More Karma insight

Time to recharge.
Time to take a look and make sure you are giving off what you want to receive.

I know that when someone is being "ugly", and I don't mean how they look physically, but how they treat others or us, we think Karma's gonna get them.

With some of the things that have been happening lately, to me especially, I've been wondering if just maybe I'm not as "nice" or "sweet" or "kind" to others as I thought.

It just might be time for a Karma check up in my life.

WE are important

Yes, I am important.
Yes, I am special.
And so are you.

I know we all want to be accepted and loved for ourselves.
Sometimes we think that if we put ourselves aside and just concentrate on that "other" person, they will love us just as much and all will be perfect.

Sometimes that doesn't happen.
That "other" person doesn't love you as much as you love them.

We need to respect and love ourselves to see that and accept it.
And then move on.  
YOU are special and deserve to be loved and respected for YOU.
But if you do forget this ... I will continue to remind you.

Let's fly

Happy Friday.

Sometimes people think (yes that includes me) that you have to be leading the pack or be near the head of the line to succeed.

But I am here to tell you that sometimes it really is as simple as this.

All you need to remember is that NOW is your time.
Now is the time for you to spread your wings and fly!

But just because your wings are ready and you should be ready to fly, it doesn't mean it has to be now, right this second, or even today,   Just know that you can make it in your own time, so long as you don't give up, don't stop!  

I bet you can make something beautiful just like YOU.

Salad with Summer Squash

I know you have seen the zoodle recipes that are all over Pinterest.
I know I've thought it was going to be a fad that wouldn't last.  
But I guess I was wrong judging by the number recipes you can find.

Here is one from the Tupperware site, using my beloved Mandoline, that I may just be making this with some of our garden treasures.

Yield: 1
Serving Size: 8 oz.

  • 1 large zucchini, ends trimmed
  • 1 large yellow squash, ends trimmed
  • 1/2 tsp. kosher salt, divided
  • Juice of 1 lemon
  • 3 tbsp. extra virgin olive oil
  • 3 tbsp. rice vinegar
  • 2 cloves garlic, peeled
  • ¼ cup fresh cilantro
  • ¼ of small red onion, peeled
  • 2 tbsp. honey
  • 1 tsp. poppy seeds, toasted

  1. Using the Mandoline with round knob at #2 and the triangular knob at #6, slice thin strips of zucchini and squash. 
  2. Transfer vegetables to large bowl and toss with ¼ tsp. of salt. Let stand 10 minutes; drain liquid.
  3. In the bowl of the Chop ’N Prep™ Chef, add lemon juice, olive oil, rice wine vinegar, garlic, cilantro, red onion, honey and remaining salt. 
  4. Pour over vegetables and gently toss to coat.
  5. Refrigerate 20 minutes. 
  6. Sprinkle with poppy seeds before serving.

Who knows, this could become a vegetable that my family might actually ask for.

Don't run out of time

How many times have you heard people say that they can't do something right now because its "not the right time"?
They need to wait until they are in a better place.  
Or when things get easier so that they would have more time.

I know I've said it myself.
I've wondered if maybe I should have waited to do this or that.  If it would have been easier or less complicated, if I had just waited.

Now I'm not saying to be reckless or foolhardy.
I'm all for planning and going forward with your eyes open.

But remember we never know when we will draw our last breath.
No I'm not getting morbid.

Stop chasing the what ifs and dreaming about what you think you should have, just because you were born.

Sometimes, when we are happy with what we have and where we are in our lives, there are more doors opened for us and more of the things we have hoped for or desired becomes ours as well.  

But even if that doesn't happen, being happy with where you are will lead you to even more happiness.

Don't live your life wishing for something more,
Be happy with what you have been given, what you have earned and just maybe even more will be yours.

Flavored Shaved Ice

Do you remember flavored ices from when you were a kid?
You know what I am talking about, right?  

Today with the help of Tupperware, we can make our own shaved ice with the Grate Master Ice Shaver Cone and then make whatever fruit flavoring you want.  

Here is a quick way to make some Strawberry (red) and Blueberry (blue) flavorings to get you started, but remember other fruits will work as well.  If you try something different, give us a shout and let us know what else works as well.

