Blueberry French Toast

Oh how I LOVE blueberries, but I bet you could do the same thing with Strawberries or a combination of the two. This would be an awesome weekend breakfast - but since it is so quick to prepare and cook - you could make this for the kids first day of school without everyone going crazy about being "late" for the bus.


Ingredients 
  • 8 slices white bread 
  • 3 large eggs 
  • 11/2 cups whole milk 
  • 1/4 cup maple syrup 
  • 1 tbsp. Simple Indulgence Cinnamon-VanillaSeasoning Blend 
  • 1/2 cup fresh blueberries 
  • pinch of salt 

Slice the bread into large triangles. Set aside.

Crack eggs into Tupperware® Stack Cooker 3 Qt./3 L Casserole.  Add milk, syrup, seasoning blend and salt. Whisk until combined.

Sprinkle blueberries on top. Add bread slices and press bread down into the custard to submerge.  Let the bread absorb the custard for 5 minutes.

Place cover over Casserole.  Microwave at 50 percent power for 12 minutes, or until the casserole has puffed and risen, and a toothpick inserted in the middle comes out clean.

Let rest, covered, five minutes. Serve with additional maple syrup. To make it super special - add some whipped cream or cool whip and your kids will really love you - even if you still make them go to school.

It defintely does sound easy. I do so love fruit mixed with anything for breakfast! YUM!
