Sweet Potatoe Latkes

I know these are simply awesome using regular potatoes, so I bet using sweet potatoes is pretty smart .. 




Ingredients
  • 1 large sweet potato, peeled and cut into 3″ chunks
  • 1 yellow onion, cut into 3″ chunks
  • ¼ cup all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. black pepper
  • 1 tsp. salt
  • 2 tbsp. oil

Instructions
  1. Assemble Grate Master™ Shredder with large cone attachment and place bowl underneath.
  2. Place sweet potatoes in hopper two at a time and turn handle to grate the potatoes. Press down using plunger as necessary. Repeat this process until the remaining sweet potato is grated.
  3. Repeat process with onion until it is completely grated.
  4. Add remaining ingredients to the bowl of grated sweet potato and onion and mix until combined.
  5. In fry pan, heat oil over medium heat.
  6. Spoon 1 tbsp. of mixture at a time into hot skillet, making sure they do not touch.
  7. Flatten with a spatula and cook until golden brown on each side, about 5 minutes.

I don't know about you, but in my house we have what always seems like a never ending clutter of charging cables.  I think I have more "extension octopus" setups for everyone to charge their daily must haves then I ever had.  And when we travel, I think the TSA people just roll their eyes will all the cables and charging bricks that appear in our carry-on bags.

The intelliARMOR 5A 4-Port USB Portable Wall Charger  is definitely a wonderful addition to my house and I bet it would be for yours as well.  




This is just my charging station.  In my house that means we have 2 more stations just like this.  I told you it is the extension octopus land here.







All the same charging cords now fit on one brick, I'm missing my kindle charger in these pictures because I took it to work and left it in my bag.  But there is still room for that one too!



I love how well it is packaged too.  It fits nicely in a compact box because the plug is on a rotating/collapsable piece so that it can be stored flat for travel.  Yes this does make it really convenient for travel.



I am impressed that it is intelligent enough, even though it is compact and small, to be used on all kinds of devices and that it will stop charging automatically when your devices are fully charged  No more "over charging" that causes battery issues in the past.  

I will definitely be getting more of these for my household and maybe one or two for travel, so we will always have a charging port available while in a hotel with multiple devices.

Cauliflower Lime Rice

Now this one looks interesting and of course it uses some of my favorite things ... like the Tupperware Grater Master Shredder and Avocados.



Ingredients
  • 1 head cauliflower
  • ½ tsp. coarse kosher salt
  • Zest of 1 lime
  • 1 tbsp. lime juice
  • ½ cup cilantro, chopped
  • 1 ripe
  • hass avocado, cut into bite size pieces

Instructions
  1. Cut cauliflower florets off of stem.
  2. Assemble Grate Master™ Shredder with coarse grater cone and place medium bowl underneath.
  3. Place cauliflower florets 1–2 at a time into hopper. Press down gently with plunger and turn crank to grate cauliflower. Repeat with remaining cauliflower until all is grated.
  4. Fill water tray of Tupperware® SmartSteamer with 1¾-cup water. Place steamer base over top of water tray and place Tupperware® SmartSteamer Tray over base.
  5. Add grated cauliflower to Tupperware® SmartSteamer Tray, cover, and microwave on high for 8 minutes.
  6. Toss steamed cauliflower with remaining ingredients. Serve warm.

Past Mistakes

I really like this one.  
It's definitely one to think about when you feel like you have done nothing right in your life.


This is one that makes me realize that even when I make mistakes, yes even I make mistakes (I'm joking, I'm joking) I am learning something.  

Mistakes are generally not fatal.  
Mistakes are a way to learn what NOT to do.  
I think it was Thomas Edison that said he didn't make a mistake, but learned how not to do something, when he had tried many times to do something and then finally achieved his feat.  The "light" went on too.

When things are going wrong, take this to heart, that you are learning, not defining yourself based on what has happened.  

Mistakes can always be looked at as one of the guides in your life because they help to steer you toward the next opportunity that you will encounter.  

And opportunities are what feed our dreams.

Lemon Pepper Baked Chicken Wings

I saw this one from Tupperware, I thought not bad, you can have your wings for a game, but make them "healthier".  But we aren't big "wing" people so I haven't tried this one yet.   


Ingredients

  • 10–12 chicken wings
  • Zest of 1 lemon
  • 1 tsp. black pepper
  • 1 tsp. coarse kosher salt
  • 2 tbsp. baking powder

Instructions

  1. Preheat oven to 425° F.
  2. Combine all ingredients in a medium bowl, I will use the Tupperware Season-serve, seal and shake until wings are coated.
  3. Spread wings out onto baking sheet lined with Silicone Wonder® Mat.
  4. Bake 30 minutes or until crispy and internal temperature has reached 165° F.

If you have tried this one, share what you think.  Like I said before, we aren't big "wing" people so I don't know yet ... but I am sure I will try it just to see.  Maybe I can use those little drumettes?? 
Hmmmm that may just have promise.

This product, although rather simple in design, really does have a big impact on sore muscles.  I think that part of the reason for its impact is in it's simplicity.  It makes it easy to use and light enough to be able to use it with one hand, but using two hands gives you the most control and ability to increase the pressure as it rolls over those sore knotted muscles.

