Bombay Mango Chicken Salad

What's for dinner in your house tonight?
I know in the summer at least, we like to do lighter dinners and salads fit the bill.  But to be "filling" we need to make sure we have to add some protein.  This salad seems to hit the mark.

Yield: 8
Ingredients
  • 1/3 cup non-fat plain Greek yogurt
  • 1/3 cup low-fat mayonnaise
  • 1 tbsp. curry powder
  • 3 tbsp. lime juice
  • 1 tbsp. honey
  • 3 cooked chicken breasts (poached or steamed in the Tupperware®  SmartSteamer), diced
  • 1 ripe mango, peeled, pitted and chopped
  • 1 cup red seedless grapes, halved
  • 8 oz. can water chestnuts, drained
  • ½ cup salted, roasted cashews
  • salt and pepper

Instructions
  1. In your favorite large bowl whisk together the yogurt, mayonnaise, curry powder, lime juice and honey.
  2. Add the remaining ingredients and gently combine with the dressing.
  3. Serve immediately or refrigerate for up to three days.

Lemon Raspberry Cake in Minutes

I love the flavors of this cake.
Lemon goes great with so many things, but add some raspberries and I'm in heaven.  And then make it so I can have this any time in less than 30 minutes .. yes you heard me - from gathering the ingredients to cutting/serving in the Tupperware Stack Cooker.  I keep telling you it is super versatile and worth its weight in gold!  Here's another reason I think so.


Yield: 8
Serving Size: 1 piece

Ingredients:

  • 1⅓ cup all-purpose flour
  • ⅔ cup granulated sugar
  • 1 tsp. baking powder
  • ¼ tbsp. salt
  • ½ cup canola oil
  • 1 cup reduced-fat (2%) milk
  • 2 tbsp. lemon juice
  • Zest of 1 lemon
  • ¼ cup fresh raspberries

Instructions:
  1. Spray ¾-qt. Casserole/Cover with nonstick cooking spray and set aside.
  2. Combine all ingredients except raspberries in a medium bowl and whisk until combined.
  3. Pour batter into greased ¾-qt. Casserole/Cover and arrange raspberries on the top. 
  4. Stack and microwave on high power 15–20 minutes. OR 
  5. If making cake without stacking, microwave on high power 6 minutes.
Not a big fan of raspberries or want to try a different fruit?  I bet blueberries instead of the raspberries would be awesome in here too.

Make your own Cereal Bars

I know a little bit ago I showed you how to make your own Pop Tart type treat and told you there were so many more options.  
If you are "older" and buy those cereal bars from the grocery store or quick marts, here I'm going to share a make your own version.




Serves: 8-10 bars

Ingredients

  • 1 cup old fashioned oats
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • ½ tsp. table salt
  • 1 tsp. baking powder
  • 1 egg
  • 1 stick unsalted butter, melted
  • ½ tsp. vanilla
  • ½ cup honey
  • 10 tbsp. desired jam for filling or 1½ cups fresh strawberries, hulled & chopped using the Power Chef.

Instructions

  1. Place oats into base of Power Chef fitted with blade attachment. Cover and pull cord until oats are finely cut.
  2. In a medium bowl, combine oats, both flours, salt and baking powder.
  3. In a small bowl, stir together egg, melted butter, vanilla and honey.
  4. Pour butter mixture into flour and stir until combined.
  5. Place dough onto Silicone Wonder® Mat and roll out until approximately ¼″ thick.
  6. Trim off edges of dough with the edge of the Silicone Spatula to make a rectangle.
  7. Using the edge of the Silicone Spatula, make as many 3½ x 4″ rectangles as possible with the dough. Re-roll any remaining dough.
  8. Spread 1 tbsp. of jam or chopped strawberries onto each piece of dough. Fold dough into thirds to close the bar and gently press down the ends.
  9. Preheat oven to 350° F.
  10. Place bars onto baking pan lined with Silicone Wonder® Mat. If desired, sprinkle with oats and bake for 15 minutes or until lightly brown.
  11. Store in sealed container up to three days or freeze up to one month.
I really love the idea of making things myself and Tupperware makes it so much easier.

