Throw a Fiesta Party

Make your own Baby Food ... super easy

I really like this one.
We didn't go to this extent when my kids were little, but then again we didn't have as many food related health scares.  
I think if I was having little ones I would seriously think about doing this instead of buying those expensive little jars.

  • Steam wholesome food in the Tupperware® SmartSteamer according to this helpful chart.

More Mixes to make - Onion Soup Mix



I know I have a few boxes of Onion Soup Mix in my Pantry, but I was really hoping to find a recipe that I could make so I didn't have to spend so much on pre-packaged mixes.  You know how I really like to do the home-made thing so I know what's in the mix, so we aren't having too many preservatives in our food.  And lets face it - its cheaper to make your own!

I found this one on, again on my "new best friend's" blog Hillbilly Housewife.  At this rate, I'm going to have to pick up even more of the Tupperware Modular Mates from my Tupperware Site .... but I guess its better than boxes of "prepackaged" stuff with all kinds of sodium and other "hidden" things.

Onion Soup Mix
  • 3/4 cup instant minced onion
  • 1/3 cup beef bouillon powder
  • 4 teaspoons onion powder
  • 1/4 teaspoon crushed celery seed
  • 1/4 teaspoon sugar
Combine everything and then store in an airtight container. 

5 tablespoons of the mix equal one package of onion soup mix.

What's a Sangarita from Woodbridge?

Now this looks like a nice Adult Beverage, especially for the summer BBQ season!




I'm thinking this might just be a new favorite for summer.

I don't know about you, but most of the time I find that the summer is just way to hot or humid to be drinking "heavy" alcohol drinks.  I could get lit really quick with those.  

Now I'm not sure if it is because it is that the alcohol is "heavy" or because it is so hot/humid you just drink them too fast and end up drinking too many.  Either way, I do try to be drinking "lighter" drinks while sitting on my deck (or someone else's).

This one looks perfect.
I do like that you can easily make 1 drink or a whole pitcher without going crazy.  

What do you think?

Green Bean Casserole with Bacon
  • 2 (12-oz) packages steam-in-bag green beans
  • 1 (8-oz) package sliced fresh mushrooms
  • 1 tablespoon butter
  • 4 slices bacon
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (15-oz) jar Alfredo sauce
  • 1 cup shredded white Cheddar cheese
  • 1 (2.8-oz) container French fried onions
Preheat oven to 350°F.

Cook beans in microwave as directed. Transfer to a large bowl.  Sauté the mushrooms in butter in a large skillet over medium-high heat 10 to 12 minutes, stirring once after 8 minutes.

Season with salt and pepper. Add to beans in bowl.

Cook bacon in skillet until crisp. 
Crumble bacon, and add to beans. 

Reserve 1 Tbsp drippings in skillet. Cook onion and garlic in drippings until tender. Add to beans. Stir in Alfredo sauce and cheese.

Spoon into a greased baking dish. 
Sprinkle with French fried onions. 

Bake 20 minutes or until bubbly.

Mango Salsa

Fruit Salsas are just perfect for Spring and Summer dishes and this one is no exception.


I think this could be one of my "go to" things to put on my patio table when we are sitting around with friends and family this year. Strawberry Salsa

Have you been looking for something "different" for your table?  Something to add to your dishes that would just make them POP??  How about some Strawberry Salsa??  Sounds pretty interesting right?



I really think this sounds interesting, and will be especially interesting over a grilled Chicken breast or even a Pork Chop or Tenderloin.  I will be trying this one very soon (like right after tax season ends and I can start cooking again).  Of course I have the Tupperware pieces that they used here to make the Strawberry Salsa.  You know that you could have them in your kitchen too if you picked them up (or so much more) on my Tupperware Site

Monkey Bread

This would be a great brunch item for the up-coming Easter Season because it tastes great, looks great and you can pull it off IN THE MICROWAVE in less than 10 minutes!!!




The only thing I would add is just before I set it on the brunch table ........ I'd either dust it with powdered sugar or a nice powdered sugar glaze (powdered sugar and milk mix and some of the Cinnamon-Vanilla Seasoning Blend).  It just makes it look "prettier" but either way it tastes wonderful!!

Microwave Cake by Tupperware Ombre Style!

As soon as the madness of the Tax Season Crunch is over ... soon, soon, soon .... I am going to be making this cake - perhaps for Jenn's birthday.  I can see the Ombre Layer Cake in our future!!

The fact that I can make it in the microwave ... yes MICROWAVE ... will make it a hit when I'm late coming home from work, trying to get dinner ready for everyone (the start of birthday weekend) and still have an AWESOME looking and tasting dessert/birthday cake.


