A Ketogenic Diet friendly Salad

Have you started working on or looking into a Ketogenic Diet?
Have you thought about working this into your diet plans because so many of your friends are trying it?  Did you know that the ketogenic diet has been around since the 1920s?

If you are trying to eat keto friendly, check out this delicious looking (and soon to be trying by me) from a Facebook friend Leah Mayne.

All that is needed is sauteed shrimp, 2 to 3 avocados and some sliced/diced red onion, tossed with about a tablespoon of olive oil and vinegar.  

I think some white balsamic vinegar would be awesome with this - not the normal "bite" of a balsamic vinegar, but a wonderful flavor that wouldn't overpower these salad ingredients.

This is so simple to make, I think everyone should be making it at least once a week.

I personally think this just looks awesome, but then I LOVE everything that is in it.
I just have to get my hubby interesting in at least "trying" avocados, or this will just be a lunch item for me.

Are you setting yourself up?

Sometimes I think we set ourselves up to fail.
We keep trying to be "better".

We start the day with the mindset that we have to be better.
But better than what?  Better than who?

But we do seem to set ourselves up to fail, daily.  
Not on purpose mind you, but we seem to have this mindset that says we just can't.  
I don't know if it is something that we bring upon ourselves or if it is something that we are taught.
We really should keep Marilyn Monroe in mind as we start each day.

See even Marilyn knew that you don't fail at everything.
You just need to keep trying and keep moving 
but most of all

Its National What Day?

I guess I have been living under a rock.
SHHH you, I can see you rolling your eyes and mumbling.

I have NOT been so oblivious to what is going on to realize that EVERY day is a National "something" Day.

But early this morning I was watching the news and John Elliott @CBSNewYork mentioned a few things that were to be celebrated this day, and I was really just a little surprised at some of the day's "somethings" and how they may or may not be related.

For instance.
Today, according to NationalDayCalendar.com, is National Sea Monkey Day. Who knew that Sea Monkeys had their own day??  

And what the heck is a Sea Monkey anyway that they get their own special day?

John Elliott said you get a twofer if you pierce a sea monkey today, because today is also National Piercing Day ... I guess he wasn't thinking of all the other "somethings" for today because,

it is also National Love a Tree Day.
Is this what spurned the Tree Huggers or those Plant a Tree movements?

But my favorite "something" for today is 

National Mimosa Day.
When I looked, I was surprised to see how many different ways there is to making a Mimosa.  Here I thought it was just orange juice and Champagne.  Oh no my friends, there are many different combinations/flavors so long as there is a "base" of orange juice and champagne ... you can get creative with "additives" and flavored "splashes" to suit the day.

This of course got me thinking what the heck were other "something" days and were they related or unrelated things.

For instance, this past Sunday May 14th was Mother's Day.  But did you know it was also National Dance like a Chicken day?  So is this the day that the Chicken Dance came to be or was it the day that spawned the saying "Dance like no ones watching"?

My daughter's birthday is National Animal Cracker Day.  Too bad she was never a fan.  I guess I had her on the wrong day.  
But it is also National Columnist Day, I wonder if they are fans of Animal Crackers?

My son's birthday is National Re-Gifting Day and National Date Nut Bread Day.  He is probably a fan of a re-gifting day for all those things I have bought him that I "thought" he wanted but missed the mark.  
I'm not sure Date Nut Bread would go anywhere with him.  
But then since he moved South he does partake in things he would never touch when he lived up "North".

Now Hubby's birthday is full of tasty National Days.  He gets to celebrate National California Strawberry Day AND National French Bread Day. 
Now that just doesn't seem fair.

So now that I am on a roll ... my birthday has a few "interesting" items, like National Name Your Car Day or National Fried Scallops Day.  
Have you named your car?  
I know years ago my sister did. She named it after a character in Cats.  
I wonder if she still does?  I will have to ask her.

Lets try Spinach, Blueberries and Pineapples in a salad

What?  You're not a fan of Spinach?  Or Pecans aren't your thing?Oh I am thinking you could "play" with this one to add some other ingredients to make it more "palatable".  For those who are not big fans of Spinach (like my hubby), I think you could add some Romaine to this so its not "just" spinach without losing the benefits of this salad.  Don't have or like pecans?  You could substitute walnuts.


