Chipotle Shrimp Tacos for YOUR Dinner

What's for dinner at your house tonight?

As always Tupperware has the answer with Chipotle Shrimp Tacos!
I think these look outstanding, but then I am a shrimp lover ... no matter how it is cooked, or so it seems.


Oh yummmm don't these look fabulous?

Yield: 8
Serving Size: 1 taco

Ingredients
  • 1lb. large white shrimp, shelled and deveined
  • 1/4 tsp. adobo seasoning
  • 4 oz. jicama, peeled
  • 6 oz. bagged broccoli slaw
  • 4 tbsp. reduced fat sour cream
  • 2 tsp. canned chipotle peppers in in adobo, chopped
  • 8 corn tortillas
Cilantro Vinaigrette
  • 1 tbsp. extra virgin olive oil
  • 2 tbsp. fresh lime juice
  • 1/4 cup green onions, sliced
  • 1 tsp. sugar
  • 1/4 tsp. kosher salt
  • 2 tsp. Southwest Chipotle Seasoning Blend
Instructions
  1. Cut shrimp into bite-sized pieces and sprinkle with adobo seasoning. Set aside.
  2. In a medium bowl, combine olive oil, lime juice, garlic, cilantro, green onions, sugar, salt, and seasoning blend and stir.
  3. Slice jicama thinly and place in the base of the Quick Chef® Pro System. Cover and turn handle to process.
  4. Add broccoli slaw, replace cover and process again.
  5. Combine slaw and Cilantro Vinaigrette and stir.
  6. In a small bowl, mix sour cream and chipotle pepper until well combined.
  7. Place shrimp in the Steamer Base of the Smart Streamer and fill the Water Tray with 1 3/4 cups water.
  8. Place Steamer Base on top of Water Tray. 
  9. Cover and microwave on high power for 4 minutes.
  10. Let rest, covered, 2 minutes. 
  11. Serve shrimp, slaw and chipotle sour cream on warmed corn tortillas.

Chicken BBQ Sliders

I am always looking for some different recipes to make so that we don't become bored with what is on the table.

I think the Summer months can be the most difficult because of the heat when you don't want to cook anything heavy or that could heat up the house.  I know that is my situation.  Yes you can use the grill, but sometimes I find that becomes "old" quickly, unless you are a big fan of burgers or steaks. Don't get me wrong we love those too but not every day every week.

Check out these Chicken BBQ Sliders


Yield: 14
Serving Size: 2 sliders

Ingredients
  • 1 whole chicken, about 3 1/4 lbs.
  • 1 cup low-sodium barbeque sauce
  • 1 tsp. Southwest Chipotle Seasoning Blend
  • 1 package slider buns
Smoky Coleslaw
  • 1/2 cup fat-free mayonnaise
  • 1 tbsp. granulated sugar
  • 1/4 tsp. onion powder
  • 1/4 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. liquid smoke
  • 8 oz. bagged coleslaw mix

Instructions
  1. Rinse chicken under cold running water, remove giblets from cavity and discard. Pat dry with a paper towel.
  2. Place chicken in the Steamer Base breast side down to achieve even cooking. 
  3. Fill the Water Tray with 1 3/4 cups water.
  4. Place Steamer Base on Water Tray, cover and microwave on high power for 28-30 minutes or until the internal temperature of the breast reaches 165° F.
  5. Allow chicken to cool, covered in the Steamer Base.
  6. Mix mayonnaise, vinegar, sugar, celery seed, onion powder, salt, pepper and liquid smoke in a large bowl. 
  7. Add coleslaw mix and stir to combine.
  8. Once chicken is cool enough to handle, remove chicken from Steamer Base, remove and discard skin and remove meat from the bone, discarding bones. 
  9. Shred meat using fingers or two forks and place in saucepan over medium heat. 
  10. Add barbecue sauce and seasoning blend and bring to a simmer, stirring to combine.
  11. Spoon chicken onto slider buns. 
  12. Top with coleslaw if desired.
I love my SmartSteamer by Tupperware.  I use it all the time for so many things.  This is an awesome recipe for any time of year, but for the summer it is awesome.  No more heating up the kitchen (and the rest of the house) because most of the cooking is done in the microwave.  Now don't be turning up your nose cooking in the microwave...with Tupperware, there are so many things that you can make that unless you tell them, they won't know it is from the microwave.

