Orchard Salsa


Ingredients 

  • 3 small Granny Smith apples, cored and quartered 
  • 1/2 red pepper, quartered 
  • 1/4 red onion 
  • 1 jalapeno pepper, seeded 
  • 1/2 tbsp. Simple Indulgence™ Southwest Chipotle Seasoning 
  • 1/3 cup Lime Juice
  • 1 TBSP Honey
  • salt and pepper

Blend 1/3 cup lime juice, juiced using Lemon Lime Press, 1 tbsp. honey, salt and pepper, to taste.

Place all ingredients in base of Quick Chef™ Pro System with blade attachment. Turn handle to process until coarsely chopped.

Season to taste with salt and pepper.

This looks great. I bet it would be equally good on crackers with cheddar cheese or over the top of a London Broil or even Grilled Chicken. I think I will work on this for Labor Day weekend - Jenn's dorm check in weekend (but since she's working she will be split between here and there and work) so making something special would be nice.  Don't you think?

Mini Chicken Gouda Sandwiches


I don't know about you but I think this sounds really good. I love that you can make this into "mini" sandwiches - almost like finger food from some fancy smancy party!
I know that smoked Gouda is usually easy to find but I've recently become acquainted with smoked Gruyere that I bet would be awesome in this recipe too. I'm going to have to try it both ways.



Serves 16
Preparation Time: 45 minutes

Ingredients:
Chicken Gouda salad:
  • 1 1/4 cup cooked chicken pieces
  • 1/3 cup celery, chopped
  • 1/3 cup shredded smoked Gouda
  • 3 tbsp. onion, chopped
  •  3 tbsp. dried cherries
  • 2 tbsp. chopped toasted almonds
  • 1/2 cup mayonnaise
  • Salt and pepper to taste

Mini Sandwich rolls:
  • 1 (11oz.) pkg. refrigerated French bread dough tube
  • 1 tbsp. shredded Parmesan cheese
  • 1 tsp. Simple Indulgence™ Italian Herb

Directions:
Chicken Gouda salad:
Place all ingredients in Quick Chef with blade attachment.  Replace cover and chop until all ingredients are chopped and blended together.  Season to taste with salt and pepper.  Serve with Mini Sandwich Rolls or as a salad over greens.

Mini Sandwich rolls:
Preheat oven to 350°F. Stretch I package (11 oz.) refrigerated French bread dough to 16 inches. Using the edge of a Silicone Mat as a measuring guide, slice dough into 16 crosswise slices.
Arrange dough cut side down on Silicone Mat placed on a baking sheet.

Sprinkle tops of rolls with cheese and Simple Indulgence™ Italian Herb.
Bake 20-25 minutes until golden brown.

Remove from oven and cool completely.  Fill rolls with Chicken Gouda Salad.

Rice Pudding

I just love rice pudding.  I don't know about you but I think I've always liked rice pudding.
Perhaps it was because when I was a kid and my mom was in the hospital, I made dinner for my dad and us kids and made the rice too soon, so it wasn't hot anymore.
My grandfather told me later that I had the beginnings of dessert so it was just fine.

That is my oldest memory of rice pudding! Here's a pretty good one from Tupperware that I am going to try after my travels are finished. This can be served warm or cold.  I can't say I've ever had Rice Pudding served warm but I may have to try it both ways - if it serves 4 - 6 I could do half warm and half cold.



Serves 4-6
Preparation Time: 15 minutes

Ingredients:
2 cups milk
 1 (3 oz. pkg.) cook and serve vanilla pudding
1 (8.8 oz. pkg.) microwave ready rice or 2 cups cooked rice
1 cup raisins
1/2 tsp. Simple Indulgence™ Cinnamon & Vanilla

Directions:
Place milk in a 8 1/4-Cup/ 2L Microwavable Container. Sprinkle pudding mix over milk and stir to blend with Saucy Silicone Spatula.

Add rice, raisins, and Simple Indulgence™ Cinnamon & Vanilla and stir to blend.  If you are using cooked rice, you could easily make your rice using Tupperware's Microwave Rice Maker or your own "on the stove" version.