Now she's not a big fan of "pink" so I have to think about what color I should use to make this ...
Do you have any suggestions?  What color would you use to make this cake?

We could have made it green for St Patrick's Day ... we could do rainbow colors ... blue/green/violet.

Now you could be making this (and so many other things for breakfast to dessert) too if you had a Tupperware Stack Cooker.  And I LOVE our round cake taker in the mint green (mint ice cream)

We just increased our family .........

We have had this wonderful machine (yes today I call it wonderful) for a little more than a year now.


Ok it is our second machine but that was before I learned about the "extra" cleaning trick....

We have had a few problems with this one too, but those were fixed (I learned about the wonderful "paper clip" trick from Keurig Customer Service) and I get to have coffee at the drop of a pod, so to speak.  
The wonderful thing is that we rarely "throw out" left over coffee .... I do still have a regular coffeemaker (shhhh its for big company visits) but I don't use that one very often.

My husband saw a commercial for the newest Keurig system and thought it would make a great addition to the "family".  Yesterday a big box arrived at my door, with ...



you guess it the Keurig RIVO!
So now on my counter is a "regular" Keurig and the Rivo .... give us a few weeks and we will have a review of the Keurig Rivo to share with you.

I have to say that we are espresso and cappuccino lovers in this house so it could be getting a definite detailed workout!

I can't wait ... what would you be having first?  A cappuccino or espresso?  It's too cold here for any of those iced coffee drinks a la Starbucks but those will be for the summer I'm sure.

Pumpkin Dip

Looking for something different for the Thanksgiving dessert table?  
Something that is a little lighter or that includes fruit that hasn't been cooked down?   

Or how about being able to get more fruit into little kids - they all love to "dunk" and this would be perfect!
  
How about this .... 

Pumpkin Dip 

  • 8 oz. package cream cheese, softened room temperature 
  • ½ cup brown sugar 
  • ½ cup canned pumpkin 
  • 2 tbsp. maple syrup 
  • ½ tsp. Simple Indulgence Cinnamon‐Vanilla Seasoning Blend 

Using the Quick Chef® Pro System with blender attachment, blend together cream cheese and canned pumpkin until smooth. 
Add brown sugar, maple syrup and cinnamon‐vanilla blend
Mix until fluffy and smooth. 

Keep in refrigerator until ready to use. 
Serve with fresh fruit like apples and pears. Also great with ginger snap cookies.

New England Clam Chowder

I'm not a huge fan of clams of any kind, but I will eat Clam Chowder "if" I'm in the mood.  My hubby on the other hand LOVES clams.  He isn't a big soup eater (although he does eat "homemade" soups) but he really does like Clam Chowder.  I may be making this for him very soon.  This recipe looks really easy and of course the picture really does took tasty!  Don't you think so?


New England Clam Chowder

  • 24 clams, cherrystone 
  • 2/3 cup onion 
  • 1 leek, thinly sliced, white and light green part only 
  • 2 medium potatoes, peeled and diced 
  • 4 strips bacon 
  • 4 sprigs thyme 
  • 2 cups heavy cream 
  • 1 tsp. kosher salt 
  • 1/2 tsp. white pepper 

 Rinse clams thoroughly in cold water.
Chop onion in Chop 'N Prep™ Chef. Set aside and combine with sliced leek.
Place clams in the Tupperware® SmartSteamer Base, potatoes in the Colander Tray and fill Water Tray to fill line; cover and microwave on high power for 10 minutes or until clams open and potatoes are fork tender.
Remove clams from microwave and discard any that do not open; shuck clams over Water Tray to catch clam juice.
Place clams in base of Chop 'N Prep™ Chef and coarsely chop.
Dice bacon and place in Chef Series™ 3-Qt./2.8 cm Saucepan along with onions, leeks and thyme. Over medium low heat, sauté bacon, onion, leek and thyme 5 minutes or until onions are translucent.
Strain steaming liquid, add liquid to saucepan, increase heat to medium high and scrape pan to loosen browned bits. Remove thyme, add potatoes, cream and bring to a boil. Reduce heat and simmer 10 minutes. Season with salt and pepper.

Shrimp Fra Diavolo

I don't know about you but I LOVE LOVE LOVE Shrimp.  I think it belongs in the MUST HAVE category of food groups - but I know there are people who don't like shrimp, or cant eat it (I'm sorry).

I saw this recipe on the Tupperware site and decided this will be made when all my shrimp lovers are around/home, I may have to make a double batch though .......