It's National What Day??

Did you know that there are National "special" days?
I had heard of some days being "special" days, other than birthdays or holidays of course, like Pi Day and alike, but didn't realize that there were so many other "special" days out there.  

I just had to do a little research on special days and found what appears to be at least 1 "special" for each day of the year.

Like yesterday was National Lollipop Day.

 Did you know that already, I hadn't?

Or that today is National Junk Food Day? 
Could be a pretty special day don't you think? I mean its a day that they are telling you its "OK" to pig out on junk food.  
Can you see the long lines at the fast food joints today?  I'm already thinking of ways to get around to stay away from them.

Now it's also Get to know your Customers day (the 3rd Thursday of every quarter), but I try to do that every day.  I always try to make them feel special and remember their wants.

Sunday July 24th is National Tequila Day.  
I know we all think of it as part of Cinco de Mayo, 

or at least I did, so I guess you can say it has two days.


August seems like a whole month set up to celebrate Ice Cream



 


or Pies of all kinds.  


Now that's probably all a good thing since August is usually rather "warm" at least on the East Coast.



I am going to need to get a clean calendar to mark each of the days with their "special day" so that we can all celebrate some of those days that, at least in my world, have gone unnoticed.  But no more.

If you know of any of these really special days .. pass them on and I will add them to the calendar so we can all celebrate in style!  

Let's not let another day go without its due celebration.

Creamy Avocado Dip

Are you having a party tonight?
Or need something quick to use for finger foods for a pool party?



How about a Creamy Avocado Dip that you could whip up in a flash?  And if you need something to make in front of folks or where you don't have the luxury of an electric outlet?  You know Tupperware has your solution.

Yield: 12
Serving Size: 2 tbsp.

Ingredients

  • ¼ cup cilantro
  • 1 ripe Haas avocado, pitted
  • 1 cup nonfat Greek yogurt
  • ½ lime, juiced using, Zest ’N Press™ Gadget
  • ½ tbsp. Southwest Chipotle Seasoning Blend
  • ¼ tsp. coarse kosher salt

Instructions
  1. Place cilantro and avocado into base of Power Chef® System fitted with blade attachment. 
  2. Cover and pull cord 3–4 times to chop.
  3. Remove blade attachment and replace with paddle whisk attachment.
  4. Add remaining ingredients to Power Chef® base, cover and pull cord to blend until smooth.

I truly love the Power Chef ... I use it ALL THE TIME.  It has a special place on my counter so that it is easily accessible.

Frankie by Jord #Woodwatches

I have recently hooked up with Jord, the designer of wonderful wood watches, and was looking around to see what they had to offer because the Summer Style is here!  If you would like to see what they have to offer, and believe me be ready to be impressed, check them out at Wood Watches by Jord.  

If you remember, I had reviewed one of their watches, but I know there were others that I was also interested in at the time.   So I just let my fingers do the walkin' and went to check out their site.  

This one, in the Frankie Series, is in a similar color family to the one I had reviewed.


The plum color of the face and the Purpleheart wood just seem to go together perfectly.  Purpleheart is from the Solomon Islands and is naturally a rich purple color.

I think this would be perfect for someone who wants color without it making a standout statement on their arm. 
Although I think Jord watches just make people stop and look no matter what the color.  Yes they are that unique.



But as I was looking around I saw another one in the same series with an awesome emerald color face that I bet would be beyond spectacular in person.




The darker coloring of this Sandalwood just seems to make the emerald face pop.  The hands and hour markers also seem to stand out much more on this one than on the plum face.  Perhaps that is just the light vs dark contrast, but I love it.  I would want everyone to see my Jord!






Now if you would want something that is in between the two, this one is perfect.

This is a Koa and Ash that could be less noticeable on your arm, but yet still a nice but unique watch and easy to read.  And of course if you have a nice summer tan, or you have a naturally darker skin, this could be a beautiful piece for your arm.  


