DIY Apple Chips

I know that making your own "chips" are healthier than buying them at the store, but until now I have always thought it was "easier" to do just that.  Now I see that I can make all kinds of chips myself without breaking a sweat.
These Apple Chips are much better than those you get at the store, or at least cheaper than those from say a Health Food Store.  If you are into these types of snacks, check it out.


These light, bake-and-take snacks are great for any occasion!  I can see these in school or work lunches too.

Ingredients:
  • 1 apple, any type
  • 1 tsp. Cinnamon-Vanilla Seasoning Blend
Instructions:
Preheat oven to 225° F.
Attach apple (no need to core) to the Mandolin food guider, set round knob to #2 for thicker slices, or #1 for thinner slices.*
Place apple slices on two baking sheets lined with parchment paper or Silicone Wonder Mat and sprinkle with seasoning blend.
Bake both sheets at the same time, on upper and lower racks, 45 minutes.
Flip slices and bake another 45 minutes. For thicker slices, more baking time may be necessary. 
Monitor throughout baking and remove chips once they crisp up and lose their moisture.
Cool on a cooling rack until chips are crisp and store in a Modular Mates® Container.

*The thicker #2 slices take longer to bake, but it is easier on #2 for beginners. 
As you get used to using your Mandolin, #1 is recommended as chips bake faster.

So many things you can do with the Mandolin, and this is just with apples, it is the perfect piece for every kitchen!

I was a little surprised when I opened the package and saw this brace.


I really wasn't sure what to expect, but I do think I was thinking it was going to be much more restrictive, more bulky.  This tennis elbow brace with neoprene, it somewhat different than some of the other braces I was thinking of.  If nothing else, it was much more streamline.  So I admit, I wasn't thinking it would work.

Well this one really surprised me.

What I liked about this is that even with the compact size, it really did seem to add just the right amount of pressure to a spot that just "ached".

This tennis elbow brace with the compression pad, allowed you to put that pressure in just the right spot and not just wearing a strap like brace.  
And because the brace has Velcro on both ends of the strap, you can adjust the it, to make the brace strap as large or as small as you need by adjusting each side, to position it right where you need it.

I can see this brace being use by both men and women.  Because this is a set of two, I am thinking I will let my husband "borrow" one to keep in his golf bag for his occasional "golf elbow".

Not a big sports person?  This could also work for those of us who suffer from tendonitis, cubital tunnel, bursitis, osteoporosis and even arthritis too!

Believe in yourself and life will be your teacher

I am sure that there are many other there that can relate to these.
I know I can.  
It's just that someone else put them into words.  Perhaps they are the words I couldn't express for the events of life.


Everyone wants you to have experience ... I guess this is why.  They don't want to be the one to give you the lesson, they would rather assume you can do it, so they test you first.


I have always said to my kids that if you believe in yourself you are half way there.  

I can't even count how many times they have told me that they couldn't do something because it was too "difficult" or someone else told them that it was too "difficult" for them.

I've always just said to smile, say watch me and then go out and do it.

Perhaps this was what I was really trying to prove to them.

I believe it is the largest face of any of the women's watches that JORD currently creates, but I don't believe it is too large for most women.

I have to say I am so very happy with this watch.  I can see me wearing this one every day.  Its perfect for work, especially with the larger face, but also great for a casual day with the girls.

But the guys aren't being left out.

Apple Crisp for anytime

I love easy recipes.  Don't get me wrong, I love to cook and "experiment" with new or different recipes and ingredients, but simple easy to make is overall the best.

If you are an apple lover, like my hubby, you will just love this one.  I can see this one being made weekly during the upcoming Fall season.



Yield: 6
Serving Size: ½ cup

Ingredients

  • 4 apples, peeled & cored
  • 1 tbsp. lemon juice
  • ½ tbsp. cinnamon
  • ¼ cup granulated sugar
  • 2 tbsp. all-purpose flour
Topping
  • ¾ cup all-purpose flour
  • ¼ cup old-fashioned oats
  • ¼ cup brown sugar
  • ½ tbsp. Cinnamon-Vanilla Seasoning Blend
  • ½ tsp. coarse kosher salt
  • ½ cup nuts, chopped
  • ½ cup butter, melted

Instructions
  1. Preheat oven to 425° F.
  2. Assemble Mandolin with circular knob set to 4 and triangular knob set to “lock”.
  3. Attach apple to food guider and slide down Mandolin to slice. Repeat with remaining apples until all apples have been sliced.
  4. Place sliced apples in medium bowl, toss with lemon juice, seasoning blend, sugar and flour.
  5. In small bowl, combine all topping ingredients and mix well.
  6. Place sliced apples in UltraPro 2-Qt. Square Pan, sprinkle with topping evenly. 
  7. Bake 20 minutes or until apples are cooked through and crisp is golden brown.
