Time for a change?

I know there are times in our lives that require us to make a choice.
And that those choices will or could have some drastic changes to our lives.
But sometimes it is required to take a stand for what you believe in or to stand up for yourself.




Sometimes those choices are the most difficult because it means changing everything we have become comfortable with.
Sometimes it is because have become so focused on the people in our lives or the problems that we have or think that we have, that we forget that we do have quite a bit to be joyful for.



I have decided, I know its a bit late for a resolution, that 2019 will be my year for change.
I will eliminate the negative in my life, one way or the other and focus more on my joys and finding more.

That could very definitely leave me quite alone, and with quite a bit of "free" time on my hands.  
Both of which are just a bit scary for me because it could become a very drastic change to my life and my belief in myself.

But hey, that could also mean I have a lot more time to spend writing or reading or blogging, so you could be seeing much more of me here.  I know scary, right?

Those three bones and a Change

Two of the most important things we need to be sharing with our kids/young "folk".

This one, I can't tell you how many times I have "fallen back on" one of these 3 bones and to be honest, I am not sure which have been used the most.  
Although sometimes that funny bone gets a ton of work out, especially when you keep saying to yourself ... you just can't make this stuff up.



But to go along with these bones, you much remember this.


Sometimes, no matter what we do or say or wish, there is only one way that you can thrive in your life.  Only on way to make your life the way YOU want it to be.
You must accept this one ... and then have the backbone to make it happen.

Yes there are some habits that we should get rid of

I know that there are many many habits that we try to make part of our lives.
Then there are others, that we should be stopping because they are just not good for us.
And no they aren't just things like over eating or smoking or drinking too much.

They include things like this that can shorten our enjoyment of life.  
And we ALL need to be finding enjoyment in our lives.




Now I believe it takes 21 days of doing something every day to make it a habit.
Let's start today, working on this list, and scratching them off our list of "daily habits" so that by the end of the month we will have eliminated these "habits" from our lives.

Loaded Baked Potato Soup Quick!

It's definitely "soup season" around here and probably in most of North America.
I don't know if I have shared this one before or not, but I was looking for something to do with leftover mashed potatoes ... yes I kind of "over did it" when I was peeling potatoes the other day.

This one looks pretty good - though I may have to dice up a few small potatoes (and boil or microwave) while making this one for a bit more texture.




Yield: 4
Serving Size: 1 ½ cups
Ingredients
  • 4 cups (leftover) mashed potatoes
  • 2 cups vegetable or chicken broth
  • ½ cup sour cream, divided
  • 1 cup shredded Cheddar, divided
  • 4 strips bacon, cooked, crumbled, divided
  • ½ cup cooked chopped broccoli florets, divided
Instructions
  1. In the base of the 1¾-Qt./1.75 L TupperWave® Stack Cooker Casserole, stir together leftover potatoes and vegetable stock.
  2. Cover and microwave on high power 3 minutes, or until heated through.
  3. Divide soup between four bowls. 
  4. Top each bowl of soup with 2 tbsp. of the sour cream, ¼ cup of the Cheddar; sprinkle with crumbled bacon, and broccoli florets.

I really love my Stack Cooker.  I can make 3 different pieces of a meal, in the microwave .... Meatloaf, chicken, soups, desserts, soooo many tasty things.

Let's have a Waffle Sandwich this week.

Here's an interesting way to get your kids to eat lunch ...
But then again, I may try this for my work lunch this week  😀





Yields: 4 Servings

Ingredients

  • 1 cup self-rising flour
  • 3 tbsp. sugar
  • ½ tsp. salt
  • 1/3 cup beer
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 425° F/218° Place Silicone Waffle Form on baking sheet and set aside.
  2. Place all ingredients in medium sized Thatsa® Bowl and mix until well combined.
  3. Divide batter evenly between all waffle cavities and bake for 12 minutes.
  4. Let cool for 5 minutes before unmolding.