  • 9-oz. bag spinach
  • 1 lime, juiced using Zest ’N Press® Gadget
  • 2–3 tbsp. balsamic glaze (store bought or make your own)
  • 1 shallot, chopped fine using Chop ’N Prep Chef
  • 2 cups fresh pineapple, diced
  • 1 cup fresh blueberries
  • 1 avocado, diced
  • 1 cup pecans, toasted
  • ¼ cup crumbled goat cheese


  1. In a large bowl, toss spinach with lime juice, balsamic glaze, and shallot. Once leaves are coated, transfer to desired serving dish.
  2. Top with remaining ingredients to serve.

It's a new Mid Month Tupperware Brochure

I am hoping that you have already checked out the Tupperware Summer Catalog that went live just about 2 weeks ago.  Or the Birthday Month items that will be available until May 26th. If you haven't you can check it out on my Tupperware Website.

But the new Mid Month brochure is also live to celebrate Father's Day and all the great things that Summertime brings.

I personally LOVE the Large Carry-All for so many things.  I have a few just to keep things together. I have one in the car as a "mobile" desk and one as a portable first aid kit.  I know of some who have used these as memory boxes for their kids and grandkids.  
Or how about for those super important papers that you need to be able to grab and go when in an emergency situation?

And then there is the Season-Serve Duo.   I have used the small one just yesterday for marinating dinner since it was just a small amount of meat.  But I can see these for all kinds of BBQ items.  I have to try this, but someone said you can put some corn on the cob in the large one with butter and "shake" so that all the corn is evenly covered without the mess.

As always there is the Short-term items that you need to pick up in the first 2 weeks ... or they will be gone.  Some of these items (like the ice cream scoop) are available in the Summer Catalog .... but at a higher price.  So if you are interested, don't miss out.

I love the Squeeze-it Bottles, because it allows me to have "manageable" containers for home-made sauces and dressings but also to be able to buy those LARGE catsup and mayo jars and bring them down to size.

And those Dining Trays ... make great trays for kids or even for BBQs on the deck!

Key Lime Pie Cinnamon Roll Buns

You may have seen on my Facebook page, that I was recently "forced" to replace my kitchen appliances.  In fact it was the trifecta of replacements.  
Two of those pieces I replaced, the refrigerator and stove, were GE products.  
I am enjoying them both and have gotten the added benefit of getting all kinds of great recipes when I registered my appliances.

Here is one that will be awesome for Mother's Day brunch.

Time for Positive Thoughts and Deeds

I think it is time for me to get back to my original reason for starting this blog.
It's time, if not past time, for more and more inspirational posts instead of big gaps in time when I may be holding myself back for a number of reasons.
Self doubt is a big part, although not the only reason, I have some "gaps" in my blog of late.

Perhaps you have been feeling the same way.  
Or maybe you use to stop back here when you were having those feelings yourself to see what good things I had to show you.

Maybe this will help us all.
I almost said "both" but I am hoping that there are more than just two of us reading my blog.  
I am hoping that my own lapses haven't pushed away too many folks.

I am starting this month, ok this "mid" month, with a push towards being positive.  Being ready to accomplish those things that I have been letting lapse or have pushed to the wayside.  

Maybe its because its Spring and I am looking forward Summer and new beginnings.  Or maybe it is because of all the negative that is being shown on TV, on the internet and in the papers.  
When did we all become so jaded, so self-centered, so entitled?

Yes it is time for 
Positive thoughts, 
Positive deeds, 
Positive actions 
for all of US.

Brownies for your Sweet Tooth

MMMMM this could be perfect for those of us with a sweet tooth. We could even have these as a quick dessert for Mother's Day.

Bet my brother Joe would have loved these.
Happy Birthday in Heaven Joe.  I know you are saving us all seats.

For the brownies

  • 2 cups milk or semi-sweet chocolate chips
  • ½ cup heavy cream
  • 3 tbsp. unsalted butter
  • 1 tbsp. vanilla extract
  • 2 tbsp. brewed coffee or espresso
  • ¼ tsp. coarse kosher salt
  • 4 eggs
For the topping
  • 2 cups creamy peanut butter
  • 1 cup powdered sugar
  • 2 tsp. vanilla extract
  • ¼ tsp. coarse kosher salt
  • 1 cup milk or semi-sweet chocolate chips
  • 3 tbsp. heavy cream
  • 1 cup chopped peanuts

