This recipe looks like something I will be trying, especially since there are those cold days of Fall and Winter knocking on our doors - I know shhhh.
Mashed Potato Soup
- 20 ounces of mashed potatoes (could use those refrigerator ones too)
- 1 14 ounce can of chicken broth
- 1/4 cup sliced green onions (about 2)
- 1/2 cup shredded Swiss, Cheddar, or smoked Gouda (about 2 ounces)
- Sour Cream (optional)
Combine potaoes, broth and green onions in a saucepan. Cook over medium high heat until mixture is well combined and gently boiling.
Add cheese and whisk until cheese is melted and combined.
Serve in a nice bowl or soup mug with dollop of sour cream if using.
