Strawberry Whip Topping or More

I know this is for Strawberries, but I bet you could use all kinds of fruits for this as well.  Have blueberries or raspberries or blackberries?  I bet those would be awesome too.  I know this is going to be my go to for all kinds of desserts ... no more "whipped in a can" for me now that I have the Whipping Attachment to the Power Chef - takes no time at all for FRESH WHIPPED!




Strawberry Whip
  • ½ cup strawberries, hulled
  • 2 tbsp. granulated or confectioners’ sugar
  • 1 cup heavy cream

Place strawberries in base of Power Chef™, fitted with blade attachment, cover, and process until pureed.
Replace blade with the Whip Accessory attachment. Add remaining ingredients and turn handle until stiff peaks form.

Just want to have "home-made" whipped cream? You can make your own just leaving out the strawberries ... It takes like 20 turns of the handle and its perfect ... YOU would look like a rock star!!

What we can learn from a Butterfly

I thought this was pretty good and will probably print this out and frame it for one of the walls in my office.  Kind of a visual reminder that even in our darkest times, there is reason for believing that better days are coming.




Sometimes, when things are really getting "ugly" in our lives, we have to be reminded that it will get better.  But in the depths of our grief or depression, it can be really difficult to see that light at the end of the tunnel.

I think that the Butterfly, that pretty little butterfly that starts out as a not so beautiful insect but emerges from that dark seemingly suffocating cocoon to become a real beauty.  

And so can we.

Cinnamon Brown Sugar Whipped Cream

I made something very similar to this the other night when I wanted to "play" with the whipping attachment to my Power Chef.  It was so quick!  So Easy!  Oh yes I can see this being used often this winter for hot cocoa and all kinds of toppings for "Starbucks at home"


Cinnamon Brown Sugar Whipped Cream
4 tsp. light brown sugar
½ tsp. of our Cinnamon-Vanilla Seasoning Blend
1 cup heavy cream
Combine ingredients in base of Power Chef with Whip Accessory turn handle until stiff peaks form.

Home Made Chicken Noodle Soup ... LOVE in a bowl





Homemade Chicken Noodle Soup or as I like to call it Love in a Bowl 
 
There really isn’t much not to love about this iteration of a heart and home-warming soup. The zucchini takes it from winter’s chill to the bounty of summer OR gives you yet another way to use that Garden Bounty and keep your kids wanting to help in the garden next year.  Don't have zucchini? You can change this up to add whatever veggies you do have (more carrots, celery, the sky is the limit).  I was looking for something to make for my "birthday" lunch and I think this just might be it.
1 large boneless, skinless chicken breast, diced
1 zucchini, chopped
2 carrots, chopped
7 cups low-sodium chicken broth, divided
1 tbsp. extra virgin olive oil
1 large onion, chopped
4 garlic cloves, peeled and minced
½ cup dry thin pasta like vermicelli, broken in pieces
1 tsp. kosher salt
½ tsp. black pepper
Place diced chicken in the Steamer Base, taking care not to block all the holes. 
Place zucchini and carrots in the Colander Tray. Fill the Water Tray with 1¾ cups chicken broth. Place Steamer Base and Colander Tray over the Water Tray. 
Cover and microwave on high power for 8 minutes. 
Meanwhile, heat the Chef Series™ 6-Qt. Dutch Oven over medium-high heat. Add olive oil and onions and saute until translucent. Add garlic and saute until fragrant. 
Add the remainder of the broth, noodles, salt, pepper to the Dutch Oven as well as the vegetables and chicken from the steamer. Add the steaming liquid from the Water Tray and bring to a boil. Lower heat to a simmer and cook 10 minutes or until noodles are tender.

Maple Mustard Glazed Salmon

OH OH OH Eating Healthy really can be EASY and oh so tasty!!



Maple-mustard Glazed Salmon

Full of omega-3 fatty acids and heart-healthy monounsaturated fats, salmon’s natural, velvety texture is accentuated by the maple and mustard glaze.
  • ¼ tsp. kosher salt, divided
  • 1/8 tsp. black pepper
  • 4 salmon filets, skinned, 4 oz./115 g each
  • 1½ cups carrots, sliced
  • ¾ cup snow peas, trimmed
  • 1 tbsp. maple syrup
  • 1 tbsp. whole-grain or Dijon mustard
  • ¼ tsp. dried thyme
  • 1 tsp. extra virgin olive oil

Sprinkle half the salt and pepper over the salmon filets and place them in the Steamer Base. 
Place carrots in the Colander Tray and place the snow peas on top of the carrots. 
Fill Water Tray with 1¾ cups/400 mL water. Place Steamer Base on top of Water Tray and Colander Tray over Steamer Base. 
Cover and microwave on high power for 8 minutes or until salmon is opaque in the center and reaches a temperature of 145°F/63°C. 
Meanwhile, in a small bowl, combine the maple syrup, mustard and thyme. Set aside. When cooking is complete, drizzle olive oil over vegetables, sprinkle remaining salt and pepper over them and stir to combine. Drizzle salmon with maple-mustard glaze and serve with vegetables.