Shrimp Fra Diavolo

1 tbsp. extra virgin olive oil, divided
3 garlic cloves, peeled and minced
2 anchovy filets
1/4 tsp. red pepper flakes
1/2 tsp. coarse kosher salt
1/4 tsp. black pepper
1 lb./455 g large shrimp, peeled and deveined
2 cups Everyday Marinara
1/4 cup white wine
1/2 tsp. Simple Indulgence™ Italian Herb Seasoning Blend
1/2 cup parsley
8 oz./225 g pasta, like linguine

 Heat 1 tbsp. olive oil in a Chef Series™ 11"/28 cm Fry Pan over medium-high heat.
Add garlic, anchovies and red pepper flakes. Sauté until garlic is fragrant.
Season shrimp with salt and pepper and add to pan.
Cook shrimp 1 minute per side and remove to a plate.
Add marinara sauce, wine and Seasoning Blend to the Fry Pan; reduce heat and simmer, stirring occasionally, about 10 minutes.
Meanwhile, cook pasta in Tupperware® Microwave Pasta Maker for 12 minutes.
Drain, reserve 1/2 cup pasta water.
Add parsley, pasta and shrimp to the sauce, along with any collected juices from the shrimp, toss to combine and add some of the reserved pasta water to thin the sauce.

Coconut Angel Food Cake

I saw this one the other day and thought OMG I have the steamer and the accessory kit I am definitely going to try this one.



Coconut Angel Food Cake

  • 1/2 cup cake flour, sifted 
  • 1/2 tsp. baking powder 
  • 1/8 tsp. salt 
  • 3 egg whites 
  • 1/2 cup granulated sugar 
  • 1/2 tsp. almond extract 
  • 1/4 cup light coconut milk 
  • 1/4 cup coconut flakes, toasted 
  • 1/8 cup sliced almonds 
  • 8 strawberries or fresh berries 


Coconut Icing

  • 1 tbsp. no-pulp orange juice 
  • 1/2 tbsp. cornstarch 
  • 1/2 cup light coconut milk 
  • 1/4 cup granulated sugar 


Whisk flour, baking powder and salt together in a medium bowl and set aside.
Place egg whites in base of Whip 'N Prep Chef. Turn handle to whip until egg whites are stiff;
add sugar and almond extract and turn handle to whip until glossy.
Add coconut milk and flour mixture. Turn handle to mix until blended.

Fill Water Tray with 1 3/4 cups/400 mL water.   Place Steamer Base over Water Tray.
Divide batter between 8 CrystalWave® Ramekins and place ramekins in Steamer Base.
Cover and microwave on high power for 8 minutes or until a toothpick inserted into center of cake comes out clean.

Meanwhile, prepare icing.
In a small bowl, combine orange juice and cornstarch and set aside.
In a small saucepan, slowly bring coconut milk and sugar to a boil, stirring constantly.

Once coconut milk boils, add orange juice mixture and reduce heat to medium low, stirring constantly until thickened.

Once cool, remove cakes from ramekins onto a serving plate. Spoon 1/2 tbsp. icing over cakes and top with toasted coconut and almonds. Garnish with fresh berries.

Bean & Basil Soup

It's getting to be "Soup Time" in the Northeast ..... and this one looks pretty darned good.  I can't wait to try this one - hopefully this week.


Bean and Basil Soup


  • 4 oz./115 g elbow macaroni
  • 1/2 tbsp. extra virgin olive oil
  • 5 garlic cloves, peeled and minced
  • 1 cup chopped celery
  • 1/4 tsp. red pepper flakes
  • 2 (15 oz./425 g) cans cannellini beans, drained and rinsed
  • 3 tbsp. prepared Pesto Sauce (recipe follows)
  • 4 cups chicken broth
  • 1/4 tsp. coarse kosher salt
  • 2 tbsp. grated Parmesan cheese



Pesto Sauce
  • 3/4 cup packed basil leaves
  • 3 tbsp. pine nuts, toasted
  • 1 clove garlic
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • salt and pepper
Cook pasta in Tupperware® Microwave Pasta Maker 8 minutes, or until al dente.
Heat olive oil in Chef Series™ 6-Qt./5.6 L Dutch Oven over medium heat.
Sauté garlic, celery and red pepper flakes until fragrant.
Add beans, pesto, chicken broth, salt and simmer 15 minutes.

Ladle into warm bowls and sprinkle with grated Parmesan cheese.

Pesto Sauce
Place basil, pine nuts, garlic, Parmesan cheese and oil in base of Chop 'N Prep™ Chef.
Replace cover, twist to seal and pull cord 4-5 times until finely chopped.
Season with salt and pepper.

Angel Hair Pomodoro

I know I should be saying pasta is not on my "diet" list, but you know what - I can't.  I do love pasta and I have to have pasta every now and again or I will just go right off the diet deep end.  You know what I mean?