Cover and heat in microwave on high power (100%) for 6-8 minutes until mixture comes to a complete boil. Stir every 2-3 minutes during cooking.

Remove from microwave.

Cool, serve warm or cold.

Nutrition Facts: Serving Size: 1/4 Recipe, Servings per recipe: 4, Calories 370, Calories from fat 25, Total fat 3g, Saturated fat 1.5g, Trans fat 0g, Cholesterol 10mg, Sodium 220mg, Total Carbohydrate 82g, Dietary fiber 2g, Sugar 48g, Protein 8g

E3 Tip: Topping on whipped cream: Additional Sprinkle Simple Indulgence™ Cinnamon-Vanilla and chocolate shavings. For chocolate shavings, use a thick chocolate bar (room temperature) and use the Twistable™ Peeler to shave thin slices.

Who is this Fireman ? Do you know?

I know I have shared a lot of things that my daughter Jenn has done and continues to do, including pictures both on here and on Facebook, but my son has been a bit of a "mystery" to some.

Jenn has "friended" me on Facebook - I know they say you shouldn't be on your kids Facebook page because you just never know what it is you might see.  But it has worked ok for us.  The fact that she still lives at home (albeit only on the weekends soon when she goes away to school) I don't have to see her Facebook Page to know what is going on in her life.

Now Dan on the other hand has absolutely NO desire to "friend" me so for the most part I have NO idea what is going on in his life.  You see, just in case you didn't know, he moved away in the Fall of 2009 when he was hired as a Fireman.   He went through the Fire Academy and graduated in the Spring of 2010 and we knew at that point, without a doubt, he wasn't coming home again.  We have always been extremely proud of our son - he has accomplished so much but we know still has so much more he wants to accomplish.

He still has lots of exciting things going on in his life, and maybe we will find out about some of them around the time they happen and then again ........ we may just find out in passing, if someone remembers to tell us.  And then again we may never find out unless someone else tells us. 



This was a picture that was taken after the jet crash back in April, which although he was working and what happened was not good - I think its a really good picture of him.  So if anyone sees something exciting about this fireman  ....... do you think that just maybe you could let mom know ?? Just in case she hasn't seen or heard anything about it..... Just saying.  Mom's are usually the last to know anything but this one would like to make sure she at least hears about them.

Tupperware Possibilities

I know you all know this already, but I have recently become a Tupperware Consultant (remember Tupperware?) because I really do love Tupperware.   I've been sharing some of the things I have found to use my Tupperware products.  I have even more great recipes - both from Tupperware and Weight Watchers to share as the weeks go by.  And of course I am always looking for more recipes to try and to share.

You know that they have some awesome new products and some tried and true "oldies but goodies" that I have had forever!  I have some canisters that sit on my shelf keeping things airtight and "bug" free that I know they still have - just the color caps have changed - says a lot for this product all by itself.  When I was looking through the catalog I saw one of the toys my kids had when they were young - that would be over 20 years ago and its still going strong!

Italian Frittata by Tupperware

Easy, tasty Breakfast anyone??



Ingredients:
  •  3/4 cup frozen country-style hash browns 
  • 1 green onion 
  • 1/8 red bell pepper 
  • 2 tbsp. cold water 
  • 1/2 tsp. Simple Indulgence Italian Herb Seasoning
  • 2 eggs
  • Blend 1/4 cup reduced fat shredded cheddar cheese 
 Place hash browns in Tupperware® Microwave Breakfast Maker, cover and microwave on high 1 minute.
Meanwhile, place green onion and bell pepper in Smooth Chopper with blade attachment.
Pull several times to chop.
Spread over hash browns.
Change Smooth Chopper to paddle attachment, add eggs, water and seasoning blend, and pull cord several times to blend.
Pour mixture over vegetables and top with cheese.
Cover and microwave on high 1 minute, 45 seconds.

Allow to rest 2 minutes while covered, then serve.

I'm liking this recipe.  Super easy, super quick and looks pretty good too.  I'm not a real big breakfast person when I'm working which unfortunately leads to mid morning snacking or an abundance of coffee (not always good for my stomach).  As quick and easy as this seems to be I bet I could have this between 9 and 10 in the office, feel better and get even more work done without having the munchies get in the way.  I bet even Jenn would eat this if she missed breakfast in the dining hall.

