Ceviche Veracruz has all the freshness of summer to make your taste buds sing --- even if it isn't Summer anymore.
Ingredients
- 1 lb./455 g shrimp, peeled and
- deveined (tails removed)
- juice of 2 lemons
- juice of 2 limes
- juice of 2 oranges
- 1 cucumber, seeded and peeled
- ½ cup red onion, peeled and chopped
- 2 jalapeƱo peppers, seeded
- 1 tomato, seeded
- 1 avocado, pitted
- ¼ cup cilantro
- salt and pepper
Instructions
- Toss shrimp with half citrus juices and place in Tupperware® SmartSteamer. Fill Water Tray with 1¾ cups water. Microwave on high for 7 minutes.
- Remove from microwave, place shrimp in the Quick Chef, fitted with blade attachment, and chop coarsely. Transfer to a large bowl. Add remaining citrus juices to the bowl. Set aside.
- Place cucumber, onion and pepper in base of the Quick Chef and chop coarsely. Transfer to the bowl with shrimp.
- Place the tomato, avocado and cilantro in base of the Quick Chef and turn handle to chop coarsely. Add to the bowl. Stir to combine ingredients, season to taste. Serve with tortilla chips if desired.
