COQ AU VIN BLANC in 27 Minutes

Yes you read that correctly ... 27 minutes!
And you really don't need to be some super experienced cook to do it.  
I can just see your friends faces when you bring this to the table. The awe when you tell them "I made it myself".




Ingredients:

  • 2 carrots, chopped 
  • 5 new potatoes, quartered 
  • 1 small onion, chopped 
  • 5 mushrooms, chopped 
  • 4 garlic cloves, peeled and smashed 
  • 2 strips raw bacon, chopped 
  • 5 sprigs fresh thyme or ½ tsp. dried 
  • ¼ cup + 2 tbsp. dry white wine, divided 
  • ½ tsp. kosher salt 
  • 8 skinless, boneless chicken thighs 
  • 2 tbsp. cornstarch 
  • ½ cup fresh parsley leaves, loosely packed 


Instructions:
  1. In the base of the Microwave Pressure Cooker, combine carrots, potatoes, onion, mushrooms, garlic, bacon, thyme, ¼ cup wine and salt; stir to combine. 
  2. Season chicken with salt and pepper. 
  3. Place chicken on top of vegetables. 
  4. Seal and microwave on high power 12 minutes. 
  5. Remove from microwave and allow pressure to release naturally until pressure indicator fully lowers. 
  6. Remove cover, transfer ½ cup of the cooking liquid to the 2-cup Micro Pitcher; stir in cornstarch. 
  7. Microwave on high power 30 seconds, or until thick. 
  8. Meanwhile, remove chicken from pressure cooker, set aside. 
  9. Transfer cornstarch mixture to base of pressure cooker; stir into vegetables and liquid. 
  10. Stir in remaining wine and parsley. 
  11. Return chicken to pressure cooker, coat with sauce. 
  12. Serve warm.

Grilled Ricotta and Mixed Berries

I saw this in an advertisement for one of my local food stores.

This actually looks like it could be a great dessert option for anyone.  I can see this one for a family night dinner or for a casual dinner with friends.

And you don't have to be as "precise" in putting your fruit out like this one, but you could be creative to the extreme or just sprinkle the fruit here and there, its pretty much up to you.  

Or let the kids get their inner DaVinci out.



12-inch prepared pizza crust or naan bread
1 cup whole milk ricotta cheese
zest of 1 lemon
1/2 tsp vanilla extract
2 tsp honey
2 cups assorted berries



1. Preheat grill to medium heat (350°-400ยบ). 
2. In a bowl, mix to combine ricotta cheese, lemon zest, vanilla and honey. 
3. Spread mixture on crust and top with berries.
4. Turn off middle burners for indirect grilling and place pizza crust in center of grill. Grill about 10-12 minutes, until berries are juicy and ready to burst. 
5. Remove from heat and let rest 5 minutes. 
6. Slice and serve.
Pro Tips: 
1. Cooking over indirect heat helps avoid scorching the bottom of the flatbread. 
2. Stone fruits such as cherries, peaches or plums are a fantastic substitute for berries.

New Mid Month Brochure ... August!

I almost forgot to share this!

It's time for another mid month brochure here at my Tupperware Site.

There are some really wonderful and cute things in this mid month's brochure.
And as is our norm, there are a few short term items that you don't want to miss.



These are really great for the upcoming school year.  The Cupcake Keepers are soooo cute for keeping those lunch treats in 1 piece ... I mean who wants to have frosting in a bag and not on the cake.
Oh and that SnackBar Maker ... make your own bars and cute out the preservatives.  The Keepers are perfect for the SnackBars you can make in the Maker, but also for other treats too ... cookies, peanut butter crackers and more!

Speaking of lunches ..



I have this "pre" PLUS and use it all the time when I am taking lunch to work.

I love that my salad doesn't get soggy with dressing and everything is packed together ready to go.  

Have some leftover protein from last nights dinner?  Grilled Chicken, Steak, Grilled Pork ... all would be perfect over a salad. Make that salad as you are cleaning/packing up any leftovers (or planned-overs, as we call them) and you really can just grab and go in the morning.

Success

I've been thinking about this a lot lately.
How do you define success?

When can you claim success?


Is success what we do or what we inspire others to do?

I would think if you strive to be a teacher, and I don't just mean as a profession, it would be what you inspire others to do.  What you help them to learn about what they can do, what they shouldn't do or what they are meant to do.



I know there have been times that I have thought I was going to be so successful and end up thinking about what is in it for me, and then I really am not sure if I succeeded or not.  
Oh you can be successful and unsuccessful at the same time.

WHAT?  WAIT .. what did I just say?

You can be "successful" because you accomplished something monetarily, but is that the true measure of success?
You can be "unsuccessful" at the same time if all you have accomplished is put money in your pocket.  
You need to make a difference when you are successful.  

In my opinion, you need to make people want to do the same thing that you have done, accomplish the things that you have with your help.  Your help can be just being the inspiration, by sharing the knowledge that YES YOU can do it.

Let's try to be the type of successful that helps us to inspire others to do what they want and are able to do, without putting limits on what they can do.

THAT in and of itself could be the true meaning of success.

Where is YOUR Happy Space

Is there a place where you feel safe?

You know that place that you call your "Happy Place".

I know that I always feel at peace when I am by the water.
I don't know that I could live ON the water, but living BY the water brings a smile to my face.  The changing scenes the sky, even when a storm is rolling in, is always gorgeous to view.



Now if You (I) still need a reason to smile ... 



a little wine would be a great addition.

Help in finding the real you

If you are looking to "find" yourself and don't know where to start (like me) you might want to check out Martha Beck.



Martha is a sociologist, a life coach, an author and speaker.  From what I heard, she was a speaker at Limelight by Alcone's conference and did an AWESOME job.  I wish I had been able to be there, because from what I heard the conference was phenomenal but her talk sounded like it was one of the highlights.

I will be perfectly honest here.  
I had actually never heard of her before, which is kind of crazy because she has so many books that she has written.  
In fact, when I looked on Amazon they listed 103! 

I am forever looking for things to read on Amazon (love to keep my Kindle "full" so I can always find something when I'm waiting) and I had NO idea.  Hang head in shame....

When I first looked into her, because of all the Limelight buzz, I saw this ...  "All my life, I've addressed crowds because I'm scared of public speaking..."  I was immediately drawn to learn more, you see I saw "I'm scared of public speaking" and said to myself ... a kindred spirit.  I know, I know, I can talk about a lot of things but public speaking .. definitely NOT my cup of tea.

I figure I've found something/someone good, someone who just might be the catalyst to finding out just who I am or who I want to be.  I know, after all this time, I still don't know if I am where I am suppose to be, where I want to be, so it is definitely time to get my act together.   Better late than never, right?

But hey I'm not the only one who is thinking she is pretty good person to help me on this journey, even Oprah Winfrey said "She's one of the smartest women I know".  Pretty nice endorsement, don't you think?