Note to self - get Jenn some of the Tupperware Simple Indulgence Seasonings

So far I am really liking the Tupperware recipes I have found but it is not because I am a consultant - I am looking at these now as a mom getting ready to send her child off the school with a box of Tupperware and a copy of things to make (just in case)

Peachy Keen Frozen Yogurt

Ingredients 
  • 3 cups frozen peach slices 
  • 5.3 oz. container peach-flavored Greek yogurt 
  • 1/4 cup sugar 
  • 3/4 cup milk 
  • 1/2 tsp. vanilla extract 

Combine all ingredients in base of Quick Chef® Pro System.

Replace cover and turn handle until mixture is smooth and creamy.
Pour into a Freezer Mates® Small 2 (from Freezer Mates® Starter Set).
Cover and freeze until firm.

Let soften slightly before serving.

This makes 6 servings.

I am sooo going to make this!  I just love the Quick Chef Pro System - it does so many things.  It's compact enough to sit on my counter or island without constantly being in the way, but does so many time saving things without having to break out my big electric food processor.  I will be honest, I hadn't thought about frozen yogurt, but this could be interesting - peach, strawberry, blueberry - the possibilities are endless!

There is still plenty of summer left to be able to make this - oh heck don't we all just love ice cream and frozen yogurt after summer is gone?  A great after school treat ...... see mom its perfect!


I have been Blessed


Sometimes we get so caught up in the day to day hub-bub that we forget to give thanks for the simple things that God has given us.  Some have not been as lucky.

That doesn't mean that we have everything that we want or that we don't wish we had something that we "think" would make life perfect.  It just means that sometimes we have to step back and realize just what we do have - and be thankful for it.

I may not have everything I want to have; like the winning lottery ticket for a mega jackpot, and I may not be the size 8 I once was and of course would love to be again, but I do have so many things that others do not.  I have been blessed.

Cheeseburger Penne

I think this will be a perfect meal, especially when we are looking for comfort food quick!
This is another Weight Watcher's recipe that is perfect for many of the Tupperware products that I have or want to have.


Cheeseburger Penne

Ingredients
  • 2 cups uncooked penne (multigrain if possible)
  • 1 package (9 ounces) frozen meatless burgers (or lean ground beef)
  • 3/4 cup chopped onion
  • 1 can (14.5 ounces) fire roasted diced tomatoes with garlic
  • 1 1/2 cups chopped tomatoes (1 large tomato)
  • 1/2 tsp fresh ground black pepper
  • 1 1/4 cup (5 oz) 50% reduced fat extra sharp cheddar
  • 6 TBSP chopped dill pickle (optional)
If using burgers - grill on medium-high heat - 2 minutes per side.
If using ground beef - microwave in Tupperware stack cooker on high.

Cook pasta in Tupperware Microwave Pasta Cooker.

Using the Tupperware Quick Chef Pro, chop onions, set aside.  Then chop the tomato.
Shred cheddar using Tupperware Grate 'N Measure Grater. (also found in medium & complete pasta set)
Chop dill pickles in the Quick Chef Pro if using

In a large cast-iron or oven/broiler friendly pan, coated with cooking spray over medium-high heat, saute the chopped onions 2 minutes.  Stir in canned tomatoes, chopped tomato, and pepper.  Add chopped burgers or crumbled ground beef to pan.

Stir tomato mixture and half the cheese into the pasta.  Spoon the pasta mixture into a cast-iron skillet.  Sprinkle remaining half of cheese on top.  Broil 1 to 2 minutes or until cheese is melted.

Top with chopped pickle if using.

Yields 6 servings - 1 1/2 cups each

Well I will tell you that I personally had NO idea what this was all about when I first saw them hanging on a display in the grocery store and of course I HAD to check them out.

Now depending on how much use and "abuse" it gets during its use, the company believes that it should last 3 to 4 years.  Which I think is wonderful, especially since it is not really that expensive but there is no recycling to worry about - no extra landfill items floating around.

