strips in Colander. Place the Steamer Base on top of the Water Tray and the Colander on top of the Steamer Base. Cover and microwave on high power 14 minutes or until chicken reaches an internal temperature of 165° F/75° C. 
Transfer chicken to a serving platter and brush with sauce. 
Toss veggies with remaining sauce and serve. 

I think this would be great with a serving of brown rice for a complete weeknight meal in  maybe 30 minutes.

I can honestly say that I have started steaming my veggies and looking at some of the great recipes I have found for "main dishes".   I even have a "collection" of recipes for the SmartSteamer that I am going to be trying.  And just recently I found this really interesting Website that has some really really great looking/sounding recipes just for this awesome piece.

How to define Myself

I know that there are times that I struggle to figure out how or where "fit in".
When I stop and think about it I find that it is because I haven't figured out who I am or how I "define" who I am.
When I saw this one I just KNEW it was calling to me to explain.

So tell me, do you think this pretty much spells out HOW to define yourself?

I love this one in total, but I think the best part is:

I do not define myself by how many times I have been knocked down.  

I define myself by how many times I have struggled to my feet.

You can't do anything about the past - you can regret things that happened, things that you have done, but you can't change it.  It's done.

You can't do anything about the future - you can prepare and acknowledge that what you do today will effect the future, but it is the future.

Today is the only day you can do anything about - LIVE IT.

Part of YOUR Journey

Sometimes I wonder why people come back into your life.

Let me explain what I mean.  You can be friends, close or otherwise, for years and then for no reason or through no fault of your own, they are gone.  They may not actually be gone from where you are, they are just moving in different circles or just don't want to "be friends".  They may or may not be able to tell you why things have changed.  But they have.  Of course you are hurt.

Some times years later, sometimes many many years later, there they are.  You are moving in the same circle.  You have some of the same friends.  What happened?  Not sure why they left or even why they are back.  And sometimes, probably more often than not, they are gone again.  This time maybe for good.  Once again,  you are hurt.

Perhaps here is an explanation as to why this has happened.

You have been part of their journey called "life" and they have been part of yours.

Their journey and yours are not the same, they just happened to converge for a time.
They have been part of the journey that is making you what YOU were meant to be all along.
Just as you have been a part of theirs.

Scallops in Lemon Vinaigrette

If you picked up one of the Tupperware Steamers (yes it is on SALE this month) and you need a recipe to get you started .....

Scallops in Lemon Vinaigrette

Ingredients
1 lb./455 g medium sea scallops
1/4 tsp. kosher salt
1/4 tsp. black pepper
1 lb./455 g fresh asparagus
1 lemon, zested and juiced using Lemon Lime Press
2 tbsp. extra virgin olive oil
2 tsp. fresh dill, chopped
1 tbsp. fresh chives, chopped 

Place scallops in the Colander Tray and sprinkle with half the salt and pepper. 

Place asparagus in the Steamer Base. Fill the Water Tray with 1 3/4 cups/400 mL water. 

Place Colander Tray on top of Steamer Base, Steamer Base on top of Water Tray and cover. 

Microwave on high power for 8 minutes. 

Meanwhile, in a small bowl, whisk the remaining ingredients together. 

Serve scallops and asparagus drizzled with dressing. Serve with white or brown rice. 

Serves 4 

I am going to try this one (but only as a "half" recipe) one day when no one else is home for dinner.  You see other than Lobster or Shrimp .... Seafood is not "loved" in this house by anyone other than me.  I'm thinking if I make this for me for dinner I could have lunch for the next day too.

Fiscal Cliff - in REAL terms for REAL people

With all the "talk" about our Fiscal Woes, the Fiscal Cliff, the Debt Ceiling .... I thought perhaps this would be a good way to "explain" it in a way the WE understand it so that just maybe our "leaders", and I use that term VERY loosely, may just understand it and actually DO something about it.

Two Novel Ways Of Looking At Our Fiscal Woes

The "Fiscal Cliff" put in a much better perspective.

Lesson # 1:

* U.S. Tax revenue: $2,170,000,000,000
* Fed budget: $3,820,000,000,000
* New debt: $ 1,650,000,000,000
* National debt: $14,271,000,000,000
* Recent budget cuts: $ 38,500,000,000

Let's now remove 8 zeros and pretend it's a household budget:
* Annual family income: $21,700
* Money the family spent: $38,200
* New debt on the credit card: $16,500
* Outstanding balance on the credit card: $142,710
* Total budget cuts so far: $38.50

Got It ??.......OK now,


Lesson # 2:

Here's another way to look at the Debt Ceiling:

Let's say, You come home from work and find there has been a sewer backup in your neighborhood....
and your home has sewage all the way up to your ceilings.

What do you think you should do ......

Raise the ceilings, or remove the shit?

 

Now I'm not sure how you will react to this ... laugh or do one of those "V8 Commercial" things or blast me for even bringing this up ... but now its out there.  Have at it.  What do you think?

What is waiting for you?

I think sometimes we forget that there is a whole lot of things out there that we have to open our eyes to see.  Especially when things seem to be going in the exact opposite of what we want or think that we want.  It is time  ........ take OFF those BLINDERS!

Cinnamon Hot Chocolate Mix

I know I love having some "premade" or "quick to make" things in my cabinet.  You know when the mood strikes you and you just NEED something and you don't want it to take forever to make.

Here is a really nice HOT drink to make for this coming winter, while you sit around the fire, cuddle on the couch ....

This will make 20 servings that you can store in the cabinet (in a Modular Mate piece)

Ingredients needed for mix  

1 cup Simple Indulgence Chocolate Dessert Blend
1 tsp. Simple Indulgence Cinnamon-Vanilla Seasoning Blend
1/4 cup light brown sugar

Combine Simple Indulgence Chocolate Dessert Blend, Simple Indulgence Cinnamon-Vanilla Seasoning Blend, and light brown sugar to create mix.

For Cinnamon-Vanilla Hot Chocolate 

Microwave 1 cup milk and 1 tbsp. of Hot Chocolate Mix in a microwave-safe mug 1 minute until hot but not boiling. 

Stir until dissolved and garnish with a large marshmallow or a handful of miniature marshmallows if desired.

MMMM doesn't this really sound like a great stay at home mug?  I think I'm going to be making myself a mug right now.  If you want to make your own, you can get the Chocolate Dessert Blend and Seasoning Blend on my Tupperware site

I think this is pretty much a "given" but sometimes even the "givens" need to be put up front so that we remember that they are special.