Yield: 6
Serving Size: ¼ cup

  • 5 oz. frozen fruit strawberries, thawed
  • 5 oz. frozen blueberries, thawed
  • 2 cups water, divided
  • 2 cups sugar, divided
  • 1/4 tsp. kosher salt, divided

  1. In the 2-cup Micro Pitcher, stir together strawberries, 1 cup water, 1 cup of sugar, and 1/8 tsp. of salt. Microwave on high power 2½ minutes. 
  2. Remove from microwave and transfer to a bowl. Let stand 5 minutes or until fruit is soft. 
  3. Repeat with blueberries and remaining water, sugar and salt.
  4. Transfer strawberry mixture to the Power Chef® System with blade attachment. 
  5. Place cover on Power Chef, pull cord to puree. Return strawberries to bowl. 
  6. Rinse Power Chef and blade, and repeat with blueberries.
  7. Strain strawberry and blueberry puree into separate Squeeze It™ Bottles
  8. Add water as needed to create desired consistency.
  9. Squeeze the desired amount of flavored syrup on Shaved Ice in cones or bowls.

I think I will be making this often this Summer season.  
And I bet the Grate Master Ice Shaving Cone can be used to make some awesome frozen drinks on the deck ... just sayin'

Sometimes I just feel like "why".

Yes you can be going along, feeling like you are doing just fine, getting your act together or getting to a place with your "passion" and somebody comes along and just shatters it all by calling it "stupid" or professing that you "don't know what you are talking about", but of course, they know better.

My confession .. 
  I've been feeling that way lately, a lot lately to be totally honest.

Then I saw this one and was hit with that "AAAHHA" moment.

I have a few things on my plate, just as a side business point of view, from Tupperware to LimeLight by Alcone to Pruvit.  
And then of course there is this blog and my family and my full/part-time job.

This picture/quote is what kind of "smacked me in the face" and said to me ... just keep doing what you do, until YOU don't want to do it anymore.  
When others see it and agree, they will be inspired just as you have been inspired to do all that you do.
Those that continue to discount what you do or say ... that's THEIR problem NOT yours!

So hopefully here and now I can say and take to heart ... 
If you don't like what I say, what I post, what I do ... just move on because until I don't like these things .. I will continue to be ME.

Happy Burgers ....

Or as Tupperware called them 
Drunken Burgers.

I know that burgers are not a seasonal meal, but during the summer months we do seem to have them much more often.  Personally I like to have some variety in my burger so that you aren't "bored" either in the making or eating of a burger.

This one sound easy, but interesting.  Although unlike most burgers you need to allow time for marinating so its not a "1-2-3 its dinner time" kind of burger.  I'm still loving the idea.

Yield: 4
Serving Size: 1 burger

  • 1 lb. ground chuck
  • 4 garlic cloves, peeled and minced
  • 1/2 tsp. kosher salt
  • 1/4 cup fresh Italian (flat-leaf) parsley, chopped
  • 1/4 tsp. ground clove
  • 1/4 cup extra virgin olive oil
  • 1 cup Marsala wine
  • 2 tbsp. balsamic vinegar
  • 2 medium yellow onions, sliced thin (our Mandoline would be great)
  1. Season beef with salt and pepper. 
  2. Using the Hamburger Press & Keepers Deluxe Set, divide ground beef evenly between 4 keepers; insert press to form patties. 
  3. Refrigerate until ready to marinate.
  4. In the base of the Power Chef® System fitted with blade attachment, add garlic, salt, parsley, clove, olive oil, Marsala, and balsamic. Cover and pull cord until garlic is minced. 
  5. Pour marinade into the base of the Season-Serve® container; add onions.
  6. Place burger patties in marinade. Seal and refrigerate 3 hours. 
  7. Flip Season-Serve® container to marinate other side of patties; refrigerate an additional 3 hours or overnight.
  8. Remove burgers from marinade. 
  9. On a medium grill, or in a non-stick skillet over medium heat, cook burgers 6 minutes; flip and cook an additional 3 minutes or until burgers register 155° F.
  10. Meanwhile, pour marinade and onions into a non-stick skillet (Chef Series II have some great options).
  11.  Bring to boiling, reduce heat to medium. 
  12. Cook, stirring occasionally, until marinade thickens and onions become soft, about 8 minutes.
  13. Serve burgers with Marsala onions and your choice of buns.

