Spinach, Blueberry & Pineapple Salad

This one just looks so fresh and well interesting. It would make a great side salad.  Or I bet you could use this as a "base" and add some protein, grilled chicken or shrimp, to round this out into a complete one dish meal.

Serving Size: 8-10 cups
Ingredients

  • 9-oz. bag spinach
  • 1 lime, juiced using Zest ’N Press® Gadget
  • 2–3 tbsp. balsamic glaze
  • 1 shallot, chopped fine using Chop ’N Prep Chef
  • 2 cups fresh pineapple, diced
  • 1 cup fresh blueberries
  • 1 avocado, diced
  • 1 cup pecans
  • ¼ cup crumbled goat cheese

Instructions
  1. In a large bowl, toss spinach with lime juice, balsamic glaze, and shallot until coated.
  2. Transfer to a serving dish.
  3. Top with remaining ingredients to serve.

Happy Memorial Day 2016

Lemon Chiffon Dessert

This is a "throw back" kind of dessert that I think would be perfect for this summer.  I can see this in a big ring or in individual serving cups to enjoy at a nice brunch or after dinner while sitting on the deck watching the sun go down. 




Ingredients
2 cups water
3 oz. box lemon flavored gelatin
8 oz. container whipped topping (or 2 cups heavy cream and ¼ cup powdered sugar)

Instructions

  1. Heat one cup water in 2-cup Micro Pitcher for 2 minutes or until boiling.
  2. Stir in gelatin until dissolved.
  3. Stir in remaining water and place in refrigerator until no longer warm, about 30–60 minutes or set in an ice bath to chill quicker
  4. If using heavy cream, which is my favorite, pour cream and powdered sugar into base of Power Chef™ System fitted with paddle whip accessory. Cover and pull cord until whipped cream forms, about 60 seconds. Pour into medium bowl 
  5. Slowly pour cooled gelatin into whipped topping or whipped cream and stir until combined. 
  6. Pour into the Tupperware Jel-Ring® Mold (6 cups) or the new Jel-ette Molds and Snack cups (both 1/2 cup each)  and refrigerate until set (approximately 4–6 hours or overnight).
I bet you could use any other flavor of Jello too and make this all summer depending on your family's favorite.  I'm thinking you could even puree some fruit and add it to the mixture.  Oh I can see this being tried in my house soon.

Its Burger Time!

I LOVE making burgers.
I admit I make them all year round and except of Winter (cause I really hate the "white stuff") I try to make mine on the outdoor grill because we love the flavor.

Here is some great ideas from Tupperware to make your next burger meal.  


Now the chicken or turkey can be picked up at the grocery store, or you can use the Fusion Master Mincer  to make your own to know that it is the way you want it.  


Heck you can even make your own hamburger with this baby (and I have).

A Homemade Balsamic Glaze for your Savory or Sweet Dishes

I have been seeing and have shared some savory sauces/dressings and some sweet sauces/dressings that are perfect for your kitchen, especially this time of year.

How about one that would fit both, sweet and savory?

Balsamic Glaze
Makes about 1¼ cup

  • 2 cups balsamic vinegar
  • 1 cup granulated sugar
  1. Pour vinegar into Chef Series 3-Qt. Saucepan and bring to a boil. 
  2. Let simmer for 20–30 minutes or until reduced by half.
  3. Stir in sugar. 
  4. Let it return to a simmer and watch closely until it begins to boil. 
  5. In about 5–10 minutes it begins to bubble up.  It is now done and should be able to coat the back of a spatula.
  6. Let cool to fully thicken and pour into Squeeze It Bottle
  7. Store in refrigerator up to 2–3 months.
This glaze would be perfect over all kinds of salads with a nice grilled chicken or a flank steak and strawberries or raspberries.  
But I would think it would be equally good over a fruit salad or a pound cake and fruit dessert to add just a little extra sweetness without making it too sweet.

1 large watermelon
5 oz. spring mix greens
¼ cup crumbled goat cheese
½ cup pecans, chopped
½ cup strawberries, sliced
¼ cup balsamic glaze, divided

I can't wait to have this in my refrigerator all the time!

Make your own Ranch Dressing

Do you like salads?
I know, especially this time of year, we do a lot of salads.
Between the time of year (Summer heat) and all the fresh fruits and veggies and interesting protein combinations, it is Salad Season!