I had originally purchased ours so that my husband could take it with him when he heads out to play golf - its been really hot and humid here in Jersey but he still goes out to play golf at least once a week.  What I had originally thought was I could put water in the bottle (it holds 18oz) and put it in the freezer.  When he takes the bottle, which he could attach with the clip to his golf bag, it will slowly melt during his 4 hours of play and he could stay hydrated.

We had to go pick up a few more since we also take it to the pool - keeping that ice/cold water available has been a blessing.

I bet, since it is dishwasher safe, you could use this for your kids going back to school.  I think even if you partially filled it and put into the freezer, then fill it with water before they leave in the morning - they would have water (no more bottle to worry about disposing of) every day.  You could clip it onto their backpack in the morning as they run out the door for the bus.  

When you are done with the water, it actually folds up and can still be attached to the backpack or workout bag to carry home to be cleaned out (or put into the dishwasher) to use again.  We have already washed and reused our bottles so many times since I found them I've lost count.  No more bottled water purchased for carrying around anymore - filtered water from home in our Vapur Anti Bottles and away we go ........ Eco Friendly and Fun!

Weight Watchers Pumpkin- Parmesan Hummus

I don't know how many of you are doing Weight Watchers or like to see what Weight Watchers has for recipes to try and keep things real, but I found this one yesterday and I can't wait to test this one out.  Especially since I get to use some of my new Tupperware products!


Pumpkin-Parmesan Hummus

Ingredients
  • 2 large garlic cloves
  • 1 (16oz) can reduced sodium chickpeas
  • 1 cup canned pumpkin
  • 1/2 cup (2oz) freshly grated Parmigiano Reggiano cheese
  • 3 TBSP fresh lime juice
  • 3 TBSP plain fat free Greek yogurt
  • 1 tsp Southwest Chipotle seasoning blend
  • 1/4 tsp salt

Process garlic cloves until minced.  Add chickpeas and process until well chopped.  Add pumpkin and remaining ingredients and process until smooth.

Serving Size: 2 TBSP (28 calories)
Yield: 20 servings

I plan on making this in my Tupperware Quick Chef Pro and using Simple Indulgence Southwest Chipotle Seasoning Blend to make this recipe.  I bet it will work really well and be a whole lot easier to clean than taking out my food processor or blender!

I've never had Pumpkin Hummus so this will be interesting for sure - but I like hummus and I like pumpkin .... so we shall see how they are together.  I just won't be putting it into a pumpkin shell - cause Peter Peter Pumpkin Eater I am not .........

Lemon Artichoke Pesto

I have been looking at this recipe for a long time. I had found a really awesome Spinach Artichoke Dip when I was in Florida this past July and really thought it was perfect. You could have it cold or hot and could use it in so many different ways. I bet you could use this the same way - hot or cold - and in different ways, including as a base to be 'creative'.


Ingredients 
  • 1/2 cup canned artichoke hearts, drained 
  • 3 cloves garlic, peeled 
  • 1 tbsp. grated Parmesan cheese 
  • 1/4 cup fresh basil leaves (about 8 large leaves) 
  • 1/2 tablespoon extra virgin olive oil 
  • 1/2 tablespoon lemon juice 
  • salt and pepper 

Place the first six ingredients into base of the Chop 'N Prep™ Chef.
Replace cover, twist to seal and pull cord 4-5 times to process until coarsely chopped.

Adjust seasoning with salt and pepper.

You could probably add some spinach leaves instead of the basil leaves or maybe in addition to and create something very much like what I had in Florida.

You could use this as a dip with crostini  or maybe as a condiment on a sandwich or panini.  I bet this would be something to make your sandwiches (and visitors/guests) say hmmmmm.

Chocolate Peanut Butter Cake in the microwave!

 When I saw this one, I thought OMG Jenn will be able to make cake in her dorm apartment for her roommates ..... as a "Hi - welcome back - I'm your new roommate" present.  But you could have this for dessert tonight - yes it is that quick!