I LOVE the Season-Serve® and use it all year round.  It works great for all kinds of meats/fish/veggies.  I've use it for both wet and dry marinade as well as buttering a few ears of corn at once.

Cantonese Fish in the Microwave!

We are not big fish eaters in this house. 
Hubby likes to catch them, but not so much eating them.
He is happier with shellfish but will "humor" me from time to time.

A few years ago we went on a small charter boat when we were in Florida and I caught the only "keepers", with 3 really good size Spanish Mackerel.  
He had caught a shark that was trailing us and probably getting everyone else's bait and fish.  He loved the challenge.
But he wasn't too keen on eating my Mackerel winnings, which we had prepared at one of the local restaurants.  He did have a little bit.  
One of the things I like about this recipe is that it highlights the versatility of the Tupperware SmartSteamer.  
Who knew you could make really good fish in the MICROWAVE!!

Yield: 2
Serving Size: 1 fillet

For the fish

  • 2 green onions, sliced thin
  • 1 tbsp. minced fresh ginger
  • ½ tsp. kosher salt
  • ¼ tsp freshly ground black pepper
  • 2 fresh snapper fillets, skin removed*
For the sauce
  • 2 tbsp. minced shallot
  • 1 tsp. minced fresh ginger
  • ½ tsp. minced fresh garlic
  • ¾ cup orange juice
  • 3 tbsp. maple syrup
  • ¼ tsp. kosher salt
  • ½ tsp. white vinegar
  • 1 tbsp. cornstarch

  1. In a small bowl, stir together green onion, ginger, salt and pepper.
  2. In the water tray of the Tupperware® SmartSteamer, add water to the max fill line. 
  3. Place steamer base inside water tray; place colander on top of steamer base.
  4. Place two fish fillets in colander. 
  5. Divide green onion mixture evenly between the two fillets, spread across top of each fillet. 
  6. Cover and microwave on high power 9 minutes. 
  7. Remove from microwave, remove cover and transfer fish to a serving dish.
  8. Make the sauce. In the 2-cup Micro Pitcher, stir together shallot, ginger, garlic, orange juice, maple syrup, salt, vinegar, and cornstarch. 
  9. Microwave on high power 1 minute 30 seconds. 
  10. Remove from microwave, stir sauce and pour over fish. 
  11. Serve warm.

I really like this one.
It reminds us that each day is a new beginning.
It also reminds us that no matter what happened during the day, we should end each day forgiving those that have hurt us, even if that someone is ourselves.

If you can not find happiness deep within yourself, deep within your heart, you will never truly be happy.

No one can "make" you happy.  
You must find it within yourself and then you can share the beauty of happiness with others.

I will tell you now, that sometimes that does work.
But most of the time you end up losing yourself.

I bet in many ways, it will make you much happier than "just" fitting in.

Now being "unique" does not mean setting out to hurt someone because you want to "be yourself".  
It does mean that you are allowed to shine in your own space without being hateful or mean.

Do you know what June is?

Other than my anniversary month that is ...

Yes it is also my mom and dad's anniversary (#61 this year), but that still isn't what I am talking about.  
Happy Anniversary Mom and Dad!

If you have a teenager, or if you have what has in many "worlds" been called the teenage curse, you may know that June is Acne Awareness month.

Now I have had 2 teenagers, one boy and one girl, so I've seen it from both sides, as well as having had my own bouts with the teenage curse in my adult years, but even I did not realize that June was Acne Awareness month.

That is until I joined LimeLight by Alcone and started seeing the blog posts by Madison at LimeLight by Alcone Life.  Granted the post I am sharing is already a year old, but that doesn't minimize the great information that you can find here.

I am in love with LimeLight's skincare products.  
It was probably the second reason I joined the LimeLight by Alcone team, first being the awesome foundation, but that's another story.

I love that the skincare products are leaping bunny certified, 

and has ingredients that are good for your skin and not full of chemicals.

Banana Pecan Bread ... in the Microwave!

I love my Stack Cooker because I can make so many things quick in the microwave that really does taste good ... Some really great things can be made, from 1 item to a whole meal!  And of course things like this.

Banana Pecan Cake/Bread.