What matters

I really like this one.
Sometimes we think because we were at one time considered one of the "bad" kids, or we were labeled as "difficult", that we don't have a worth.

That is definitely not the case.  
You see .. it really doesn't matter where you have been, yes that is part of you, but doesn't have to define you.

We all have "baggage" to carry.  
But we all need to "learn" and "grow" from our experiences, from who we use to be, to become who we are meant to be.

Here is a great way to make you matter every day.


When we learn these not so simple facts, and start putting them into practice in our lives ... then and only then, will we be able to put our past where it belongs, in the past, so that we can be judged by our here and now.

I love how this ends .. 
Don't strive to make your presence noticed,
Just to make your absence felt.

Become that person that everyone looks for when you aren't there.  Be that person that everyone wants around.

Eggs for Brunch or any day

I love having my Stack Cooker from Tupperware.
I get to make whole meals in the microwave (yes I know but with the Stack Cooker you wouldn't know its from a microwave) in no time at all.

Here is a great idea for a brunch or with the Stack Cooker any morning.


Yield: 8
Serving Size: 1 cup

Ingredients:
  • 8 eggs
  • ½ red bell pepper, cored & halved
  • ½ green bell pepper, cored & halved
  • 1 small onion, peeled & quartered
  • 1 cup cheese
  • 1 tsp. coarse kosher salt

Instructions:
  1. In 1¾-Qt. Casserole, whisk together eggs.
  2. In base of Power Chef® System, fitted with blade attachment, combine peppers and onion. Cover and pull cord until roughly chopped.
  3. Whisk pepper mixture, cheese and salt into eggs in Casserole.
  4. If making a whole meal, stack and microwave on high power 15–20 minutes or until eggs have cooked through. OR
  5. If making alone, microwave on high power for 8-10 minutes or until eggs have cooked through.
  6. Slice and serve warm.

Its all about choices

We always need to remember that we are the one who is ultimately responsible for our actions.  We are the only one who is responsible for our own happiness.

Lately I think that is something that needs to be taught to an entire generation (maybe 2) because they seem to think they are "entitled" or that they are "owed" something because they are here, or a certain race or religion or nationality.

Whatever happened to "earning" the things that we want?
Whatever happened to "respecting" others even if they are "different" than we are?  

I'm not talking about handing over the keys to the kingdom to make others happy.  Their being happy is not your responsibility, it is theirs. 
They need to make their own choices and be happy about it.

Happy Anniversary Honey

Today is our 35th wedding anniversary.
I can't believe its been 35 years.

Its been an interesting 35 years filled with all kinds of wonderful things.   This is not to say it has all been sunshine and roses, but you never promised me a rose garden.

Of all the wonderful things that have happened over the 35 years, the best has to be Dan and Jenn who have given us more joy (and yes frustration and fears) than anything else.  In many ways they are so very similar, in others, so very different.  And I wouldn't trade them for anything in the world.

But, you see dad, that is because we want to be like you.  
Yes even your daughters are trying to be just like you, because whether she tells you or not, you are her hero.

Cannoli Dip made easy

I can see this being an awesome dessert this summer.
Having a big BBQ, with all kinds of finger foods, to me just screams that you need to have something "lighter" for dessert with a nice cup of coffee.  Not too sweet and definitely NOT bland.

Right?

I think this could be perfect for this "need".  
What do you think?



I am thinking this could end up being a staple this summer.
Yes you could serve in a waffle cone or cup or maybe even those little dessert pastry mini cups (can't for the life of me think of what they are called right now).   I can see all those boxes of cones that have bits and pieces in the bottom being used for this.  Or even graham crackers ... yes definitely a winner in my book.

Oh let me see if I have everything to make this today.

Teriyaki Chicken

This would be great any time of year.  I can even see the Teriyaki Sauce being kept in the refrigerator in one of the squeeze bottles to add to all kinds of recipes!