  1. Preheat oven to 325° F.
  2. In the ¾-Qt. StackCooker Casserole, stir together chocolate chips, heavy cream, butter, vanilla, coffee, and salt. 
  3. Microwave 45 seconds. 
  4. Remove from microwave, let stand 2 minutes; stir until smooth.
  5. In the base of the Power Chef® System with paddle attachment, add eggs. Cover and pull cord until well beaten. 
  6. Remove cover, add 2 spoonfuls of chocolate mixture to eggs, cover and pull cord until well mixed. 
  7. Add remaining chocolate mixture and pull cord until well mixed.
  8. Transfer chocolate mixture to the UltraPro 2-Qt. Square Pan. 
  9. Place pan in oven. Bake 25 minutes or until a knife inserted in the center of the brownies comes out clean. 
  10. Remove pan from oven; let stand.
  11. Meanwhile, make the toppings. 
  12. In the ¾-Qt. StackCooker Casserole stir together peanut butter, powdered sugar, granulated sugar, vanilla, and salt. 
  13. Microwave on high power 30 seconds or until soft and spreadable. Spoon mixture over brownies; using a knife or small offset spatula spread evenly over brownies.
  14. In the large 2-cup Micro Pitcher add chocolate chips and cream. Microwave 45 seconds; let stand 1 minute, stir until smooth. 
  15. Pour chocolate over peanut butter, spread evenly. 
  16. Sprinkle top with peanuts, gently press into chocolate.
  17. Refrigerate 20 minutes to set. 
  18. Cut into 16 pieces, serve chilled or at room temperature.

Believe in YOURSELF

Time for a little encouragement .... 
and maybe a kick in the pants

Don't worry about whether others believe in you or not.
The only one that needs to believe in you is YOU.

If others also believe in you ... well that is a bonus.  
Just remember the important person in this belief is YOU.

I know its not an easy thing to do.  Trust me when I tell you I have suffered for many many years worrying about what others think.  I wasn't this way when I was younger.  If fact, I think I was, at times, overly confident in my abilities - but somehow didn't fail myself or others.  
I just didn't always realize it.

Then something happened.  I'm not sure what it was, but at some point in my "adult" life, I've let others tell me that I can and can't do.  It's time for that to change too.  Time to believe in ME.

So you see, I posted this as much for you as for me. 

Let's believe together.

What's for dinner tonight?

Happy Cinco de Mayo!
What are you doing for dinner tonight?  No ideas?

Check out this dinner idea from Tupperware.

Salsa Verde
  • 1 lb. tomatillos, husked
  • ½ medium onion, quartered
  • 2 garlic cloves, peeled
  • 2 jalapeno peppers, seeded
  • ½ cup cilantro
  • ½ tsp. coarse kosher salt
  • ¼ tsp. black pepper
  • 1½ cups cooked chicken, shredded
  • 1 cup frozen southwestern style corn,
  • thawed and drained
  • 1 cup Mexican blend cheese,
  • shredded and divided
  • 2 tbsp. Southwest Chipotle Seasoning
  • 12 6" corn tortillas
Mexican Rice
  • 1 medium onion, quartered
  • 1 garlic clove, peeled and halved
  • 14½-oz. can fire-roasted diced tomatoes, with liquid reserved
  • 2 cups chicken broth
  • 1 tbsp. Southwest Chipotle Seasoning
  • 1 cup long-grain white rice

Salsa Verde
  1. Place tomatillos in UltraPro 2.1-Qt./2 L Casserole Pan along with ¼ cup of water. Cover and microwave on high power 5 minutes. 
  2. Drain and allow to cool slightly.
  3. Place onion, garlic, jalapeno and cilantro in base of Power Chef™ System fitted with the blade attachment. Replace cover and pull cord to process until finely chopped. 
  4. Add tomatillos, replace cover and pull cord to process until all ingredients are finely chopped.
  5. Place mixture back in casserole pan, cover and microwave on high power 4 minutes. 
  6. Season with salt and pepper. 
  7. Set aside.
Enchilada Filling
  1. Place chicken, corn, ½ cup cheese and seasoning blend in medium bowl (the Thatsa bowl would be great), stirring together using the Saucy Silicone Spatula. 
  2. Set aside while preparing rice.
Mexican Rice
  1. Preheat oven to 350° F.
  2. Place onion and garlic in base of Power Chef™ System fitted with the blade attachment. Replace cover and pull cord several times until finely chopped.
  3. Place onion mixture, tomatoes, broth and seasoning blend in UltraPro 3.5-Qt. Lasagna Pan. Microwave on high power 4 minutes.
  4. Add rice, stirring to combine. 
  5. Cover and bake 25 minutes.
  1. Divide filling between tortillas and roll. 
  2. Spread ¾ cup salsa verde on bottom of inverted UltraPro Roasting Pan cover (or use inverted Lasagna Pan cover and place aluminum foil over rice).
  3. Place enchiladas in cover, folded seam down, and top with remaining salsa verde. 
  4. Sprinkle remaining cheese on top.
  5. Remove cover from rice and place inverted cover containing enchiladas on top. 
  6. Bake, together, an additional 15 minutes or until heated through.