Yield: 8
Serving Size: 1 slice

  • 1½ cups pecans
  • 3 ripe bananas
  • ¼ cup heavy cream
  • ¼ tsp. ground cinnamon
  • 2 stick (16 tbsp.) unsalted butter, room temperature
  • 1¼ cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • ¼ cup reduced-fat (2%) milk
  • ¼ tsp. kosher salt
  • ½ tsp. baking soda
  • 1 cup all-purpose flour

  1. Grease and flour the Stack Cooker 3-Qt. Casserole with Cone Insert.
  2. In the base of the Power Chef® System fitted with blade attachment, add pecans. 
  3. Cover and pull cord until roughly chopped. 
  4. Transfer pecans to medium bowl, set aside.
  5. Add bananas, heavy cream, and cinnamon to Power Chef
  6. Cover and pull cord until bananas are minced and mixture is well blended. 
  7. Transfer bananas to bowl with pecans; set aside.
  8. Replace Power Chef blade attachment with paddle attachment.
  9.  Add butter and sugar, cover and pull cord until well blended. 
  10. Add eggs, vanilla, milk, salt, and baking soda. Cover and pull cord until well blended. 
  11. Transfer to bowl with bananas; fold in flour.
  12. Transfer mixture to TupperWave® Stack Cooker
  13. Microwave on high power 7 minutes 30 seconds. 
  14. Remove from microwave. 
  15. Let stand 2 minutes before slicing.

Yes, banana's are good for you but some (like my hubby) don't like bananas ... however this way is AOK.  
Check it out - light on the flour (considering it is for 8 servings) so I bet most everyone can enjoy this.

Do you have negative people in your life?

I know we all have those "down" moments in our day or week.
Sometimes these down moments seem to drag on for weeks so that when you look back your realize you have been feeling dragged down for months.

I'm not talking about being depressed.  
That could be a serious medical condition that requires medical intervention.  If you are depressed, seek medical advice / help so that you will be able to look forward to each sunrise.  I will be keeping you in my thoughts and prayers for that help.

I'm talking about that feeling that occurs when someone is always telling you that there is something wrong with you or your life or what you do.

I'm sure you know what I'm talking about (if not, I applaud you). Those are the negative people in your life that need to either change their ways or leave your life.

You will be so much better for it.

Sorbet .. Chocolate? Oh yes please

Oh oh chocolate sorbet?
I bet this could be a really sneaky way to get some veggies into those veggie haters.

I haven't tried this one yet ... but I will be soon.
This could be an interesting to your Father's Day celebrations.

Yield: 5
Serving Size: ½ cup


  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 15 oz. sweet potato, cooked and chopped* 
  • 1/2 cup unsweetened cocoa powder

Make the simple syrup.

  1. In the 2-cup Micro Pitcher, stir together sugar and water. 
  2. Microwave on high power 45 seconds, or until sugar has dissolved. 
  3. Remove from microwave, set aside.
Make the chocolate sorbet base.
  1. In the base of the Power Chef® System fitted with blade attachment, add potatoes, cocoa powder and simple syrup.
  2.  Cover and pull cord until well blended and almost smooth. 
  3. Transfer mixture to a Freeze-It® Medium Shallow Rectangular Container. 
  4. Seal and freeze at least 6 hours or overnight.
Make the sorbet.
  1. Remove Freeze-It® container from freezer; let stand at room temperature 5 minutes. 
  2. Using a butter knife, gently break mixture into 2–3″ pieces.
  3. Place medium bowl or Freeze-It® container below Sorbet Maker spout. 
  4. Fill sorbet hopper with frozen chocolate base pieces. Place plunger on top of frozen chocolate. 
  5. Gently push down on the plunger while turning handle to process. 
  6. Repeat with remaining fruit.

Serve immediately or freeze up to 48 hours.

* SmartSteamer would work great for cooking this 
(and so much more)

Sorbet ... Strawberries and Cream

It's summer (ok almost) and of course for many of us that includes Ice Creams or Sorbets or Shaved Ice.  This one, using Tupperware's new Sorbet maker, looks awesome and will be made soon in my house.