Ingredients
1 lb. chicken breast
1½ cups teriyaki sauce
Teriyaki Sauce
½ cup soy sauce
¼ cup rice vinegar
¼ cup brown sugar
½ cup sesame oil
3 cloves garlic, crushed in Garlic Wonder® Gadget
1 tsp. ginger, grated with Tupperware® Zest ’N Press
2 tbsp. cornstarch
¼ cup water


Instructions

  1. Place chicken breast in base of Pressure Cooker
  2. Pour in teriyaki sauce to cover chicken. 
  3. Cover and microwave on high for 15 minutes.
  4. Allow pressure to release naturally before opening. 
  5. Shred chicken and serve warm.
Teriyaki Sauce
  1. Place all ingredients in Quick Shake® Container.
  2. Seal and shake until evenly combined.
  3. Store in refrigerator until ready to use.

Personally I love my Tupperware Pressure Cooker, I use it much more than I thought I would to make all kinds of things to have in the refrigerator as a base for go to dinners when everyone is running in 90 different directions.

Cranberry Nut Brie for your next party

A quick and easy recipe for a tapas party or just a few friends who stop over for drinks on a weekend (or week day if you so desire)


Ingredients
  • ½ small onion, quartered
  • 1 tbsp. unsalted butter
  • ¼ cup apricot preserves
  • ¼ cup orange juice
  • 1/3 cup dried cranberries
  • 1/3 cup mixed nuts, cashews and pistachios
  • 13.2-oz. wheel Brie cheese

Instructions

  1. Add onion to base of Chop ’N Prep™ Chef; replace cover and pull cord 3–4 times to chop.
  2. In 2-cup/500 mL Micro Pitcher, combine butter, onion, preserves and orange juice. 
  3. Microwave with 1-cup/250 mL Micro Pitcher inverted on top to cover for 2 minutes, stirring halfway through.
  4. Stir cranberries and nuts into warm preserve mixture.
  5. Using knife, remove rind from top of Brie and place on UltraPro Oven Plate. 
  6. Spread cranberry nut mixture on Brie.
  7. To serve, microwave on high power 45 seconds–1 minute or heat in a 350° F oven 10–12 minutes or until Brie is soft in the center. 
  8. Serve with crusty bread and assorted crackers.
I love doing this for all kinds of get togethers. Takes no time at all but you look like a really chic gourmet!

Make your own Pop Tarts

These look pretty good without preservatives ... and have many more options that those "pop tart" thingies ..



Serves: 5
Serving Size: 1

Ingredients

  • 1½ cups all-purpose flour + extra for dusting Silicone Wonder® Mat
  • 2 tbsp. sugar
  • ¼ tsp. coarse kosher salt
  • 1 stick (½ cup) cold unsalted butter, cut into tbsp.
  • 1 egg, lightly beaten
  • 1–2 tbsp. cold water, if necessary
  • 5 tbsp. favorite jam or apple sauce
  • 2 tbsp. milk for brushing the pastries
  • Sprinkles if desired
Glaze (optional)
  • ½ cup powdered sugar
  • 2 tbsp. milk
Instructions
  1. Place flour, sugar, and salt into base of Power Chef fitted with blade attachment. 
  2. Add in half of the cut butter pieces. Cover and pull cord until butter has been cut into small pea size pieces. 
  3. Repeat with remaining butter.
  4. Pour flour mixture into medium bowl and add in egg. 
  5. Stir together and add cold water as necessary to make dough come together. 
  6. Seal bowl and place in refrigerator until dough is thoroughly chilled, about an hour.
  7. Preheat oven to 350° F.
  8. Dust Silicone Wonder® Mat with flour and roll out dough as thin as possible on mat, between ¼–⅛″T.
  9. Straighten edges with the edge of the Silicone Spatula so the dough is a large rectangle. 
  10. Cut rectangle into at least eight rectangles and use the scraps to make one more.
  11. Place about 1 tbsp. of jam onto one piece of dough and brush milk on all the edges. 
  12. Place another piece of dough on top and seal with the tines of a fork. Repeat until all pastries have been made. 
  13. Brush the tops of pastries with milk and pierce 2–3 times with a fork.
  14. Place onto baking sheet lined with Silicone Wonder® Mat
  15. Bake for 20–25 minutes or until golden brown.
  16. When cooled, top with glaze if desired.


