Don't aim too low!

When I saw this one I just knew it would start some conversations ... even if those conversations were within the reader and not here on the page.


Some people have a "bucket list" of things they want to do before they leave this Earth. And then they "brag" about how much of their list they have already accomplished.  I would sometimes think to myself, HOW have they done this already?  I mean, I look at how old they are (and think they are just babies) and wonder how did they manage to do all the things on their list already?

It was when I saw this one that I realized that they are ticking off all the "easy" stuff, all the "regular" life things that probably shouldn't be on their bucket list anyway.

Lettuce Wrap with Peanut Vinaigrette

This is one of the recipes in our new Hot Mama recipe book.
I think it is great for anyone, whether you are expecting or not.  Everyone can be a Hot Mama ... no matter what her age!




Ingredients
  • ½ cup baby carrots
  • 1 yellow bell pepper, cored & quartered
  • 1 green onion, trimmed & halved
  • ¼ cup cilantro (optional)
  • 1 cup frozen shelled edamame, defrosted
  • 8 whole romaine leaves
  • 2 cups shredded cooked chicken
Peanut Vinaigrette
  • 3 tbsp. sesame oil
  • 2 tbsp. seasoned rice vinegar
  • 1 tbsp. soy sauce
  • 2 tbsp. water
  • ½ tsp. Dijon mustard
  • ½ tbsp. peanut butter

Instructions
  1. Place carrots, pepper, onion and cilantro in base of Power Chef System fitted with blade attachment. Cover and pull cord until roughly chopped.
  2. Mix edamame into veggies.
  3. Place a ¼ cup shredded chicken into each lettuce leaf. Add ¼ cup veggie mixture on top of the chicken.
  4. Peanut Vinaigrette
  5. Combine ingredients in base of Quick Shake® Container.
  6. Seal and shake until ingredients are combined.
  7. Drizzle Peanut Vinaigrette over the top and serve.
This serves 4 so there is plenty for a lunch get together, a lighter dinner or even part of a nice "baby shower" just by doubling or tripling the recipe, although I would probably make it in steps after doubling just to give myself some "room" to work.

#TheWatchers Knight of Light

Personally I really like to read a good YA book.  Please note I said GOOD YA book... there are lots of YA books that I have read in the past that I really wish I had left "on the shelf".  

This book, The Watchers, book 1 Knight of Light by Deirdra Eden was not one of those. It definitely fell into my GOOD YA category.

I will admit I was a little concerned when I saw it was set in England in 1270 AD, mainly because I'm not a fan of most historical books.  I had nothing to worry about.  There were historical references, mannerisms as well as locations, but the story was about Auriella and the realization of just who she was.  I loved the dwarf and pixie who helped her find her way as well as her interaction with other paranormal and human characters.

If you are looking for a good book for your middle school reader to read, I believe this is it.  There is more than enough to grab their attention as well as spark their imagination to make them want to keep reading this book to the end.  

Since this is book 1 in a series, it could be the start of a reading "marathon" for your middle school age reader.  

Please do not assume by my comments above, that this is only for younger readers. As I said there is enough to spark the imagination of older readers as well.  I can even see this being a catalyst for new writers! 
Lets face it, most of the time young and older readers are just that, readers and never think they could do this thing called writing.  I can see this getting conversations going on how the story or a story should go.  What adventures should or could these or the characters find.  

But don't feel like this is only for writers. This is perfect for any aged reader as just a good book to read.  No strings attached, but you just might find yourself drawn to Auriella the little orphan that was so much more than even she imagined.

Plant the seeds of reading and writing by getting your readers involved in The Watchers series.

Snug Cat Litter Mat

Snug Cat Litter Mat

I know it is rather crazy to be saying that we are in love with a Cat Litter Mat, but I guess I am crazy.  
But then again, who could deny this face? Yes she's laying on my sweater, but well that's my Shadow.


I can not tell you how many mats/rugs we have had over the years trying to keep the princess's litter from being tracked all over the house.  What would usually happen is that IF she would actually walk on the rug/mat, it wouldn't catch and trap the excess litter on the bottom of her paws.