I personally just hate doing the store bought bottled dressings since most of them has so many preservatives in them, we usually end up with oil and vinegar.  That is until now.

How about a nice Ranch Dressing you can make fresh?  This recipe makes about 1½ cup.


  • 1 cup mayonnaise (you can use homemade)
  • ½ cup sour cream
  • ½ tsp. dry dill
  • ¼ tsp. onion powder
  • ½ tsp. garlic powder
  • 1 tbsp. dry parsley
  • ¼ tsp. salt
  • 1/3 cup milk
  • 1/8 tsp. pepper

1. In Thatsa® Medium Bowl, mix all ingredients well until combined.
2. Pour into Squeeze It Bottle.
3. Refrigerate and use within one month.




I love the Squeeze It Bottle. I think I might need to pick up a few more ... since they work so well for so many things, just like this.

Do you know what's in YOUR KETCHUP?

I saw this on my Tupperware site (I just love my Tupperware for all kinds of things but this is just an example of the bonuses).

Have you looked at some of the ingredients in a bottle of ketchup?  If you find one that's just tomatoes and vinegar without those unpronounceable ingredients .. grab it.  

If not, you can easily make your own, yes it is easy and uses things that you probably already have in your kitchen pantry .. or can get at the corner store.

This is really great, especially now as the BBQ and cookout season is starting.  



Ketchup
Makes about 1½ cup
  • 7 oz. tomato paste
  • ½ cup white vinegar
  • 5 tbsp. granulated sugar
  • ¼ cup water
  • 1 tsp. salt
  • ½ tsp. onion powder
  • ¼ tsp. garlic powder

1. In Chef Series 3-Qt. Saucepan, combine all ingredients and mix using spatula.
2. Bring to a boil, reduce heat and simmer for 15 minutes. Let cool.
3. Pour into Squeeze It Bottle.
4. Refrigerate and use within one month.


I am loving these new Squeeze It Bottles.  
I have a few recipes to share from Tupperware and of course you can come up with many more, but these are the perfect containers for your refrigerator or table!

They would even be perfect if you buy in bulk and need a way to actually use those huge containers without making a huge mess.

#JORDWATCH The Perfect and Unique Gift for all Occasions

I have to tell you this is just the most amazing thing I have seen in a long time. 
And of course, I have to ask.  Who has seen these Watches Made From Wood before? How many of you have seen one close up?

When the opportunity to review one of these pieces came to me, I have to admit, I was extremely interested.  
The look of the piece is determined by the grain of the wood used to create it.  There just seems to be so many possibilities for showcasing these watches.  And no matter how many you have, they will never be the same.

My watch is just perfect and would be a perfect unique gift for just about anyone.
The coloring is so much more than even the pictures can show.  From the very start, as you open the package, you just know this is going to be special.


Yes it comes in this box with its own special grain.  



I don't think I would have thought of using a wooden box to ship/store my wooden watch, but it is perfect.


It even comes with its own pillow, instead of those hard plastic racks that most watches seem to have.  Yes it cradles the watch in its own box.

I have to admit, I was a little surprised at just how light and comfortable this watch is. Being made of wood, I really thought it might be a bit "heavy" or even "uncomfortable" but still very intriguing.

I was so very wrong on 2 of those assumptions.  This is the lightest watch I have ever worn and very comfortable.   

I have been wearing my watch for a little more than a week now, and have worn it in many different scenarios and constantly get asked about it.

In the entire time I have been wearing it, and yes it has been every day, it has kept perfect time.  I have checked it with my cable box time, computer clock, even the atomic clock I reviewed awhile ago and not once have I had to adjust the time.

Even the back of the band has a gorgeous look to it.

I can see this as the perfect unique gift for Mom or Dad, especially for those who you seem to think have everything already.  Even if they have a watch, they don't have one of these.
Are you looking for something for your graduate this year?  I know it is that time of year (I have one graduating this weekend). Something that would say they are special and you know it?  This really would be a great idea for a graduation gift.

Chicken Enchiladas Verdes with Mexican Rice

This one looks to be so easy (or easier) with the Tupperware Stack Cooker .. just another reason to have Tupperware in YOUR kitchen.




