Coconut Joy Snack Bars

I'm liking the idea of DIY snack bars.
So many good things can be "added" and those "questionable" things left out.




Yield: 4
Serving Size: 1 bar

Ingredients
  • 1 cup pitted dates
  • water
  • 1 cup quick cook oats*
  • ¾ cup unsweetened shredded coconut
  • ½ cup chopped toasted almonds
  • 1/4 tsp. salt
  • 2 tbsp. coconut oil
  • 1 tbsp. unsalted butter
  • 2 tbsp. honey
  • 1/4 cup almond butter
  • 1/4 cup chocolate chips, melted
Instructions
  1. In a small bowl, add dates, cover with hot water and soak 10 minutes. 
  2. Drain water, transfer to Power Chef® System, add cover and pull cord until finely minced.
  3. Transfer dates to a medium bowl; add oats, coconut, almonds, and salt. Using hands, knead mixture until oats are moist and dates are well distributed.
  4. In the 2-cup/500 mL Micro Pitcher, add coconut oil, butter, honey and almond butter. Microwave on high power 25 seconds or until melted; stir until well combined and smooth. 
  5. Pour over oat mixture. Using hands, knead ingredients together until moist and sticky.
  6. Fill the Tupperware® SnackBar plunger with the oat mixture, about ½ cup; transfer to one compartment of the SnackBar Maker
  7. Using the plunger, firmly press mixture to form a bar. Repeat with remaining oat mixture, dividing any extra evenly between the four compartments and firmly pressing with plunger. 
  8. Place seal on SnackBar Maker, refrigerate 1 hour or until bars are set.
  9. Drizzle set bars with melted chocolate; let stand until chocolate has set, about 15 minutes.
  10. Refrigerate, covered, up to 7 days.

*Do not substitute old fashioned oats for quick cook oats.

Cornish Hen Supper


I don't know about you, but the thought of doing Cornish Hens for dinner was always daunting for me.  I really don't know why, because let face it they are just baby chickens right, but I've never even thought seriously about making them.

That is until I saw this one on my Tupperware Site.
With just a little planning you could even do this on a week night!




Yield: 4
Serving Size: ½ Cornish game hen

Ingredients

  • 2 Cornish game hens
  • 1 tbsp. butter, divided
  • ½ tsp. kosher salt
  • ¼ tsp. cracked black pepper
  • 1 cup prepared stuffing*, divided
  • 2 carrots, peeled, chopped
  • 2 parsnips, peeled, chopped
  • 5 mushrooms, quartered

Instructions
  1. Preheat oven to 400◦ F. 
  2. In the cavity of each Cornish game hen add ½ cup of prepared stuffing. 
  3. Place hens, breast side up, in the UltraPro 2-Qt. Square Pan. 
  4. Rub each hen with butter.
  5. Add carrots, parsnips and mushrooms to pan. 
  6. Sprinkle vegetables and hens with salt and pepper.
  7. Place pan in microwave and microwave 12 minutes high power. 
  8. Remove pan from microwave and baste vegetables and hens with pan drippings. 
  9. Place pan in oven (yes OVEN). 
  10. Bake an additional 20 minutes or until hens are golden brown and register 160◦ F on an instant-read thermometer inserted into the middle of the stuffing.
  11. Remove pan from oven and let stand 5 minutes. 
  12. Transfer hens to a cutting board. 
  13. Cut hens in half lengthwise. 
  14. Serve warm with vegetables and pan drippings.

Tupperware's Mid November brochure

You know I love my Tupperware, but I love it even more at the start of each "mid month" brochure because of the sale prices on pieces in our regular quarterly catalog, but also because there are things that are not in the regular catalog at a great deal.

That is what I see in this brochure.


We have some awesome pieces for planned over storage, but my all time favorite is the Stuffables.
These are the best all year round, but even more so during the holidays when we always always have "extras".  I love these because they have a great expandable top when you need just that little more headroom for your mashed potatoes or steamed veggies and so much more.  And at this price it is a steal!  It's at an even better price this year over last year.

And then there is that large storage tote.
It is great for holiday decoration storage, but I saw the other day that someone used it for a Texas Sheet Cake!

As is the norm, we have some short term items to share with you as well.  Just remember, these go away after November 24th so grab yours while you can.


If by this time, you are needing a new lunch "box" for work or school or whenever, we have this great looking one.  It comes with a Sandwich Keeper, Snack Cup and a tumbler.  
I personally like the Lunch-it Containers.  I can use this to make my own bento box type lunches.  And you get 2 for this price.

If you want to take a small side salad, the mini Salad Keeper is great.  And of course having the ability to have your dressing on the side, at least to travel, is perfect - no soggy veggies. 

If that's not enough, you can add a Commuter Mug for your coffee or tea for the ride in.

I have a couple of the Wine Totes.  They make great gifts, filled with your favorite bottle of wine or after dinner liquor.  Looks so much better than a brown bag, and you could either take it home later or leave it as a gift to your host, so he/she will remember how wonderful you are every time they see it!

Arroz Con Leche

I'm not sure if I have shared this super simple dessert before or not.
I like that you can follow it exactly as is and it would be great, but you can also "tweak" it a little for things you like or don't like.

Like raisins, some people don't like raisins, but LOVE craisins.  Especially if you find those "flavored" ones.  Or maybe you like the dried cherries or blueberries.  I bet you could swap those in without a bit of trouble and make it different every time.