This mat is different.  She did not mind the feeling of the mat under her paws and we no longer find little bits of litter on my wood floor. The mat itself is really quite large in comparison to her litter box, so I can center it near the back and have plenty of room for her to enter and exit and still be on the mat, but isn't so large that its the first thing you see.

It's easy to clean, waterproof and soft, yet heavyweight so it will be durable and in use for years to come.  Just to make you feel even safer in your decision to purchase this litter mat, it comes with a 5 year warranty and like all Snug products, comes with lifetime support through their website.

My only regret is that I didn't find this product sooner.  My Shadow will be 12 years old this year ... I really wish I had found this Litter Mat at least 10 years ago.  Yes I like it that much.

Easy Steamed Chicken Noodle Soup

It is getting to be soup season all over the country. 
Even though it really hasn't felt like it, especially since its January.



Ingredients
  • 1 large boneless, skinless chicken breast, diced
  • 1 zucchini, chopped
  • 2 carrots, chopped
  • 7 cups low-sodium chicken broth, divided
  • 1 tbsp. extra virgin olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, peeled and minced
  • ½ cup dried Fideo noodles or other thin pasta like vermicelli, broken in pieces
  • 1 tsp. kosher salt
  • ½ tsp. black pepper

Instructions
  1. Place diced chicken in the Smart Steamer Base, taking care not to block all the holes.
  2. Place zucchini and carrots in the Colander Tray.
  3. Fill the Water Tray with 1¾ cups chicken broth.
  4. Place Steamer Base and Colander Tray over the Water Tray.
  5. Cover and microwave on high power for 8 minutes.
  6. Meanwhile, heat a 6-Qt. pot over medium-high heat.
  7. Add olive oil and onions and sauté until translucent.
  8. Add garlic and sauté until fragrant.
  9. Add the remainder of the broth, noodles, salt, pepper to the pot as well as the vegetables and chicken from the steamer.
  10. Add the steaming liquid from the Water Tray and bring to a boil.
  11. Lower heat to a simmer and cook 10 minutes or until noodles are tender.

ZESTY ARTICHOKE PESTO WITH SHRIMP

I don't remember if I shared this one with you already or not, but I think this one is perfect for any time of year.  That could have something to do with the fact that we love pasta (maybe I DO have some Italian blood).  

The artichoke pesto makes enough for this recipe and more for later or for other recipes. I can see this being added to bread for an interesting addition to your sandwich or for an appetizer night.


Ingredients
  • 1 lb. fettuccini
  • 1 lb. medium uncooked shrimp, peeled and deveined
Pesto (makes 2½ cups)
  • 4 cups arugula, packed
  • ½ cup basil leaves, loosely packed
  • 3 garlic cloves, peeled
  • ½ cup pecans
  • 14.5-oz. can artichoke hearts, drained with liquid reserved
  • 2 tbsp. Parmesan cheese, grated
  • ¼ cup extra virgin olive oil
  • 1 lemon, zested and juiced using Zest ’N Press® Gadget
  • 1 tbsp. Italian Herb Seasoning
  • ½ tsp. coarse kosher salt
Instructions
  1. Place pasta in Microwave Pasta Maker and fill with water to maximum fill line.
  2. Microwave on high power 16 minutes or until al dente.
  3. When pasta has finished cooking, remove from microwave and add shrimp, pushing down to submerge in pasta water. Cover and allow to rest 5–6 minutes.
Pesto
  1. Place arugula, basil, garlic and pecans into base of Power Chef® System fitted with blade attachment. Cover and pull cord several times to finely chop.
  2. Add remaining pesto ingredients to Power Chef® System, replace cover and pull cord to process until all ingredients are finely chopped and thoroughly combined. If pesto is too thick, add reserved artichoke liquid 1 tbsp. at a time until desired consistency is achieved.
  3. Drain pasta and shrimp, reserving pasta water, and place in large bowl. Add 1½ cups pesto to pasta and toss to combine, adding a little reserved pasta water to create a saucy consistency.
Because you can get fresh or frozen or even canned in most places around the country, I think this is a great year round recipe.