This one looks pretty good and uses some "fresh" veggies to make it good for you and I bet you could find some whole wheat Angel Hair to be good for you too.


Angel Hair Pomodoro


  • 8 oz./225 g angel hair pasta 
  • 2 tbsp. extra virgin olive oil 
  • 2 green onions 
  • 2 garlic cloves, peeled 
  • 8 oz./225 g cherry tomatoes, halved 
  • 2 tbsp. Parmesan cheese, grated 
  • 1/2 cup fresh basil leaves, roughly chopped 
  • 1 tsp. coarse kosher salt 
  • 1/4 tsp. black pepper 


 Cook angel hair in Tupperware® Microwave Pasta Maker 8-10 minutes, or until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
Mince garlic and green onions in Chop 'N Prep™ Chef.
While pasta cooks, heat olive oil in a Chef Series™ 11"/28 cm Fry Pan over medium-high heat. Add green onions and garlic and cook 2 minutes or until fragrant.
Add tomatoes and cook 2-4 minutes, or until the tomatoes are tender and begin to break down slightly.
Add the pasta to the pan and toss with Parmesan cheese, basil, salt and pepper until well coated.
Add reserved pasta water if the sauce seems too dry.
Top with additional Parmesan cheese and basil, if desired.
Serve immediately.

Lasagna without the fuss

I know we like to have a good lasagna, especially in the winter, but to be honest, I don't like the amount of work nor the time it takes to prepare and then bake and then clean up the inevitable mess in my oven.  Well here is a version that probably takes an hour or less and sounds pretty darned good ...... I will definitely be trying this one VERY soon.


Tupperware Lasagna 
with no fuss or hours of work

  • 1 lb./455 g 85% lean ground beef 
  • 2 garlic cloves, peeled 
  • 1 recipe 15-Minute Marinara (see page 33) or your favorite sauce 
  • 1 tbsp. Simple Indulgence Italian Herb Seasoning Blend 
  • 15 oz./425 g container part-skim ricotta cheese 
  • 1 tsp. coarse kosher salt 
  • 1/2 tsp. black pepper 
  • pinch of nutmeg 
  • 1/2 lemon, juiced 
  • 4 oz./115 g fresh baby spinach 
  • 6 to 8 no-cook lasagna noodles 
  • 6 oz./170 g fresh mozzarella, sliced 
Break up ground beef into TupperWave® Stack Cooker Colander and stack on top of 3-Qt./3 L Casserole. Place garlic in base of Chop 'N Prep Chef. Cover and pull cord 4-5 times until finely chopped. Place minced garlic on top of ground beef, cover and microwave on high 3-4 minutes.

Drain away excess fat in the casserole, then mix beef with marinara and seasoning blend in a medium bowl. Place ricotta in a medium bowl and stir in salt, pepper, nutmeg and lemon juice.

In two batches, add spinach to base of Quick Chef® Pro System. Cover and turn handle until roughly chopped.

Spread a thin layer of marinara on the bottom of 3-Qt./3 L Casserole.
Place one whole noodle directly in middle of sauce.
Break another noodle to fit around the center piece to create a layer. Do not overlap.

Place another layer of sauce on top, followed by half the spinach, then half the ricotta.
Place a second layer of noodles, sauce, spinach and ricotta cheese.
Finish with a layer of noodles and sauce on top.

Cover and microwave on 50% power 16 minutes.
Place sliced mozzarella on top of sauce.
Cover and microwave an additional 3 minutes.

Allow lasagna to rest 10 minutes, covered. Cut into squares for serving.

I'm still finding all the wonderful things that this Stack Cooker can do - and I know I've just scratched the surface.  Who knew you could make great meals in the microwave?

Tortellini, Chicken and Cheese

This is another one of those recipes from Better Homes and Gardens Special Interest Magazines (2009) that would work well with Tupperware and could be made and on the table in probably less than 30 minutes if you use leftover chicken from one of the Stack Cooker Chicken Recipes I've already shared here and here.



Tortellini, Chicken and Cheese

  • 9 ounce package refrigerated cheese tortellini
  • 1 cup frozen peas, corn, pea pods or any combination
  • 8 ounces cream cheese spread - garden veggie or chives and onion or your favorite
  • 1/2 cup milk
  • 9 ounces cooked chicken breast, chopped
In a large pot or Tupperware Pasta Cooker, cook tortellini.  Place frozen vegetables in a colander and drain pasta water over veggies.  Put tortellini and veggies in a microwave safe bowl (or large casserole of Stack Cooker). 

