Grilled Ricotta and Mixed Berries

I saw this in an advertisement for one of my local food stores.  
Thank you Acme.

This actually looks like it could be a great dessert option for anyone.  I can see this one for a family night dinner or for a casual dinner with friends.

And you don't have to be as "precise" in putting your fruit out like this one, but you could be creative to the extreme or just sprinkle the fruit here and there, its pretty much up to you.  

Or let the kids get their inner DaVinci out.



12-inch prepared pizza crust or naan bread
1 cup whole milk ricotta cheese
zest of 1 lemon
1/2 tsp vanilla extract
2 tsp honey
2 cups assorted berries



1. Preheat grill to medium heat (350°-400º). 
2. In a bowl, mix to combine ricotta cheese, lemon zest, vanilla and honey. 
3. Spread mixture on crust and top with berries.
4. Turn off middle burners for indirect grilling and place pizza crust in center of grill. Grill about 10-12 minutes, until berries are juicy and ready to burst. 
5. Remove from heat and let rest 5 minutes. 
6. Slice and serve.
Pro Tips: 
1. Cooking over indirect heat helps avoid scorching the bottom of the flatbread. 
2. Stone fruits such as cherries, peaches or plums are a fantastic substitute for berries.