Yield: 8
Serving Size: about ½ cup

Ingredients
  • 3 ½ cups cooked long grain rice
  • 1 ½ cups raisins
  • 1 ½ cups granulated sugar
  • 2 cups whole milk
  • 2 tsp. vanilla extract
  • 1 cup heavy cream
  • 1 tbsp. ground cinnamon

Instructions
  1. In the base of the Microwave Pressure Cooker stir together rice, raisins, sugar, milk and vanilla until well combined. 
  2. Lock cover in place and microwave on high power 16 minutes.
  3. Remove from microwave; let stand 10 minutes or until pressure has released and valve indicator is in the down position. 
  4. Remove cover, stir in cream. 
  5. Sprinkle with cinnamon before serving.

Roasted Rosemary and Parm Fennel

I saw this one and knew, just knew I was going to have to try this one.
I personally love fennel, but I'm not so sure about hubby.  
You see he doesn't really "do" vegetables unless it is a salad.
We shall see how he does with this one, since fennel just screams Fall to me.




Yield: 2
Serving Size: 1/2 cup

Ingredients

  • 2 medium fennel bulbs, cut into quarters
  • 2 large shallots, cut into quarters lengthwise
  • 3 garlic cloves, peeled, roughly chopped
  • 2 tbsp. salted butter
  • 1 tbsp. fresh rosemary, roughly chopped
  • ¼ tsp. kosher salt
  • Grated Parmesan for garnish

Instructions
  1. Preheat oven to 425° F.
  2. On the UltraPro Oven Plate arrange fennel and shallots.
  3. In the small 1-cup Micro Pitcher add garlic, butter, rosemary and salt. 
  4. Microwave on high power 30 seconds or until butter is melted.
  5.  Pour butter mixture over fennel and shallots.
  6. Place oven plate in oven. 
  7. Roast 25 minutes or until fennel is soft and slightly caramelized. 
  8. Remove plate from oven (carefully it will be hot), garnish with freshly shaved Parmesan before serving.

Mexican Chocolate Truffles




Yield: 16
Serving Size: 3 truffles
Ingredients
  • 2 cup dark chocolate chips
  • 1 ¼ cup heavy cream
  • 4 tbsp. salted butter
  • 2 tsp. vanilla extract
  • 3 cups crushed cornflakes, divided
  • 1 cup shredded coconut
  • 1 tbsp. ground cinnamon
  • ⅛ tsp. cayenne pepper
Instructions
  1. In the base of the 1¾-Qt. TupperWave® Stack Cooker Casserole stir together chocolate, cream, butter, vanilla, 1 cup of the cornflakes and coconut. 
  2. Microwave on high power 1 minute. Remove from microwave and cover; let stand 1 minute. Stir until well melted and glossy.*
  3. Cover and refrigerate 30-45 minutes, or until truffle filling is firm and easy to scoop.
  4. Meanwhile, in a medium bowl, stir together remaining cornflakes, cinnamon, and cayenne. 
  5. Invert stack cooker cover and add cornflake mixture.
  6. Scoop about 1 tbsp. of the chocolate mixture and form into ball. 
  7. Roll in cornflake mixture, gently pressing, until coated in cornflakes. 
  8. Repeat with remaining chocolate mixture.
  9. Place finished truffles on a plate or in an air-tight container and refrigerate 10-15 minutes, or until firm. 
  10. Serve chilled or at room temperature.
Notes
Microwave on high power in 15 second increments as needed until chocolate has melted.
Wearing food-safe gloves makes rolling truffles easier. If the chocolate mixture becomes too warm and difficult to roll, refrigerate mixture 5-10 minutes or until firm again.
If gifting, stack dry ingredients in the spaghetti dispenser in the following order: ½ of the chocolate chips, 1 cup of the cornflakes, coconut, remaining chocolate chips

White Chili of Root Vegetables

This one looks interesting.   
Especially since it is getting to be chili time here in the Northeast.  Maybe in your part of the country as well.

Of course I never think of chili without either beef or chicken, but with this even vegetarians can enjoy the flavor of a chili!






Yield: 4
Serving Size: 2 cups

Ingredients

  • 4 medium carrots, peeled
  • 1 large russet potato, peeled
  • 4 medium parsnips, peeled
  • 2 cups cauliflower florets
  • 5 garlic cloves, peeled
  • 3 cups chicken or vegetable stock
  • 1 (4-oz.) can green chilies
  • 1 tbsp. dried oregano
  • 1 tbsp. ground cumin
  • 1 tsp. kosher salt
  • 3 tbsp. instant masa
  • 6 tbsp. salted butter
  • Fresh cilantro, lime wedges, minced jalapeno for garnish

Instructions
  1. Roughly chop carrots and potato, transfer to the base of the PowerChef™ System fitted with blade attachment. Cover and pull cord until finely chopped. 
  2. Transfer ingredients to the TupperWave® Stack Cooker 3-Qt. Casserole. 
  3. Repeat steps with parsnips, cauliflower and garlic.
  4. Stir in stock, green chilies, oregano, cumin, salt, masa and butter.
  5. Cover and microwave on high power 22 minutes or until vegetables are tender.
  6. Remove Stack Cooker from microwave, uncover, and stir chili.
  7.  Serve warm with fresh cilantro, lime wedges and minced jalapeno.