When this product first arrived I thought about how I was going to test it out in a timely fashion since nothing really hurt. Now I know that would normally be a good thing, and trust me I did think it was, except I really wanted to try this out. You know, put it through its paces.




Well as luck would have it I ended up hurting right arm, which is my dominant arm, making it more difficult to rub away the pain in an effective way. You see, I do everything with my right hand/arm, it seems that my left is more of a "steadier" not a "worker" arm.  It just seemed like I couldn't hit the spot or knead it enough to make the knot go away. It was then that the true test of the Massage Stick happened.




The Massage Stick was so handy and easy to use because it gave a great massage using only my left hand.  Yes, the stick did all the work. Now it didn't make the pain miraculously disappear, but it did help to work out the ache in a few days. I can even see this helping when my back tightens after sitting at my desk for too long.



Oh and when you sleep "wrong" and wake up with a crick in your neck or in your upper back, I can see this being a great help. At 18 inches it's not too big and bulky but also not so small to be ineffective. 

It has found that sweet spot for every need.  It's something that would easily fit in a backpack or gym bag to take with you while on the go. 

It is easy to use with little pressure, or you can increase the pressure with just the use of you hands for an even deeper massage.

It does come with a pamphlet with features and instructions with pictures to show you the best areas/ways to use this, but you really don't need the instructions. Common sense will tell you just how to use this Muscle Roller.



It is a natural fit for breaking up those knots and relieving those muscle cramps that happen even without regular exercise.

The only thing you really want to be careful with when using this Muscle Roller Stick, you want to make sure your hair is out of the way when you use this.  It is suggested that if the area that you are trying to use this product on is "overly" hairy, you cover the area with clothing.  I can see hair getting caught in the rollers if you aren't careful ... and that could be painful.  But other than that, I really couldn't find anything "negative" to say about this one.  

I think this is a winner!

Eggplant shake and bake

These would be great for snacking but I think that this is also an easy way to making Eggplant Parmesan.  Will make the eggplant stand up to the red sauce (or some say gravy) without getting "mushy".  I am thinking the next time I get a craving for Eggplant Parm, this is how I will make the eggplant.




Ingredients
  • 1 small eggplant
  • 1 tbsp. coarse kosher salt
  • 3 eggs, lightly beaten
  • 1 cup breadcrumbs

Instructions

  1. Preheat oven to 450 degrees
  2. Set circular knob of Mandoline to #9. Cut eggplant in half before slicing to make easier to handle. Using food guard slice eggplant into discs.
  3. Spread eggplant out into a single layer of paper towels. Liberally coat slices of eggplant with salt and let sit for 20-30 minutes. This will draw excess moisture out of the eggplant making them crispier. Blot dry with paper towel.
  4. Place eggs and breadcrumbs into separate bowls.  A Thatsa bowl would work well for eggs and a Season-Serve would be perfect for the breadcrumbs
  5. Add the eggplant slices to the eggs, seal bowl, and gently shake to coat.
  6. Remove eggplant from egg and allow excess to drip off.
  7. Add eggplant slices to breadcrumbs, seal, and gently shake to coat with breadcrumbs.
  8. Spread out eggplant onto baking sheet lined with Silicone Wonder Mat.
  9. Bake in oven for 10 minutes and then flip and bake for an additional 10 minutes to brown other side.

Honey Sriracha Cauliflower

This looks really interesting.
The mix of sweet and heat could make even veggie haters dislikers to love or at least like Cauliflower because of this.


Ingredients
  • 1 head cauliflower
  • 1-2 tbsp. sriracha
  • ¼ cup honey
  • ½ tbsp. extra virgin olive oil
  • ½ tsp. coarse kosher salt

Instructions
  1. Preheat oven to 425° F.
  2. Core cauliflower and cut off florets.
  3. Combine florets with remaining ingredients in a medium bowl. (The Thatsa bowl or Season-Seal would work great for this step.) Seal and shake until coated.
  4. Spread florets out onto a baking sheet lined with Silicone Wonder® Mat.
  5. Bake 15–20 minutes or until tender and have started to brown.

I love when the new mid month brochure from Tupperware comes out.  There are always something new to check out on my Tupperware site, whether it is a new product, new product grouping, a vintage product making a surprise appearance or like this month a President's Challenge.

The Chip n Dip set is perfect for all kinds of chips and dips (you can have 2 different ones with the 2 cups).  But you can use it for a big salad and use the "cups" for different salad dressings.  Or even as a punch bowl.  Freeze the cups with punch and a complementary fruit and you can easily have a punch that will not be watered down as the night goes on. Or freeze those cups with plain water and use one upside down (with the seal) and it will keep the contents cold!

I love the tumblers because they are great for drip proof sipping. Insert a straw in the dripless seal spot and even your little ones won't be spilling their drinks!

I have to say that I am in love with this company.  They have the most fun ideas when they re-create every day products.

One of my co-workers shared this one with all of us shortly before I was getting ready to post this review.  It was so appropriate, I had to add this to the review.


Now we don't do this on Friday's, especially since Saturday is also a work day, but some days I bet there are many of us that wish we could.  You know some days just start out bad.  

I know that this mug is definitely going to make some people smile this tax season, me included since I am bringing this one to the office for the duration of tax season.
