Few reasons for regrets

I know there can be many things that we regret, but I think this one is the one of those things we should regret the most.


Now you know me, I am not talking about those chances that could be dangerous.  
I'm talking about those chances that could lead you to a better life. Those chances that allow you to grow in a way that you may never have thought you could.

These are the chances that we should grab with both hands and give it all we have.

If we don't ... these are the ones we will look back on with regret.
Friends don't let friends regret .... 
take that chance!

Memphis Style Dry Rub

It is BBQ season and I'm always looking forward to trying new recipes.  Especially ones that I get to make everything from scratch instead of buying pre-made.

Now there is nothing wrong with pre-made, I have made all kinds of meals with pre-made/pre-packaged items as part of the ingredients. Heck I think I was Sandra Lee before Sandra Lee was Sandra Lee. Now I really hope you know who Sandra Lee is or I will be really disappointed.


I am thinking this would be fabulous on some ribs (which I may be making soon for sure) out on the grill, but also on chicken.  I am betting there really isn't much you couldn't use this on.  Except for maybe fish since I think this would be a little too much for a delicate fish.

Another definition of Happiness

Sometimes even the simplest of things need an even simpler explanation.



I think I will be trying to put this simple explanation into practice more often.

I know there are many times that I am very grateful for everything that I have.  I know that many of the things I have are because of the grace of God, not because of anything that I have done or earned.

I would love to say that I have been showing my gratefulness every day, but I do not wish to lie to you.  I know that there have been many days that I have not.  There have been many days that I have thought that is wish things were different, that I had something more.

I can't promise that I won't have days like these again.  But I am promising you here and now that I will try harder to just be grateful for all the things I have - good and bad.  Grateful for just one more day with these things.  Some don't have that privilege.

I'm in a special competition ... are you?

I saw this one and thought that this is so much better than just saying "stop competing with everyone else".

First I don't think that is completely possible. Society seems to think that we need to be in competition.  And in some things it is good to be in a competition with someone. Sometimes that someone is YOU.

What we need to do though, is recognize that just because we are in a competition it doesn't mean it needs to be to your detriment. Sometimes it is for the good of everyone that we compete.


Some days it mean that you need to stop competing with everyone else and realize that YOU are better than yesterday and THAT is all you need, all that really matters.  That is all you can ask for and still be happy.

Some times it means that you don't need to be a superstar in everyone's eyes, you just need to be better than yesterday and then you are a star.

Quinoa Salad on the Go

I've never had quinoa or at least I don't think I have, but this salad looks interesting.


Ingredients:
  • 1 cup quinoa
  • 1½ cups low-sodium vegetable broth
  • ½ cup orange juice
  • 2 tbsp. Cilantro or Lime Vinaigrette preferred dressing
  • ¼ cup red pepper, chopped using Chop ’N Prep Chef
  • ¼ cup green pepper, chopped using Chop ’N Prep Chef
  • ½ cup black beans canned, drained
  • 2 cups spinach
Instructions:

Combine quinoa, vegetable broth and orange juice in Microwave Rice Maker. 
Replace cover and microwave on high power 15–18 minutes. 
Fluff with a fork and chill in refrigerator.

Layer (bottom to top): 
  • dressing
  • peppers
  • black beans 
  • ½ cup chilled quinoa 
  • spinach
Securely seal container. 
Store in refrigerator until ready to serve.

When ready to serve, shake Quick Shake® Container until all ingredients are combined. 

Pour into bowl and serve.
You will only be using 1/4 of the prepared Quinoa, so you can make more of these for lunch/dinner or use the quinoa for another recipe.

Happy Father's Day 2015

I just wanted to stop and wish my readers a very 

Dad's are special.
Most of the time, they aren't "expected" to be the ones that nourish and comfort.  They are the ones that are "supposed" to bring in the money so Mom can do all those things.
But in reality, this is what a dad is.


My dad was one of the "good guys".  He was the breadwinner and provider of all those things we wanted to do.   He was always the one that made me want to do, to be better. He always allowed me to spread my wings knowing that he would be there if I failed.  He was and is my "safety net".