Serves: 6
Serving Size: 2 enchiladas, ¾ cup rice, 2 tbsp. salsa

Ingredients
Salsa Verde

  • 1 lb. tomatillos, husked
  • ½ medium onion, quartered
  • 2 garlic cloves, peeled
  • 2 jalapeno peppers, seeded
  • ½ cup cilantro
  • ½ tsp. coarse kosher salt
  • ¼ tsp. black pepper
Enchiladas
  • 1½ cups cooked chicken, shredded
  • 1 cup frozen southwestern style corn, thawed and drained
  • 1 cup Mexican blend cheese, shredded and divided
  • 2 tbsp. Southwest Chipotle Seasoning
  • 12 6" corn tortillas
Mexican Rice
  • 1 medium onion, quartered
  • 1 garlic clove, peeled and halved
  • 14½-oz. can fire-roasted diced tomatoes, with liquid reserved
  • 2 cups chicken broth
  • 1 tbsp. Southwest Chipotle Seasoning
  • 1 cup long-grain white rice

Instructions
Salsa Verde

  1. Place tomatillos in UltraPro 2.1-Qt. Casserole Pan along with ¼ cup of water. Cover and microwave on high power 5 minutes. Drain and allow to cool slightly.
  2. Place onion, garlic, jalapeno and cilantro in base of Power Chef™ System fitted with the blade attachment. Replace cover and pull cord to process until finely chopped. Add tomatillos, replace cover and pull cord to process until all ingredients are finely chopped.
  3. Place mixture back in casserole pan, cover and microwave on high power 4 minutes. 
  4. Season with salt and pepper. Set aside.
Enchilada Filling
  1. Place chicken, corn, ½ cup cheese and seasoning blend in medium bowl, stirring together using the Saucy Silicone Spatula. Set aside while preparing rice.
Mexican Rice
  1. Preheat oven to 350° F
  2. Place onion and garlic in base of Power Chef™ System fitted with the blade attachment. Replace cover and pull cord several times until finely chopped.
  3. Place onion mixture, tomatoes, broth and seasoning blend in UltraPro 3.5-Qt. Lasagna Pan. 
  4. Microwave on high power 4 minutes.
  5. Add rice, stirring to combine. 
  6. Cover and bake 25 minutes.
Enchiladas
  1. Divide filling between tortillas and roll. Spread ¾ cup salsa verde on bottom of inverted UltraPro Roasting Pan cover (or use inverted Lasagna Pan cover and place aluminum foil over rice).
  2. Place enchiladas in cover, folded seam down, and top with remaining salsa verde. Sprinkle remaining cheese on top.
  3. Remove cover from rice and place inverted cover containing enchiladas on top. 
  4. Bake, together, an additional 15 minutes or until heated through.

Margarita Day

I know today isn't really Margarita Day ... 
its Cinco de Mayo but I was just thinking a Margarita would be perfect for today ... 
hence it's Margarita Day!


Ingredients:

  • 1 1/2 ounces tequila
  • 1/2 ounce triple sec (Cointreau)
  • 1 ounce fresh lime juice
  • Lime wedge for garnish
  • Sugar or Salt for glass rim.


Instructions:

  1. Fill a Quick Shake Container with ice.
  2. Add tequila, triple sec and lime juice
  3. Cover and shake, about 30 seconds
  4. Pour into Margarita Glass.


I love using the Tupperware Quick Shake Container instead of a cocktail shaker because I know the lid will stay closed, won't leak and it won't break if someone "slips" and drops it.

I've actually been using mine for over a year now and have one sitting in the liquor cabinet so no one is ever looking for a "shaker".

Chicken and Black Bean Salsa

INGREDIENTS:

  • 4 PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breast, All Natural (1.5 Lbs.)
  • 2 tbsp. Extra Virgin Olive Oil, Divided
  • Adobo All-Purpose Seasoning With Pepper, To Taste
  • 1/2 Red Onion Diced Small (About 3/4 Cup)
  • 1/2 Red Bell Pepper Diced Small (About 1/2 Cup)
  • 1 tsp. Minced Garlic Or 1 Clove Finely Chopped Fresh Garlic
  • 1 can Black Beans, Drained And Rinsed (15.5 Ounces)
  • 1/2 can Whole Kernel Corn (About 3/4 Cup)
  • 1/2 tsp. Ground Cumin
  • 1 Avocado Diced Small (About 1 Cup)
  • 2 tbsp. Lemon Juice
  • 2 tbsp. Roughly Chopped Fresh Cilantro

Instructions:

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Season the chicken with Adobo and add to the pan. 
  2. Brown the chicken for 3 to 4 minutes per side or until the internal temperature reaches 170°F. 
  3. Transfer the chicken to a plate and tent with foil to keep warm.
  4. Heat the remaining oil in a skillet. 
  5. Add the onions, peppers and garlic. 
  6. Cook on medium heat just until the onions begin to become translucent, approximately 3 to 4 minutes. 
  7. Stir in the black beans, corn and cumin. 
  8. Continue cooking until warmed through, approximately 2 minutes. Remove the pan from heat. 
  9. Stir in the avocado, lemon juice and cilantro until combined.
  10. Serve bean mixture warm atop chicken breasts.