Tupperware Summer Catalog and my favorite NEW attachment

I am sooooo excited to see the Tupperware Summer Catalog!

I am especially excited to see the Sorbet Attachment for the Fusion Master.  If you are interested and don't have the Fusion Master, you will need to purchase both the Fusion Master and the Sorbet Attachment.  If you are, like me, already the proud owner of a Fusion Master, you just need to pick up the Sorbet Attachment.

Mango and Cream Sorbet
  • 12 oz fresh or frozen (thawed) mango chunks
  • ½ cup heavy cream
  • 3 tbsp. granulated sugar
  • 1/8 tsp. kosher salt (optional)
  1. Place mango in the base of the Power Chef® System, fitted with blade attachment.
  2. In the 1-cup Micro Pitcher, stir together cream, sugar and salt. 
  3. Microwave on high power 25 seconds or until sugar is dissolved.
  4. Remove from microwave and stir to combine; pour over mango. 
  5. Cover and pull cord until mango is pureed.
  6. Transfer mixture to a Freeze-It® PLUS Medium Shallow        Rectangular Container. 
  7. Seal and freeze at least 6 hours or overnight.
  8. Remove container from freezer. 
  9. Using a butter knife, gently break mixture into 2–3″ pieces.
  10. Fill Sorbet Maker hopper with frozen mango pieces. 
  11. Place plunger on top of frozen mango, gently pushing down on the plunger while turning handle to process. 
  12. Repeat with remaining fruit.
  13. Serve immediately or freeze up to 48 hours.

Peaches and Cream Sorbet
  • 12 oz. fresh or frozen (thawed) peaches
  • ½ cup heavy cream
  • 3 tbsp. granulated sugar
  • 1/8 tsp. kosher salt (optional)
  1. Place peaches in the base of the Power Chef® System, fitted with blade attachment.
  2. In the 1-cup Micro Pitcher, stir together cream, sugar and salt.
  3.  Microwave on high power 25 seconds or until sugar is dissolved. 
  4. Remove from microwave and stir to combine; pour over peaches. 
  5. Cover and pull cord until peaches are pureed.
  6. Transfer mixture to a Freeze-It® PLUS Medium Shallow Rectangular Container. 
  7. Seal and freeze at least 6 hours or overnight.
  8. Remove container from freezer. 
  9. Using a butter knife, gently break mixture into 2–3″ pieces.
  10. Fill Sorbet Maker hopper with frozen peaches pieces. 
  11. Place plunger on top of frozen peaches, gently pushing down on the plunger while turning handle to process. 
  12. Repeat with remaining fruit.
  13. Serve immediately or freeze up to 48 hours.