I love that the Koa is a wood that is native to Hawaii and that the same wood could have different tones, from gold to reddish brown based on the harvest season.  I think that makes it very unique!

I can just see so many people coming up to you to ask ... 
What is that on your arm? Is it really a watch made from wood?

Challenges

We all have challenges in our lives.  But I know, and acknowledge that some of us have more challenges than others.

I also know that some wish there were no challenges at all in their life.  
They think that having no challenges will make their lives "perfect".  

Now I'm not saying that they are "wimps" or that they are "whiny" about those little bumps and road blocks in their lives, believe me I'm not.  Some have some serious challenges in their lives that are not of their choosing.

When I saw this quote,  I just knew it needed to be shared.


Challenges

Challenges are what makes life Interesting
Overcoming them is what makes life Meaningful.

Cheeseburger Pasta without the heat!

I think all kids just love Mac n Cheese and all the variations of it, any time of year.  I remember when my kids were little, they wanted it all the time, even in the summer.  I think that is part of the reason those box brands are so popular.

This one just seems like something that can be made just the way you want it, super fast and without the preservatives that can be found in those boxes.



Total Time: 20 minutes
Yield: 4
Serving Size: 1 cup

Ingredients

  • 8 oz. macaroni
  • ½ lb. ground beef
  • 1 small onion, peeled and finely chopped using Chop ’N Prep Chef
  • ¼ cup ketchup
  • 2 tbsp. yellow mustard
  • 2 tbsp. dill relish
  • 1⅓ cups beef stock
  • ½ tsp. coarse kosher salt
  • 1 cup shredded cheddar cheese

Instructions

  1. Combine ingredients, except for cheese, in base of Microwave Pressure Cooker. Stir to make sure noodles are submerged. If not submerged add ½ cup extra beef stock.
  2. Seal and microwave on high power 15 minutes. 
  3. Remove from microwave and allow pressure to release naturally until red pressure indicator fully lowers, about 5 minutes.
  4. Stir and serve warm topped with cheese.
I bet you could used ground chicken or cubed/sliced chicken in place of the ground beef to make a different dinner.  

I bet you could make this a wonderful meal for anyone with a nice salad for any day of the week ... even a work day in the heat of summer, with the Tupperware Pressure Cooker!

It's never too late to start over

You may have seen this story before, or maybe its your first time seeing it all together.

Read all the way through and think about what was accomplished and recognize that we all have the ability to rise from the lowest points in our lives to achieve more than we or anyone can imagine for us.

Do you know who this is?

At age 5 his father died.
At age 16 he quit school.
At age 17 he had already lost four jobs.

At age 18 he got married.
Between ages 18 and 22, he was a railroad conductor.  But he failed.
He joined the army and washed out there.
He applied to law school, but he was rejected.
He became an insurance salesman and failed again.

At age 19 he became a father.
At age 20 his wife left him and took their baby daughter.
He became a cook and dishwasher in a small cafe.
He failed in an attempt to kidnap his own daughter, and eventually he convinced his wife to return home.

At the age 65 he retired.

On the 1st day of retirement he received a check from the Government for $105.

He felt that the Government was saying that he couldn’t provide for himself.
He decided to commit suicide.
He felt that life wasn’t worth living anymore; he had failed so much.

He sat under a tree to write his will, but instead, he wrote what he would have/could have accomplished with his life. 
He realized there was much more that he hadn’t yet done. 

He felt that there was one thing he could do better than anyone he knew. And that was how to cook.
So he borrowed $87 against his check.  He bought and fried up some chicken using his recipe.  He then went door to door to sell them to his neighbors in Kentucky.

Remember, at age 65 he was ready to commit suicide.
But at age 88 Colonel Sanders, founder of Kentucky Fried Chicken (KFC) Empire was a billionaire.
Moral of the story
It's never too late to start all over.

MOST IMPORTANTLY, 
IT'S ALL ABOUT YOUR ATTITUDE. NEVER GIVE UP NO MATTER HOW HARD IT GETS.

You have what it takes to be successful. 
Go for it and make a difference.