I bet this salsa will taste great on its own with some home-made tortilla chips too.  Oh yes this is definitely going to be tried in my house.

Picking your Battles and your best Revenge

I just had to share this one ...
I can't tell you how many times my sister has said something like this to me, especially when her kids were little (and I can't believe they grew up while we weren't watching ... cause we are always watching right?).


But sometimes you have to.  
And no it is not easy to do, but sometimes it is the best course of action.

I have to say though, that the best way to make peace within yourself, especially when you have had to bite your tongue and do things "their way" even if you feel its the "wrong way", is to succeed where they told you that you couldn't.

I have heard this many times, both in relation to me or one of my kids.  I could write a book on all those times I was told that either I have or I have "allowed" my kids, to set too high standards or we have set the bar too high. You are just setting up to fail ...
 I love this one ..  


And yes it is so very very true!

Everyone's idea of "massive" success is different.  
Doing or achieving something that "they" said you "couldn't" do is a Massive Success in my book .. 
YOU determine your massive success - 
NOT THEM, whoever "them" is.

A Few Power Chef Recipes

The Tupperware Power Chef System is my go to for all kinds of things.
It is so much "lighter" than my KitchenAide mixer and Food Processor, and although I will admit I still like those too, this really is my "go to" on almost a daily basis.
I wanted to show you just how versatile this baby is for every day things.  You probably have all the ingredients you need to make lunches or dinners "extra" special in just minutes.




Sundried Tomato Mayo
Makes about ½ cup

  • 2 egg yolks
  • ¼ tsp. coarse kosher salt
  • ¼ tsp. mustard, yellow or Dijon
  • 2 tbsp. oil from sundried tomatoes
  • 2 tbsp. vegetable oil
  • 1 tbsp. sundried tomatoes

1. Combine egg yolks, mustard and salt in base of Power Chef fitted with paddle attachment. Cover and pull cord to combine ingredients.
2. Attach funnel attachment to top of Power Chef and open slightly. Pour 1–2 tablespoons of oil into funnel and pull cord as oil slowly flows into the Power Chef. Continue until all of the oil is combined and mayonnaise has formed. Stir in sundried tomatoes.
3. Store for 2–3 days in refrigerator.

Garlic Mayo
Makes about ½ cup

  • 1 small garlic clove, crushed
  • 2 egg yolks
  • ¼ tsp. mustard, yellow or Dijon
  • ¼ tsp. coarse kosher salt
  • 4 tbsp. vegetable oil

1. Combine crushed garlic, egg yolks, mustard and salt in base of Power Chef fitted with paddle attachment. Cover and pull cord to combine ingredients.
2. Attach funnel attachment to top of Power Chef and open slightly. Pour 1–2 tablespoons of oil into funnel and pull cord as oil slowly flows into the Power Chef. Continue until all of the oil is combined and mayonnaise has formed.
3. Store for 2–3 days in refrigerator.

Chipotle Lime Mayo
Makes about ½ cup

  • 2 egg yolks
  • ¼ tsp coarse kosher salt
  • ¼ tsp. mustard, yellow or Dijon
  • 4 tbsp. vegetable oil
  • 1 tbsp. lime juice
  • 1 adobo pepper

1. Combine egg yolks, mustard and salt in base of Power Chef fitted with paddle attachment. Cover and pull cord to combine ingredients.
2. Attach funnel attachment to top of Power chef and open slightly. Pour 1–2 tablespoons of oil into funnel and pull cord as oil slowly flows into the Power Chef. Continue until all of the oil is combined and mayonnaise has formed. Stir in lime juice.
3. Place blade attachment into Power Chef and add the adobo pepper. Cover and pull cord until pepper is finely chopped.
4. Store for 2–3 days in refrigerator.