Strawberries and Cream Sorbet

  • 12 oz. fresh or frozen (thawed) strawberries, stems removed
  • ½ cup heavy cream
  • 3 tbsp. granulated sugar
  • 1/8 tsp. kosher salt (optional)
  1. Place strawberries in the base of the Power Chef® System, fitted with blade attachment.
  2. In the 1-cup Micro Pitcher, stir together cream, sugar and salt. 
  3. Microwave on high power 25 seconds or until sugar is dissolved. 
  4. Remove from microwave and stir to combine; pour over strawberries. 
  5. Cover and pull cord until strawberries are pureed.
  6. Transfer mixture to a Freeze-It® PLUS Medium Shallow Rectangular Container. 
  7. Seal and freeze at least 6 hours or overnight.
  8. Remove container from freezer. Using a butter knife, gently break mixture into 2–3″ pieces.
  9. Fill Sorbet Maker hopper with frozen strawberry pieces. 
  10. Place plunger on top of frozen strawberries, gently pushing down on the plunger while turning handle to process. 
  11. Repeat with remaining fruit.
  12. Serve immediately or freeze up to 48 hours.
Pina Colada Sorbet
  • 12 oz. fresh or frozen (thawed) pineapple chunks
  • ½ cup heavy cream
  • ¼ cup shredded coconut
  • 3 tbsp. granulated sugar
  • 1/8 tsp. kosher salt (optional)
  1. Place pineapple in the base of the Power Chef® System, fitted with blade attachment.
  2. In the 1-cup Micro Pitcher, stir together cream, coconut, sugar and salt. 
  3. Microwave on high power 25 seconds or until sugar is dissolved. 
  4. Remove from microwave and stir to combine; pour over pineapple. 
  5. Cover and pull cord until pineapple is pureed.
  6. Transfer mixture to a Freeze-It® PLUS Medium Shallow Rectangular Container. 
  7. Seal and freeze at least 6 hours or overnight.
  8. Remove container from freezer. Using a butter knife, gently break mixture into 2–3″ pieces.
  9. Fill Sorbet Maker hopper with frozen pineapple pieces. 
  10. Place plunger on top of frozen pineapple, gently pushing down on the plunger while turning handle to process. 
  11. Repeat with remaining fruit.
  12. Serve immediately or freeze up to 48 hours.
Cocoa-Nana Sorbet
  • 3 bananas
  • ¾ cup cocoa powder
  • ½ cup heavy cream
  • ¼ cup brown sugar
  • 1/8 tsp. kosher salt (optional)
  1. Place bananas and cocoa powder in the base of the Power Chef® System, fitted with blade attachment.
  2. In the 1-cup Micro Pitcher, stir together cream, sugar and salt. 
  3. Microwave on high power 25 seconds or until sugar is dissolved. 
  4. Remove from microwave and stir to combine; pour over bananas and cocoa. 
  5. Cover and pull cord until bananas are pureed.
  6. Transfer mixture to a Freeze-It® PLUS Medium Shallow Rectangular Container. 
  7. Seal and freeze at least 6 hours or overnight.
  8. Remove container from freezer. Using a butter knife, gently break mixture into 2–3″ pieces.
  9. Fill Sorbet Maker hopper with frozen cocoa-nana pieces. 
  10. Place plunger on top of pieces, gently pushing down on the plunger while turning handle to process. 
  11. Repeat with remaining cocoa-nana pieces.
  12. Serve immediately or freeze up to 48 hours.

I just got mine and will be trying the Sorbet attachment this weekend.  I may just use some of the fruit I have in the freezer already (strawberries are calling my name) and then start with some of these other fruit recipes, some sound oh so interesting.

Grilled Potatoes with Garlic Butter made quick

I really like this one ... now I can have grilled potatoes anytime!
So many wonderful ideas with Tupperware in your kitchen.  Check out these pieces and so much more on my Tupperware Site.

Yield: 4

  • 2 Russet potatoes
  • ¼ tsp. coarse kosher salt
  • 4 tbsp. salted butter
  • 1 garlic clove
  • ¼ cup fresh Italian (flat-leaf) parsley leaves, loosely packed

  1. Using the Mandoline with slicing blade, slice potatoes using the #2 setting. 
  2. Layer potatoes in the base of the MicroPro™ Grill and sprinkle with salt.
  3. In the base of the Chop ‘N Prep, add butter, garlic and parsley.
  4. Cover and pull cord until garlic and parsley are well minced.
  5. Using a spoon, place dollops of garlic butter on top of potatoes.
  6. Place cover on MicroPro™ Grill in the grilling position.
  7. Microwave on high power 7 minutes. 
  8. Serve warm.

Yes Yes its the Mid April Brochure at Tupperware

I know I haven't been really active here (or really anywhere, except in front of a tax form) but I had to do another quick post to tell you that the Mid April Brochure is open TODAY on my Tupperware site!  
And there really are some great things in this one.

Some awesome things are on the short term piece as well. Personally I LOVE the Lunch it Containers to make your own Bento Box type meal on the go!  And you get 4, that's right 4 at this price!!

If you are into protein shakes the Quick Shake Container BOGO is perfect for you.  Its also great for mixing up eggs for scrambled eggs, or salad dressing and marinades.  OH OH and I forgot, salad in a jar is so much safer this way ... works awesome!

I also have used them for freezing fresh herbs before they go bad ... and then I can just pop out 1 or 2 without having to figure out what to do with the rest.  And with the seal top, I don't need to worry about the transfer of flavors or "smells".