For all the dads out there ... Happy Father's Day.
For all the moms, who are holding down two "jobs" ... Happy Father's Day to you too.

And to everyone else, I'm  


Now go call your dad and wish him the same.

Today is my wedding anniversary.

Today we have been married for .... 34 years.

I will admit, some days it feels like forever.  
But most of the time I can't believe it was that long ago.

Cobb Salad ... in a flash to go

I LOVE Cobb Salad.
But somehow it always seems to be soggy or wilted or just not right when I tried to take it to work.  
Well that is until I found this method.  Yes you could use a Mason Jar ... but then you have to worry about broken glass ... the QuickShake from Tupperware solves that problem too!


Now using the recipe below and the Tupperware QuickShake, I can take this to work and just "shake shake shake" and pour.

See this is just so easy and looks like it would fit into just about any backpack or briefcase....

Ingredients:
  • 4 oz. chicken breast, steamed and cut into small chunks
  • 1 hard-boiled egg
  • 2 tbsp. Basil Vinaigrette or preferred dressing
  • ½ cup cherry tomatoes, halved
  • 3 slices pre-cooked bacon, cut into small pieces
  • ¼ cup feta cheese
  • 1 cup romaine lettuce, chopped

Instructions:
Season chicken breast with salt and pepper.

Place in SmartSteamer base, filling water tray with 1¾ cups water. Place steamer base over water tray and cover. 
Microwave on high power 8–10 minutes, or until chicken reaches 165° F.

Slice the hard-boiled egg using the Slice ’N Wedge fitted with the wedge insert.

Layer (bottom to top): 
  • dressing 
  • tomatoes 
  • chicken 
  • bacon 
  • cheese 
  • egg
  • lettuce

Securely seal container. 
Store in refrigerator until ready to serve.

When ready to serve, shake Quick Shake® Container until all ingredients are combined. 

Pour into bowl and serve.

Don't let anyone tell you differently

When my daughter was in grade school, this really still annoys me to no end, one of her counselors told me that "we" should "discourage" her from what she says she wants to do.  He said he believed that she just isn't "capable" ... I stopped dead in my tracks and at a very hushed voice, in a tone he could not miss, I told him in no uncertain terms that he was to NEVER tell her that.  I went so far as to tell him that if I EVER heard that he or ANYONE in the school district told her that there would be hell to pay.

I have told her and have encouraged her, to do what she wants to do - what she believes that she can do.  This became her motto to live every day.



She is a senior at a NJ University who will have a degree in one of the Sciences and a minor in History.

I can't tell you how much I would LOVE to be able to look that "know it all" counselor in the eye and say .. TOLD YOU.

Make sure your children or grandchildren know that you stand behind them and that THEY CAN do whatever they put their minds to.  Be their encouragement in a world of discouragers.  Sometimes that's all they need to prove that they CAN.

Peaches and Cream Ice Pops




Peaches and Cream
Ingredients
  • 1 peach, peeled and pitted
  • 1¼ cups vanilla yogurt
Instructions
  1. Place peach in base of Power Chef™ System, fitted with blade attachment. Cover and then pull cord until finely chopped. 
  2. Switch to the paddle attachment, add yogurt, cover and pull cord until combined.
  3. Divide between Lollitups® Freezable Forms and freeze.

These look so great, and I bet you could do the same with blueberries or strawberries too!

Happiness Comes

Saw this and thought YES this is a definite keeper!



I am quite sure we all have lots (if not more than enough) to complain about, but lets face it, once we get it off our chest, what does complaining do for the problem?

Usually nothing.

Once we get it off our chest we can move on. We can either figure out what to do to "fix" the problem or decide that it isn't worth fixing and move on to something better.

So if we stop thinking about, complaining about the troubles we have and start celebrating all the good things that we have, and yes we have lots of good things in our lives, and recognize all the troubles we don't have ... we will be much happier!

Let's face it, if you look around you and see some of the troubles/problems that your neighbors have, that you don't have ... you might just be thanking your lucky stars, or God for allowing those problems to pass you bye.

I know I will be.

How many of us just allow things to "happen" and then "wish" we had done something to make it different?

