Pineapple Pork Chili

This one looks interesting - we like Pork, we like Chili and we like Pineapple ... just never had them together.  I'm thinking this is another must try.  Let's face it ... it is getting to be Chili Time!


Pineapple Pork Chili
  • 1 lb ground pork (or beef)
  • 1 16 ounce jar pineapple salsa*
  • 1 15 ounce can of kidney beans, drained and rinsed
  • 1 8 ounce can tomato sauce (or home-made)
  • 1 TBSP chili powder
  • Pineapple slices (optional)


*If you can't find pineapple salsa, use regular salsa and add 1/3 to 1/2 cup crushed pineapple.

In a 3 qt saucepan, brown meat, drain off any fat.  If you have a Tupperware Stack Cooker, you can put your pork (or beef) in the colander over the 3 qt casserole and cook in microwave approx 6 minutes - no fuss, no muss, all the fat drains down into casserole so it is easily discarded.

Return meat to saucepan or 3 qt casserole of Stack Cooker.  Stir in salsa, beans, tomato sauce and chili powder and simmer or microwave, uncovered until all heated through.

Spoon into individual bowls.  Garnish dish with Pineapple slice, if using

I like this one because you can basically come home from work and make dinner in less than 30 minutes AND have something that is "stick to the ribs".  I bet this would make some awesome leftovers ...