You can even make your own baby food (the power chef and smart steamer is great for that) and then you can freeze it in your tray and have fresh food for you precious little one and know exactly what you are feeding them.  No more jars for them.

YES its a New Mid Month Brochure from Tupperware!

It's a new mid month Tupperware brochure so of course I need to share what is happening this month for the up coming holiday ...

Now I really love these pieces.  So much so I will be grabbing a few more for myself.

Quick Easy Breakfast Sandwich

I know my hubby likes those fast food breakfast sandwiches when he didn't have time for breakfast before running out the door in the morning.  I know not a great thing but you just have to know when to pick your battles .. 
This is one way to "easily" pick the right battles, or should I say not pick that battle.

I can make these and stick a few in the freezer for those .. I'm late moments.

Yield: 2


  • 2 English muffins
  • ¾ cup liquid egg whites
  • 2 slices desired cheese
  • 2 pieces desired breakfast meat (Canadian bacon, sausage, bacon)

  1. Cut muffins in half and toast them in toaster, or at 350° F for 15 minutes or until lightly browned.
  2. Pour egg whites into Microwave Breakfast Maker and microwave at 70% power 3–4 minutes or until egg white is cooked through. (If using two Microwave Breakfast Makers at once, cook four minutes.)
  3. Allow both muffin(s) and egg whites to cool.
  4. Cut one egg white in half and place on half of English muffin.
  5. Add cheese and meat, then top with remaining muffin half. Repeat for each sandwich.
  6. Place in Freeze It™ container until needed (up to one month).

Reheating Instructions
  1. Place sandwiches in Microwave Breakfast Maker and cover.
  2. Microwave on high power two minutes, flip and microwave on high power one minute longer.
  3. Remove sandwiches from Microwave Breakfast Maker to towel to absorb any excess moisture. 
  4. Serve immediately.
I am going to try making a few with the English Muffins as noted here and then a few with some biscuits and see if he likes those better.  It can be our "test case" for the recipe and the Tupperware pieces.  I love making him the guinea pig without him knowing.  

He did like them when I made them with whole eggs last year .. so now I can see if egg white sandwiches will work.

Blueberry Crumble

oh now this is looking wonderful

Yield: 4
Serving Size: 1 cup

  • 4 cups frozen blueberries
  • ¼ cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tbsp. lemon juice

Crumble Topping
  • 1 stick unsalted butter, melted
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ¾ cup rolled oats
  • 1 tsp. vanilla extract

  1. In a medium bowl, stir together berries, flour, sugar and lemon juice. Pour into base of MicroPro Grill, set aside.
  2. In a medium bowl, mix together crumble ingredients. 
  3. Once combined, sprinkle over top of berries.
  4. Place cover in casserole position and microwave on high power 15 minutes. 
  5. Let cool for 5 minutes to thicken slightly. 
  6. Serve warm.

Oh yes this does look like a great idea for a quick and easy dessert. You could serve it over ice cream or frozen yogurt or by itself.

I know this is blueberry, but I bet you could also switch up the frozen fruit if blueberries aren't your thing, or to just try something different.  I have a mixed berry frozen fruit combo I am going to try this recipe with.  yummm can't wait.

Happy Sunday

Some days you just have to stop and be thankful for the day.
You need to be thankful for who you are.  
And where you are in relation to what you want to accomplish.

But you need to recognize that sometimes, no matter how good you believe you are, people may see you differently than you see yourself .. 

Think about it.
Are people seeing you how you believe you are?  
If not, why not? 
Could this be the possible reason?

Let's make sure that who we think we are is what we are projecting.

Mediterranean Salmon the Tupperware way

Do you like Salmon?
Do you think that you can't make Salmon at home?
Is it a daunting recipe ingredient for you?

Check this one out.  It won't be daunting anymore.

Yield: 4

  • 1 tsp. plus 1 tbsp. extra virgin olive oil, divided
  • 1 pint cherry tomatoes, halved
  • 1 cup chopped zucchini
  • ½ cup chopped eggplant
  • ¼ cup golden raisins (optional)
  • 2 tsp. chopped fresh rosemary
  • 2 garlic cloves, crushed
  • ¼ tsp. coarse kosher salt
  • 4 (4 oz.) salmon fillets, skin-on

  1. In a large bowl, toss together 1 tsp. of the olive oil, cherry tomatoes, zucchini, eggplant and raisins until well coated.
  2. Transfer vegetables into the base of the MicroPro™ Grill.
  3. Microwave on high power 5 minutes with the lid in the grill position.
  4. Remove from microwave; transfer vegetables into a serving bowl. 
  5. Fold in rosemary and salt; set aside.
  6. Brush salmon on all sides with remaining olive oil. 
  7. Place 2 salmon fillets in MicroPro™ Grill, skin side up, with lid in the grill position. 
  8. Microwave on high power 4 minutes. 
  9. Remove salmon, sprinkle with coarse kosher salt to taste.
  10. Repeat with remaining salmon fillets. 
  11. Serve warm with vegetables.