Yield: 4
Serving Size: ½ cup


  • ½ cup heavy cream
  • 3 tbsp. granulated sugar
  • 1/8 tsp. kosher salt (optional)
  • 12-oz. fresh or frozen (thawed) strawberries, stems removed


  1. In the base of the Power Chef® System with blade attachment, add strawberries.
  2. In the 1-cup Micro Pitcher, stir together cream, sugar, and salt.
  3.  Microwave on high power 25 seconds or until sugar is dissolved. 
  4. Remove from microwave and stir to combine; pour over strawberries.
  5. Place cover on Power Chef and pull cord until strawberries are pureed. 
  6. Transfer mixture to a Freeze-It® Medium Shallow Rectangular Container. Seal and freeze at least 6 hours or overnight.
  7. Remove container from freezer, let stand 20 minutes. Using a butter knife, gently break mixture into 2–3″ pieces.
  8. Place medium bowl or Freeze-It Container below sorbet maker spout. 
  9. Fill Sorbet Maker hopper with frozen strawberry pieces. Place plunger on top of frozen strawberries. 
  10. Gently push down on the plunger while turning handle to process. 
  11. Repeat with remaining fruit.*
Serve immediately or freeze up to 48 hours.

Speaking of being Pretty...especially this time of year as our young people are getting ready to move on to the next grade or graduate middle school, high school or college, let's pass this on to them too.... 
We seem to get so worried 
about being PRETTY .....

Strong vs Weak

I posted this on my Instagram feed last week,
but I think it needs to be shared here as well.

I think EVERYONE needs to see this and start a dialog with their circles.  
That could be your kids or grandkids.  
It could be your close friends when someone new comes into your sphere of influence.

Too many believe that if they shout and verbally abuse others that they are the strong ones or that those that stay quiet or don't shout from the rooftops are the weak ones.

There are many times that those who are quiet, those who are seen as "weak" or "geeky" are the ones that will change the world, for the better.

Think about it.

2)  It almost seems to be the "norm" with the popular in our society, as if NOTHING could ever be their fault.
3)  It's time, past time, to take responsibility for our actions and realize that WE are the ones who need to GROW from OUR mistakes, OUR short-comings and be better for it.

Say YES this month!

I was away this weekend so I didn't get to see this until last night.

A Ketogenic Diet friendly Salad

Have you started working on or looking into a Ketogenic Diet?
Have you thought about working this into your diet plans because so many of your friends are trying it?  Did you know that the ketogenic diet has been around since the 1920s?

If you are trying to eat keto friendly, check out this delicious looking (and soon to be trying by me) from a Facebook friend Leah Mayne.

All that is needed is sauteed shrimp, 2 to 3 avocados and some sliced/diced red onion, tossed with about a tablespoon of olive oil and vinegar.  

I think some white balsamic vinegar would be awesome with this - not the normal "bite" of a balsamic vinegar, but a wonderful flavor that wouldn't overpower these salad ingredients.

This is so simple to make, I think everyone should be making it at least once a week.

I personally think this just looks awesome, but then I LOVE everything that is in it.
I just have to get my hubby interesting in at least "trying" avocados, or this will just be a lunch item for me.

Are you setting yourself up?

Sometimes I think we set ourselves up to fail.
We keep trying to be "better".

We start the day with the mindset that we have to be better.
But better than what?  Better than who?

But we do seem to set ourselves up to fail, daily.  
Not on purpose mind you, but we seem to have this mindset that says we just can't.  
I don't know if it is something that we bring upon ourselves or if it is something that we are taught.
We really should keep Marilyn Monroe in mind as we start each day.

See even Marilyn knew that you don't fail at everything.
You just need to keep trying and keep moving 
but most of all

Its National What Day?

I guess I have been living under a rock.
SHHH you, I can see you rolling your eyes and mumbling.

I have NOT been so oblivious to what is going on to realize that EVERY day is a National "something" Day.

But early this morning I was watching the news and John Elliott @CBSNewYork mentioned a few things that were to be celebrated this day, and I was really just a little surprised at some of the day's "somethings" and how they may or may not be related.

For instance.
Today, according to NationalDayCalendar.com, is National Sea Monkey Day. Who knew that Sea Monkeys had their own day??  

And what the heck is a Sea Monkey anyway that they get their own special day?