How many of us have thought "If I had just done ... "

I think that this is a pretty good idea about what life is.

Yes you can go into the details of life and why things happen or don't happen.  You can get philosophical or theological about why things happen.  One day we could discuss those ideas.  

But I'm thinking this one is pretty much on the money.

WHITE CHOCOLATE FRUIT PIE

Looking for a quick and easy dessert that is light and tasty for a summer BBQ or weekend dinner?
This White chocolate fruit pie is pretty sweet and fancy looking without being difficult.

Oh can you say yummmm

Ingredients
  • 5 oz. white baking chocolate chips
  • 2 tbsp. reduced-fat (2%) milk
  • 3 oz. cream cheese, room temperature
  • 1/3 cup confectioners’ sugar
  • 1 tsp. orange zest using Zest ’N Press® Gadget
  • 1 cup lite cool whip
  • 1 cup strawberries
  • 1 package mini graham cracker pie crust (6 mini pies)
Instructions

  • In 1-Qt./1 L Micro Pitcher, combine chocolate and milk and microwave
  • on high power 1 minute, until chocolate is melted. Remove from
  • microwave and whisk until smooth and allow to cool to room
  • temperature.
  • In base of Power Chef™ System, combine cream cheese and
  • confectioners’ sugar. Cover with Whip Accessory and turn handle to
  • whip until smooth.
  • 3. Add orange zest, melted chocolate and whipped topping. Replace
  • cover and turn handle to whip until well combined.
  • Slice strawberries using Slice ’N Wedge with slice insert.
  • Divide mixture into mini pie crusts and top with sliced strawberries and other desired fruit.
  • Refrigerate at least 1 hour before serving.

I saw this one and just had to share.
So many of us are running around trying to do everything, have everything, because we THINK we NEED them.

Sometimes we just have to stop and realize what we are doing.

When what we really need to do is just stop and breathe.

Taco Salad on the Go

There are so many of us who are trying to eat healthier and keep those fast food stops at bay.
Here is a Taco Salad that you can make that can easily be taken to work with you in the morning or when you are going to be out and about and afraid that those lunch time cravings will be making it really difficult to pass by those evil drive-through windows.  I know you just rolled your eyes and said "she has lost her mind".  
No I haven't lost my mind ... not yet anyway.
QuickShake
Tupperware has the answer again for this salad - our QuickShake is PERFECT.
Yes, its a perfect way to transport your taco salad so that nothing is wilted or "soggy" before you get to sit down and eat it. 

Ingredients:
  • 1 lb./455 g ground beef
  • ½ tbsp. Southwest Chipotle Seasoning
  • ¼ tsp. coarse kosher salt
  • 3 tbsp. Light Avocado Ranch or preferred dressing
  • ¼ cup cherry tomato, sliced
  • ¼ cup green bell pepper, chopped using Chop ’N Prep Chef
  • ¼ cup red onion, chopped using Chop ’N Prep Chef
  • ½ cup shredded cheddar cheese
  • 1 cup romaine lettuce, chopped

Instructions:
  1. Place TupperWave® Stack Cooker Colander into Stack Cooker 3-Qt./3 L Casserole. Combine ground beef, seasoning and salt in Colander, cover and microwave on high power 5 minutes.
  2. Layer (bottom to top): dressing, tomatoes, green peppers, ½ cup ground beef (save the rest for another salad or another recipe), cheese, red onion, lettuce.
  3. Securely seal container. Store in refrigerator until ready to serve.
  4. When ready to serve, shake Quick Shake® Container until all ingredients are combined. Pour into bowl and serve.

Time Karma

I saw this one and thought, if you believe in Karma, this really sends the message home.

If you don't believe in it, its more of a reminder of what your actions do to both you and to others over time.  


Shall we all keep this in mind as we go about our day?

Maybe remember that its not just about being first, or the best, or the wealthiest, its about what we do to others comes back to us one way or the other.

What's that saying??
What goes around,
Comes around.

Even God reminds us that what we do to the least of His children, we do to Him.  

I am really hoping that only good things will be coming my way, because I do try to treat everyone as I would like to be treated.