I am still testing out my MicroPro Grill.  It is that new to me.  
But so far I am liking it.  
I can use it to actually grill in the microwave but can also put the lid in the casserole position and make some pretty interesting desserts and then decide if I want to drop the lid to the grill position to crisp up the top.  

I'm going to be doing a cobbler very soon, that I will be sharing the recipe for, so stay tuned.

Lemon Chiffon the easy way

I was thinking that I wanted to make this but didn't have the Jel-ring by Tupperware.  I know how can I as a Tupperware consultant not have a Jel-ring.  But alas I don't.  
But what I do have are the Jel-ettes that were released in the past year.  I am going to try this one in those jel-ettes so that I can easily take them to work.  I may unmold this Lemon Chiffon one at a time and cut it in half for two separate servings .. depending on how dense this one works out to be.

Yield: 16
Serving Size: 1 slice


  1. 2 cups water
  2. 3 oz. box lemon flavored gelatin
  3. 8 oz. container whipped topping (or 2 cups heavy cream and ¼ cup powdered sugar)


  1. Heat one cup water in 2-cup Micro Pitcher for 2 minutes or until boiling.
  2. Stir in gelatin until dissolved.
  3. Stir in remaining water and place in refrigerator until no longer warm. About 30–60 minutes.
  4. If using heavy cream, pour cream and powdered sugar into base of Power Chef™ System fitted with paddle whip accessory. 
  5. Cover and pull cord until whipped cream forms, about 60 seconds. 
  6. Pour into medium bowl.
  7. Slowly pour cooled gelatin into whipped topping or whipped cream and stir until combined. Pour into Jel-Ring® Mold and refrigerate until set (approximately 4–6 hours or overnight).

The way they are

This could go over many people's heads.
It could cause a lot of folks to be "mad" at me and possibly unfriend me.
I know but it is a chance I need to take.

There is too much hate going around.
Too much fear mongering.
When all we see and say are that things are "bad" or "evil" or "wrong", perhaps those things are not whats' wrong....

Think about this one.

Yes there is evil around.
Yes there are bad things happening.
Yes there are those who wish to do us harm.
Yes there are those who are "different" .. 

But not everyone or every thing is bad or evil.  Just because something is different doesn't make it different in a bad way.

We need to stop looking at things with a BROAD scope and really start looking at things as they really are.  

Start looking at PEOPLE and THINGS they way they truly are .. not with that broad brush that hurts all of us.

Potato Salad Deviled Eggs

With Easter coming up quickly, many of us with have a "ton" of hard boiled eggs that we will need to do something with.  
I am going to give you another solution.

Yield: 6

  • 6 hard cooked eggs, peeled
  • ¼ cup mayonnaise
  • 1 tsp. mustard, yellow or Dijon
  • ⅛ tsp. coarse kosher salt
  • ¼ cup finely diced cooked potato
  • 1 garlic clove, crushed
  • 1 tbsp. each minced red bell pepper, radish, chopped parsley

  1. Cut hard cooked eggs in half lengthwise and remove yolk. Set whites aside.
  2. In the base of the Power Chef® System fitted with paddle attachment add yolks, mayonnaise, mustard, salt, garlic, vegetables and parsley. 
  3. Cover and pull cord until mixture is well combined.
  4. Fold in potatoes and spoon mixture into egg white wells.
  5. Garnish with additional radish or parsley.

You can hold up to 24 egg halves for mess-free transport in Tupperware's Egg Tray Inserts.
You can also add the whole egg into the Power Chef System and make a quick egg salad when everyone is calling for food.  
Makes a nice smooth or chunky salad in a flash.  I love this piece.

Sausage, Peppers and Onions with a twist

I know my hubby would like this one.
He is definitely a Sausage, Peppers and Onion kind of guy.  
How about you?