This heavy duty, popup laundry hamper by Greenco is something that I think should be in every college dorm or kids bedroom.

When not in use or when transporting between locations (like between home a college dorm) it will flatten down to almost nothing, which means it will be easy to store.





The handles make it easy to grab and go but also have this button that helps to keep it closed and compact.  



I do like that it is heavy duty yet still portable and light enough to allow it to be moved from one place to another ... the bedroom to the laundry without being another "huge" chore.



Another bonus is that it holds up to 3 loads of laundry without being a huge part of the landscape.  I can see this in a corner, but still used on a regular basis. 




I can even see little boys (or girls) using this as a basketball "hoop" while doing what they are suppose to do with dirty laundry. Mom or Dad can even "suggest" it to help with keeping their laundry off the floor.  Anything to make chores fun right?

I can even see getting a few of these to use as a sorter in the laundry room and then when you are finished with the laundry for the week, you can collapse it down and store away until next week.

I will be using this in my bedroom or perhaps in the spare bedroom.  But wherever I put it, I think it will be perfect and get plenty of use.

I will admit when I first opened the package I was really really surprised as to just how green the powder was.

I have seen green tea powder before but never has it been this green!  


I do think it is a very good thing even though I would think it would need to be "processed" more to get it so fine and green.  Being 100% Pure Organic gives me an additional level of comfort.

There are a lot of benefits that Matcha Green Tea Powder professes to provide, such as being a fat blocker, being able to lower cholesterol, increase your memory, focus and energy.  This is because Matcha Organic Green Tea powder has over 1300 antioxidants, which is much more (137 times more) than a traditional brewed green tea. This is because one is brewed and then leaf then is discarded verses consuming the entire leaf when using the Matcha powder.  Whether this product will provide all or some of these benefits for you is something I believe you would need to see for yourself.  I also believe you need to use this product for much more than a week or two, which is what I was able to do, to see if these claims are true for you.  I know that I felt "better" while I was using it, and will continue to use it, but I have no "scientific" or "medical" proof.

Decadent Chocolate Cherry Cake

I can't remember if I had shared this with you in the past or not, but it is a definite winner ... especially if you have some last minute guests that you want to wow and don't have a lot of time to get it done.



Ingredients
Cake
  • 15.25 oz. package devil’s food cake mix
  • 2 eggs
  • 1 lb. 5 oz. can cherry pie filling
  • 1 tsp. almond extract
Glaze
  • 1/3 cup heavy cream
  • ½ tbsp. cocoa powder
  • 1½ tbsp. granulated sugar
  • ¼ cup semi-sweet chocolate chips

Instructions

  1. In a medium bowl, combine cake mix, eggs, cherry pie filling, and almond extract.
  2. Spray TupperWave® Stack Cooker 3-Qt. Casserole and Cone with nonstick cooking spray. Pour in batter.
  3. Microwave at 70% 15 minutes. Remove from microwave.
  4. Place all ingredients for glaze in Micro Pitcher and microwave 1 minute. Stir and set aside.
  5. Allow cake to cool completely.
  6. Remove cake to a platter before pouring glaze over cake.

Marinated Olives and Cheese

This just looks interesting because although it doesn't use any unusual ingredients, it would be perfect to add interest to any table because you made it yourself!  These would be nice for a New Year's table but just as nice for an any time celebration.



Ingredients
  • 4 oz. Parmesan cheese
  • 1 cup pitted olives
  • 2–3 sprigs fresh thyme
  • 1–2 sprigs fresh rosemary
  • 1 tsp. Italian Herb Seasoning
  • ½ cup extra virgin olive oil
  • Baguette for serving

Instructions
  1. Cut Parmesan into bite size pieces.
  2. Toss together Parmesan and olives and pour into a Tupperware Counterscaping Medium Liquid Container.
  3. Add thyme, rosemary and Italian Herb Seasoning. Pour olive oil over the top and seal.
  4. Keep refrigerated until ready to use. If refrigerating for more than four hours before use, allow olive oil to return to room temperature before using.
  5. When serving, pour oil out into a small container for bread dipping and then pour out olives and cheese for easy snacking. Serve with a sliced baguette.