Optional Glaze

  1. Whisk together powdered sugar and milk until glaze is formed. 
  2. Drizzle over pastries and top with sprinkles.
I really like this recipe.  I can see it used for a breakfast on the run, or for your kids/grandkids.  I can also see these as a nice dessert for either a lunch box or a small gathering on the deck.  Yes it could make you feel like a kid again.

Cantaloupe Salad for Summer

With summer right around the corner, this salad just screams YUMM, what time is lunch?
Light and fresh and beautiful colors.  I think this would be a great light mid afternoon lunch.  I can even see this being eaten on your deck or patio with a nice glass of wine.


Serves: 5-6 cups
Ingredients
  • 1 cantaloupe
  • 8 oz. fresh mozzarella
  • 4 slices prosciutto
  • 6–8 leaves fresh basil, chopped using Chop ’N Prep Chef
  • 2–3 tbsp. balsamic glaze

Instructions

  1. Peel, de-seed, and cut cantaloupe into bite size pieces
  2. Cut mozzarella into ¼″ chunks.  
  3. Toss with cantaloupe.
  4. Cut prosciutto slices into bite size pieces
  5. Toss with cantaloupe.
  6. Top salad with basil and drizzle with balsamic glaze.

Make your own Dessert Sauces


I've shared a few dressings that work well for lunch or dinner, but how about dessert you ask....  I know you were thinking about dessert, we always think about desserts, 

shhh it will be our guilty pleasure/secret.

Caramel Sauce
Makes about 1½ cup





  • 11/3 cup granulated sugar
  • 1 cup water
  • 1½ cup heavy cream
  • 1 tsp. vanilla extract
  • 1½ tbsp. coarse sea salt, optional
  1. Place granulated sugar and water in medium sized saucepan.
  2. Cook on medium heat for 10–15 minutes or until temperature reaches 325° F and the syrup is deep amber color.
  3. Remove from heat and carefully stir in heavy cream.
  4. Add vanilla and salt. 
  5. Let cool completely before pouring into Squeeze It Bottle.
  6. Store in refrigerator for one month.


Chocolate Syrup
Makes about 1½ cup

  • 1½ cups granulated sugar
  • ¾ cups unsweetened cocoa powder
  • 1 cup water
  • ¼ tsp. salt
  • 1 tsp. vanilla extract
  1. In Chef Series 3-Qt. Saucepan with Strainer Cover, combine granulated sugar and cocoa powder. Mix until no lumps remain. 
  2. Add water and stir until well combined.
  3. Bring to a boil. 
  4. Reduce heat and simmer for 15–20 minutes until sauce has thickened, stirring constantly. 
  5. Remove from heat add salt, vanilla extract and mix until well incorporated. 
  6. Let cool.
  7. Pour chocolate syrup into Squeeze It Bottle
  8. Refrigerate and use within six weeks.

When I began reading this book, I was thinking it would be like the old "I Love Jeannie" TV series reruns that I remember from my childhood. I mean it is about genies after all. But that really was what I thought and I was so very far from the reality of this book.

Yes one of the main characters and a few others are genies, but it is more about self discovery.   

First Brielle, a genie, learns about herself without magic and how much she believes magic, or lack there of, defines her.

Addie, her first assignment, learns how much she needs to believe, in friendship as well as wishes, when Brielle comes into her life and starts breaking down the walls around her heart.

Brielle, and all genies, only have 3 weeks to grant wishes to their charges.  Brielle has not, as the story begins, granted a wish and therefore has not received her magic yet.  

She desperately needs Addie to make a wish so that she can receive her magic, but to also free Addie from her self imposed loneliness.

When genies start disappearing before their weeks are up, aka die, the search is on to find the cause while also trying to grant Addie at least one wish before the end of the three week time frame and to receive her magic.

I enjoyed this book for a number of reasons.  But the fact that it is a "safe" book for younger readers without making it a "kids only" book, makes it a great choice for anyone.