John Elliott said you get a twofer if you pierce a sea monkey today, because today is also National Piercing Day ... I guess he wasn't thinking of all the other "somethings" for today because,

it is also National Love a Tree Day.
Is this what spurned the Tree Huggers or those Plant a Tree movements?

But my favorite "something" for today is 

National Mimosa Day.
When I looked, I was surprised to see how many different ways there is to making a Mimosa.  Here I thought it was just orange juice and Champagne.  Oh no my friends, there are many different combinations/flavors so long as there is a "base" of orange juice and champagne ... you can get creative with "additives" and flavored "splashes" to suit the day.

This of course got me thinking what the heck were other "something" days and were they related or unrelated things.

For instance, this past Sunday May 14th was Mother's Day.  But did you know it was also National Dance like a Chicken day?  So is this the day that the Chicken Dance came to be or was it the day that spawned the saying "Dance like no ones watching"?

My daughter's birthday is National Animal Cracker Day.  Too bad she was never a fan.  I guess I had her on the wrong day.  
But it is also National Columnist Day, I wonder if they are fans of Animal Crackers?

My son's birthday is National Re-Gifting Day and National Date Nut Bread Day.  He is probably a fan of a re-gifting day for all those things I have bought him that I "thought" he wanted but missed the mark.  
I'm not sure Date Nut Bread would go anywhere with him.  
But then since he moved South he does partake in things he would never touch when he lived up "North".

Now Hubby's birthday is full of tasty National Days.  He gets to celebrate National California Strawberry Day AND National French Bread Day. 
Now that just doesn't seem fair.

So now that I am on a roll ... my birthday has a few "interesting" items, like National Name Your Car Day or National Fried Scallops Day.  
Have you named your car?  
I know years ago my sister did. She named it after a character in Cats.  
I wonder if she still does?  I will have to ask her.

Lets try Spinach, Blueberries and Pineapples in a salad

What?  You're not a fan of Spinach?  Or Pecans aren't your thing?Oh I am thinking you could "play" with this one to add some other ingredients to make it more "palatable".  For those who are not big fans of Spinach (like my hubby), I think you could add some Romaine to this so its not "just" spinach without losing the benefits of this salad.  Don't have or like pecans?  You could substitute walnuts.


  • 9-oz. bag spinach
  • 1 lime, juiced using Zest ’N Press® Gadget
  • 2–3 tbsp. balsamic glaze (store bought or make your own)
  • 1 shallot, chopped fine using Chop ’N Prep Chef
  • 2 cups fresh pineapple, diced
  • 1 cup fresh blueberries
  • 1 avocado, diced
  • 1 cup pecans, toasted
  • ¼ cup crumbled goat cheese


  1. In a large bowl, toss spinach with lime juice, balsamic glaze, and shallot. Once leaves are coated, transfer to desired serving dish.
  2. Top with remaining ingredients to serve.

It's a new Mid Month Tupperware Brochure

I am hoping that you have already checked out the Tupperware Summer Catalog that went live just about 2 weeks ago.  Or the Birthday Month items that will be available until May 26th. If you haven't you can check it out on my Tupperware Website.

But the new Mid Month brochure is also live to celebrate Father's Day and all the great things that Summertime brings.

I personally LOVE the Large Carry-All for so many things.  I have a few just to keep things together. I have one in the car as a "mobile" desk and one as a portable first aid kit.  I know of some who have used these as memory boxes for their kids and grandkids.  
Or how about for those super important papers that you need to be able to grab and go when in an emergency situation?

And then there is the Season-Serve Duo.   I have used the small one just yesterday for marinating dinner since it was just a small amount of meat.  But I can see these for all kinds of BBQ items.  I have to try this, but someone said you can put some corn on the cob in the large one with butter and "shake" so that all the corn is evenly covered without the mess.

As always there is the Short-term items that you need to pick up in the first 2 weeks ... or they will be gone.  Some of these items (like the ice cream scoop) are available in the Summer Catalog .... but at a higher price.  So if you are interested, don't miss out.

I love the Squeeze-it Bottles, because it allows me to have "manageable" containers for home-made sauces and dressings but also to be able to buy those LARGE catsup and mayo jars and bring them down to size.

And those Dining Trays ... make great trays for kids or even for BBQs on the deck!