Ingredients:
1 cup creamy peanut butter
11/3 cups water
1/4 cup vegetable oil
1/2 tsp. vanilla
3 eggs
1 package devil's food cake (18.25 oz./517 g)
2/3 cup English toffee bits

Ganache and Topping 
1/2 cup heavy cream
3/4 cup semi-sweet chocolate chips
1/2 tsp. vanilla
1 tbsp. unsalted butter
6 mini peanut butter cups, roughly chopped

Place peanut butter in 2-cup/500 mL Micro Pitcher and microwave on high power 30 seconds.

Place water, vegetable oil, vanilla and eggs in base of the Smooth Chopper fitted with the paddle whisk, process until smooth.
Pour cake mix in the 12-cup/2.8 L Wonderlier® Bowl, add liquid mixture, peanut butter and mix until well combined; fold in English toffee bits.

Spray the Tupperware® Stack Cooker 3-Qt./3 L Casserole with cooking spray.
Place a square of waxed paper (12x 12"/30.5 x 30.5 cm) on the bottom of the casserole.
Place the cone in the center and spray lightly with cooking spray.

Add batter and place casserole in microwave on high power for 11 minutes or until a wooden toothpick inserted into center comes out clean.  Remember every microwave is different, so use this time as a guide.
Allow to rest 5 minutes, then invert onto a serving platter, remove waxed paper and cone, and cool completely.

Place the heavy cream in Stack Cooker 1 3/4 Qt/1.75 L Casserole and microwave on high for 1 minute or until it starts to bubble.
Add chocolate chips, vanilla and butter and mix until melted and smooth.
Allow to cool. Pour over the cake.
Top with the chopped mini peanut butter cups.

I have been debating about whether to just do an "edit" to the post I did on Jessica last week or if I should do a new post because I have tried a sample of Body by Vi.


I suppose if I didn't like it I would have just done an edit and say that it was "ok".  Since I'm posting a new post, I guess you could say I thought it was better than OK.

Let me tell you right now, when you open the package you get this wonderful smell - almost like a vanilla cake mix - that just draws you in.  It has that somewhat sweet homey smell that just makes you want to try it.  I'm sure you could just mix it up the way it is and be very happy, but I am always looking for "variety".  I know I get bored with "diet" products easily unless I can keep changing it up.  And once boredom sets in, the changes I was so set on putting into place goes right out the window. 

That was one of the things that intrigued me about this product.  You had a "base" that was pleasant that you can change up all the time with things you probably have in your home already or should.  If you are going completely "cold turkey" on unhealthy options and using this as your jump start product you can add the variety I want (and I don't' think I'm that unusual) without having to rob a bank.  This just made me feel like I was taking the first step towards a new lifestyle, a new "me" that will be ditching the excess weight and making me want to hit the gym to tone up too.

My first shake was a blender shake with 1/2 cup of frozen berries, 8 oz of 2% milk (should have been skim or soy or almond, but that was what we had so we went with it), 2 scoops of mix and some ice (about 5 ice-maker cubes).  This filled an 18oz red solo cup!

If you remember I showed you a picture of some recipe options using the mix, where some used a blender and some were just mixing it up in a shaker cup.  I bet the Tupperware Quick Shake(r) Container would work well with these.

I have one of these so I will be trying it very soon.  I'm thinking a PB2 (powdered peanut butter with less calories and fat) and Cocoa ...... I mean chocolate and peanut butter just might be awesome!   Or how about Cocoa and a little mint extract - can you say "York Peppermint Patty" in a glass?  And then there was that Apple Pie in a Glass ......   These could be my go to when I'm running out the door in the morning to make a meeting.  No donuts and coffee from the table for me!

Now I will admit that when I first had my shake, I thought it was VERY tasty, but I honestly thought I was going to be starving in an hour.  WELL I was fooled completely.  I had my shake around 9AM (I was dilly dallying and didn't really want to get moving), when I was finished drinking it I really thought I was going to be in deep trouble by 10.  I thought I would be rummaging through the cabinets and refrigerator before 11.  I was SO WRONG!  I didn't even remotely feel hungry until after 1PM!  Yes this shake lasted me about 4 hours - better than some "regular" breakfast foods.  But I also noticed when I had lunch that I was full very quickly.  Now I am not sure what or why that happened - but I'll take it!  I will definitely checking out which package I am going to pick up for next month.