Heat chicken (small casserole of Stack Cooker with cover would work great).  While chicken heats, combine cream cheese spread and milk in a small saucepan, heat and stir until cream cheese is melted and combined with milk.

Pour cheese sauce over pasta and vegetables, stir to combine.  Cover and microwave till heated through.  Spoon into individual bowls or plates and top with chicken.

Now I would have put the chicken in the casserole with the pasta and vegetables before pouring the cheese over top and then heat to serving temperature - but that's me.  I would like to have the cheese sauce adding additional flavor to my chicken .... but it really is up to you.

So how does that sound?  Bet that would put smiles on the faces of your family during the week.  And you didn't have to "slave over the stove" to put that smile on their face!

Microwave Meatloaf?

Yes you can definitely make meatloaf in the microwave 
AND
 it doesn't look "grey" and "unappealing" like so many I've seen.

Here is the meatloaf I made in my StackCooker,  in the microwave, in less than 20 minutes - START TO FINISH!





I have to say I was a little surprised.  I really did "doubt" this one because, although the chicken I have made has been awesome, I've seen some microwaved meats before and well to be honest, wasn't impressed.  This one just blew me away.

Even my husband who 1) is rather picky (sorry hon but you are) and 2) isn't a big meatloaf lover (the joke is we can have meatloaf when it snows - well it didn't but we did) seemed to enjoy this one AND didn't say he would rather not have it again.  So I would pronounce this one a winner.  And yes I am going to make this one again.  This recipe came from my Tupperware Director Mary Ann, so it's called


Mary Ann’s Micro Meatloaf

  • 2 beaten eggs
  • 1 cup Italian seasoned bread crumbs 2/3 cup milk
  • 1 small to medium onion  (chopped in Quick Chef) 
  • 1 to 2 cloves of garlic (chopped in Quick Chef) 
  • 4 Tbsp. barbecue sauce, chili sauce, catsup (whatever floats your boat) I used Country Bob's All Purpose Sauce which worked wonderfully!
  • 2 1/2 lb. lean ground beef
Topping
  • 1/2 cup of additional bottled barbecue sauce, chili sauce, catsup 
  • Generous amount of shredded cheese for the topping (approx 1 cup more or less)
In the TupperWave Stack Cooker 3-Qt Casserole combine egg, bread crumbs, milk, onion, garlic and the 4 Tbsp. of sauce; mix well (I used a wisk).
Add ground beef  and mix well (clean hands work best). 
Scoop the meat mixture out of the 3-Qt dish, transfer into the Stack Cooker's Colander, 
Mold it into the shape of a doughnut ring, place the Colander back onto the 3-Qt Casserole dish and cover. 
Cook on high for approx 18 minutes (6 minutes per pound). 
Remove Casserole cover and cover with a paper towel to absorb moisture during standing time. 

Let stand approx 4 to 5 minutes. Spoon the topping sauce over the top of meat loaf and sprinkle the shredded cheese on top of sauce. Place in microwave long enough to melt the cheese.

You will find that most of the juices and yuk drain into the 3-Qt Casserole dish below; however, there may be juices trapped in the middle of the meatloaf. Simply tip the Colander slightly and use a spatula to gently lift the bottom of the meatloaf to drain it. You can also soak it up with a wadded paper towel.

I only did 1/2 this recipe because it was only the two for dinner (week nights its just us) but I still had leftovers that went into one of my vent 'n serve containers so I can have it for lunch or dinner when it's just me.  I really am loving this.

Tortellini Stir Fry

I have to say I am really loving going through my old recipe magazines (I told you I have a ton!) and finding things that would work with my Tupperware Products or make meal planning so much easier, especially since there are only 2 of us for meals during the week.  Here is another one from 2009 magazine for quick and easy recipes - I really love these Better Homes & Garden Special Interest Publications!


Tortellini Stir-Fry
  • 1 9ounce package cheese tortellini
  • 1 TBSP oil
  • 1 16ounce package fresh or frozen stir-fry veggies
  • 3/4 cup peanut stir-fry sauce
  • 1/4 cup chopped dry roasted cashews

Cook tortellini (Tupperware Pasta Cooker or Pot).  Drain and set aside

Heat oil in large skillet or wok over medium high heat.  Add veggies and cook/stir until tender crisp.  Fresh would be about 4 minutes, Frozen would be about 7 minutes.  Add tortellini and stir-fry sauce, tossing gently to coat and heat through.  Sprinkle with cashews before serving.

I bet this would also be good with chicken or shrimp ..... unless you really wanted a vegetarian meal or it was one of your "meatless" meals.  Ok now I have to look for a good peanut sauce recipe - mmmm