Yield: 4


  • 1 lb. Italian Sausage Links, cut into pieces
  • 2 green bell peppers, seeded and chopped
  • 1 yellow onion, peeled and chopped
  • ½ cup beer
  • ½ cup chicken stock
  • 2 tbsp. grainy mustard
  • 2 tbsp. corn starch
  • ½ tsp. kosher salt


  1. In the base of the Microwave Pressure Cooker place sausage, peppers, and onion.
  2. In a medium bowl (Thatsa bowl is perfect) stir together beer, stock, mustard, corn starch, and salt. 
  3. Pour over sausage and peppers, stir to combine.
  4. Secure cover onto base. Microwave on high power 10 minutes. 
  5. Remove from microwave. Let stand 10 minutes or until pressure indicator valve is in the down position.
  6. Serve with rice, pasta, potatoes, creamy polenta, or on a bun.
Personally I would have done a quick brown of the sausage, before cutting into pieces and putting into pressure cooker.  It would have given a better presentation and probably added an additional depth of flavor to the "sauce".  But you can do as directed above or add that browning step ... its' your kitchen you have the control.

Smile Brilliant Teeth Whitening for Every Day People

I don’t know about you, but I love looking at pictures of models and actors and seeing their beautiful smiles.  I really do envy them their beautiful white teeth.  Ok yes, if we are going to be honest here, that is just one of the things I envy.  
But to be honest, I don’t have the money to have caps put on all my teeth and professional teeth whitening is equally expensive, so when I was asked if I wanted to test out a tooth whitening product from Smile Br!lliant, I was all for it.

And then to make it an even better or sweeter deal, my daughter and I got to try this product together!  We got to check it out and see if there was any difference between “older teeth” with 4 crowns, that would be mine and “younger teeth” that had also been through quite a few years of orthodontic work, that was Jenn’s
Now this product is not for young children who's teeth are still developing, I believe they say for no one under 18, but since neither of us fall under that criteria, we were both good to go.

What I really liked about this product was that each whitening kit is made to order.  You make your impressions so that your trays are made for you and your teeth, not a “one size fits all” set of trays.  Doing your impressions was really very easy.

As you can see from the picture, you receive 3 sets of impression materials, just in case you do make a mistake, but seriously the hardest part was making sure that you mix the two impression materials (1 black/gray (catalyst) labeled and 1 blue (base) labeled container into a consistent mix. And even that wasn't very difficult, especially if you have ever played with clay or play doh.  
It’s then very easy to take your impression by putting the materials into the dark blue trays and placing they up and around your teeth. Once completed you send the forms back to Smile Brilliant labs to make your personal whitening trays in a prepaid envelop.

When our trays came back, the first thing that came to mind when I saw them, after I saw how “interesting” our bite and teeth sizes where, was that they reminded me of what I thought those invisible braces look like.  Because they are made for your teeth, they are very comfortable to wear.  

As you can see, your teeth fit into their own place in the tray like a second skin.  Each tooth has it’s own “sleeve” so to speak covering both the front and back of the tooth.
I was very happy that I didn’t feel like I had a huge piece of plastic on my top and bottom teeth.  I could close my mouth completely without wanting to gag.

Doing your whitening is a breeze.  With the custom-made trays, there was no problem with placement of the whitening materials like with those whitening strips.  Every time you do the whitening, the gel comes in contact with your teeth completely, no gaps, no tooth too big or too small.  Even those “paint on” style whitening products always seemed to leave too much room for error, or missing application spots.

The whitening gel and the desensitizing gel come in syringe type containers that make it a snap to set up each time.  We found that the whitening gel syringe was firmer than the desensitizing gel so you needed to be more careful pushing the plunger on the desensitizing gel syringe so that you didn’t get too much in each tray.  We found that there was enough material in each syringe so we could use each syringe 3 times, just remember to keep the tiny "cap" after you open it the first time to keep the contents fresh. 

Before we started we took “before” pictures.  I have to say I was really shocked and couldn’t believe just how “yellow” and “off color” our teeth looked.

We have well water, very hard well water so we don’t have any of the benefits of city water, which means that if fluoride assists in any way other than cavity prevention, we didn’t get those benefits.
The instructions are easy to understand and the actual process again was easy.  The only thing that wasn’t spelled out, or at least we didn’t see, was how often to do the whitening so we did not do our whitening every day as we could/should have.
Even with this miss-step, we were very happy with our results.