Mac and Cheese any time of year

Check out this one - Mac and Cheese any time of year.
This one is quick and easy and so much better than that "box" mix. And really doesn't take much longer than that one....but tastes so much better!



Ingredients:
  • 8 oz./225 g macaroni noodles
  • ½ stick unsalted butter
  • ½ cup all-purpose flour
  • 2 cups reduced-fat (2%) milk
  • ½ tbsp. coarse kosher salt
  • 10 oz./285 g cheddar cheese, shredded

Instructions:
Preheat oven to 400° F


Pour noodles into Microwave Pasta Maker and add 4 cups water. 
Microwave on high power 10 minutes. 
Drain and add to medium bowl.

Meanwhile, melt butter in pan over medium heat. Whisk in flour.

Pour milk and salt into butter flour mixture and bring to a boil, stirring constantly. 
Mixture will thicken once it boils.

Add cheese and whisk until melted.

Pour cheese sauce over noodles and stir to combine. 
Pour into UltraPro 2-Qt./2 L Square Pan and place uncovered in oven for 30 minutes or until mixture is hot and bubbly.  Yes our UltraPro can go into the oven!  

Now I would make a breadcrumb crust (using breadcrumbs and butter) to put on top before putting into the oven.  Just like grandmom use to make.

It's Tupperware's Mid June 2015 brochure - Released EARLY

I was going to post this on the 13th but I got awesome news this morning - it was released early and you can order these AND the mid May brochure items starting TODAY.

It is time for the next mid month brochure at Tupperware.
I love the Summer Catalog, but I really like having mid month brochures that sometimes have fantastic deals from the main catalog but usually have limited pieces at great prices.

Scallops in a Lemon Vinaigrette

Sometimes I see recipes that I would love to make, but are afraid that I will "screw them up" because I think they are too "delicate" for me to make.
If you are like me (ok like I use to be) you need to pick up a Tupperware Smart Steamer. You could be the star of the next seafood dinner at your house ... 
yes at YOUR HOUSE.  
Look at these scallops.  Perfection.


Ingredients:


  • 1 lb./455 g medium sea scallops
  • ¼ tsp. coarse kosher salt
  • ¼ tsp. black pepper
  • 1 lb./455 g fresh asparagus
  • 1 lemon, zested and juiced 
  •        using Zest ’N Press® Gadget
  • 2 tbsp. extra virgin olive oil
  • 2 tsp. fresh dill, chopped
  • 1 tbsp. fresh chives, chopped


Instructions:

Place scallops in the Colander Tray and sprinkle with half the salt and pepper.

Place asparagus in the Steamer Base. 
Fill the Water Tray with 1¾ cups/400 mL water. 
Place Colander Tray on top of Steamer Base, Steamer Base on top of Water Tray and cover. 
Microwave on high power for 8 minutes.

Meanwhile, in a small bowl, whisk the remaining ingredients together.  

Serve scallops and asparagus drizzled with Vinaigrette. 

Serve with white or brown rice.

Watermelon and Feta Salsa




Watermelon and Feta Salsa
Ingredients: 
  • 4 cups chopped watermelon 
  • 1/2 cup chopped red onion 
  • 1/3 cup crumbled reduced-fat feta cheese 
  • 2 tablespoons chopped Kalamata olives 
  • 2 tablespoons seasoned rice vinegar 
  • 2 teaspoons olive oil 
  • 1/4 cup chopped fresh mint 
Directions:
In small bowl mix together all ingredients. Serve.

Just be Incredible

This one just fits in with some of the things that I've "discovered" about myself since I joined Tupperware.  
No this isn't a plug for my Tupperware business, although it is a wonderful business to be in with awesome products and people. 

It is something that just mirrors the teachings/information that has come from our USA/Canada president.


This is just how we feel.

Sometimes I think that people will not reach their full potential, will be looking back on their life and think I should have, I would have ... if only.  

Stop worrying about what others think.  
Stop worrying about what others will judge as "the" thing to do.

Do what you love.
And everything else will fall into place

Because you ARE possible,
You ARE incredible!