Tupperware and the College Dorm

As many of you have seen, my daughter Jenn is about to leave home for her  "living on campus" College life experience, so we have been running around making sure she has all the necessary items to spend the better part of the next 9 months living elsewhere.

We've gotten towels (check), sheets (check), blanket (check), under-bed storage, shoes/sneakers/etc (check check).  All these things are important, but we got to thinking about cooking food.  Yes everybody needs to have a meal plan when living on campus (to be honest I think that's a good thing) but sometimes you want to eat when the dining halls aren't open.  Or you want something "different".

Now most dorms will only allow a microwave as a "cooking" option, not even a toaster is allowed because of the danger of fire.  We all know that not everything works in the microwave - some things are just not made for the microwave (metal a definite no-no, some paper products just melt) and others just don't make for great cooking options (rubber chicken just isn't appetizing).

But they also have a pasta maker and a rice cooker for the microwave as well as plates, bowls, glasses, pitchers ....... they have thought of all kinds of ways to cook meals in the microwave and then eat them in style, that are nice looking and compact which are fabulous for dorms / apartments / small kitchens.

Sometimes I think that the only reason our little girls aren't into Math and Science has nothing to do with the fact that they are "girls" but because we don't allow them to believe that they can do something. We let others tell them that they can't.

When I saw this I just knew it needed to be part of my blog.  I know it is part of my life so it's only logical that it is part of my blog



And this is how it should be. ANYTHING is possible if we believe!

That's my story and I'm sticking to it!

Friendship

I saw this the other day and thought .... this is perfect. 

Sometimes I look at people who profess to be friends and think "really", you're friends? 

I don't know about you but sometimes you get that feeling when you talk to people or listen to people talk about their friends.  I bet many don't even realize they do it.  But all of their conversations come off as "who is the best" or "who made the move to be friends" or "who does more because they care" and I just have to wonder.  Are they really "friends" or just "acquaintances" that masquerade as friends?

Does this make any sense to you?   I don't mean when some makes a comment when being introduced to new people by your friend, that says something to the effect, I've known her for close to 30 years now.  That's just a fact.  I'm talking about out of the blue comments like that.




See I told you that this was perfect.  If you are truly a friend, if you truly have a friendship none of that matters.  This picture just nails it.

Live for today .....

I received this from a friend in the office the other day and just knew it was time to share with all of you.  I have seen this before, may have even shared it with some of you, but sometimes you just need to be reminded.  Today is your "reminder" from me.  Thanks Angela for my reminder.


A friend of mine opened his wife's underwear drawer and picked up a silk paper-wrapped package: 
'This, he said, isn't any ordinary package.' 
He unwrapped the box and stared at both the silk paper and the box. 
'She got this the first time we went to New York , 8 or 9 years ago. 
She has never put it on, was saving it for a special occasion. 
Well, I guess this is it. 

He got near the bed and placed the gift box next to the other clothing he was taking to the funeral house, for you see, his wife had just died. 
He turned to me and said: 

'Never save something for a special occasion. 
Every day in your life is a special occasion'. 

 I still think those words changed my life. 

Now I read more and clean less. 
I sit on the porch without worrying about anything. 
I spend more time with my family, and less at work. 
I understand that life should be a source of experience to be lived up to, 
not survived through. 

I no longer keep anything for a "Special Day". 

I use crystal glasses every day... 
I'll wear new clothes to go to the supermarket, if I feel like it.. 
I don't save my special perfume for special occasions, I use it whenever I want to. 

The words 'Someday...' and ' One Day...' are fading away from my dictionary. 
If it's worth seeing, listening or doing, I want to see, listen or do it now.... 

I don't know what my friend's wife would have done if she knew she wouldn't be there the next morning, this nobody can tell.. 
I think she might have called her relatives and closest friends. 
She might call old friends to make peace over past quarrels. 
I'd like to think she would go out for Chinese, her favorite food. 
It's these small things that I would regret not doing, if I knew my time had come.. 

Each day, each hour, each minute, is special. 
Live for today, for tomorrow is promised to no-one..
