I know we should all be eating more fish (which of course we don't do) but I think this one could be a winner because it is super easy to make, quick so you could have it during the week and with mega protein but light!
AND it looks super fancy ... just think how your family or guests will feel when you bring this to the table! They will think they are really really special ... well they are right? Now you can show them.
Serves 4
Preparation Time: 20 minutes
Ingredients:
2 tbsp. capers, drained
2 tsp. green peppercorns, in brine, drained
4-6 oz. fillets of sole, boned and skinned
1/2 tsp. salt
Sprigs of dill
1 lemon, cut into 8 thin slices (the Tupperware Mandoline works great for this)
Directions:
Preheat oven to 400°F.
Combine capers and peppercorns, and set aside.
Fold a piece of parchment paper in half. Lay fish inside of the parchment paper and sprinkle each piece with a teaspoon of the caper mixture. Season with salt and dill and top each sole fillet with 2 lemon slices.
Fold parchment over ingredients, making a small pleat to secure, fold ends together to seal. Place packet on baking sheet. Bake until the packet has puffed up and the fish is cooked, 15-18 minutes.
Plate and serve immediately.
