Happy Halloween

Yes it is that time of year again ...  HAPPY HALLOWEEN!




I can't believe it is the end of October and we will be seeing all kinds of ghosts and goblins and super heroes.

I always love seeing the "little ones" in their tiny costumes....the tiny pea pods or pumpkins or even a kitten!





I know some are just so cute or scary or strange ..... but still




I think these are the cutest if all - any time of the year!

Give it to God

I know that there are LOTS of very very strong people out there.

I know that sometimes we are so determined that we will be strong and can handle everything and anything that is thrown at us, that we are devastated when we find that we can't.  We feel like we are failures when in reality we are just HUMAN.  When you are feeling this way, I suggest



It doesn't mean that we are weak or not capable of doing something - it means that we have accepted the fact that sometimes we need a little "extra" help getting everything done that we are juggling at the moment.  It is actually a sign that we are strong because we are willing to accept "help" and the love of a higher being who really does love us and accepts us just the way we are!

And if He can accept that we can't always handle everything and sometimes we need a little help from time to time ....... who are we to think differently?

Your Sky vs Your Ceiling

I think this one says it all.  It is something that should be "drummed" into our daughter's heads from when they are very little -- I am sure you have heard me say this before, that when my daughter was in middle school her "counselor/case worker" told me that he didn't  think she could do what she wanted to do (be a vet) because it would be too "difficult" for her.  If you recall I told him in no uncertain terms ... DO NOT EVER tell her that.  SHE will do what she sets her mind too.  Well she is a Junior in College studying Marine Biology - guess I either scared him or she decided SHE could do WHATEVER she wanted .......



If we let our daughter's BELIEVE that they can do/become/achieve anything that they set their minds to - there is not telling what they will do.

Perhaps this is what it is all about.
It's not that they don't like you, its that they don't like themselves.

Maybe that is what we need to do to stop the bullying everywhere - help everyone LOVE themselves so that they don't need to make others feel bad to feel better ........

I love this one.  I know its not a cat, but I have to tell you THIS is the look my Shadow gives me every once in a while - especially when her food dish is empty and she is in NO WAY happy with what I have to "offer" for the day.



This is also the look I want to "share" with some people who are just, and I'm going to be nice here, "in their own world" as they drive down the road.  I know you have all seen them.  They seem to think that they own the road and are oblivious to anything (and I do mean anything) that is happening around them.

Lasagna without the fuss

I know we like to have a good lasagna, especially in the winter, but to be honest, I don't like the amount of work nor the time it takes to prepare and then bake and then clean up the inevitable mess in my oven.  Well here is a version that probably takes an hour or less and sounds pretty darned good ...... I will definitely be trying this one VERY soon.


Tupperware Lasagna 
with no fuss or hours of work

  • 1 lb./455 g 85% lean ground beef 
  • 2 garlic cloves, peeled 
  • 1 recipe 15-Minute Marinara (see page 33) or your favorite sauce 
  • 1 tbsp. Simple Indulgence Italian Herb Seasoning Blend 
  • 15 oz./425 g container part-skim ricotta cheese 
  • 1 tsp. coarse kosher salt 
  • 1/2 tsp. black pepper 
  • pinch of nutmeg 
  • 1/2 lemon, juiced 
  • 4 oz./115 g fresh baby spinach 
  • 6 to 8 no-cook lasagna noodles 
  • 6 oz./170 g fresh mozzarella, sliced 
Break up ground beef into TupperWave® Stack Cooker Colander and stack on top of 3-Qt./3 L Casserole. Place garlic in base of Chop 'N Prep Chef. Cover and pull cord 4-5 times until finely chopped. Place minced garlic on top of ground beef, cover and microwave on high 3-4 minutes.

Drain away excess fat in the casserole, then mix beef with marinara and seasoning blend in a medium bowl. Place ricotta in a medium bowl and stir in salt, pepper, nutmeg and lemon juice.

In two batches, add spinach to base of Quick Chef® Pro System. Cover and turn handle until roughly chopped.

Spread a thin layer of marinara on the bottom of 3-Qt./3 L Casserole.
Place one whole noodle directly in middle of sauce.
Break another noodle to fit around the center piece to create a layer. Do not overlap.

Place another layer of sauce on top, followed by half the spinach, then half the ricotta.
Place a second layer of noodles, sauce, spinach and ricotta cheese.
Finish with a layer of noodles and sauce on top.

Cover and microwave on 50% power 16 minutes.
Place sliced mozzarella on top of sauce.
Cover and microwave an additional 3 minutes.

Allow lasagna to rest 10 minutes, covered. Cut into squares for serving.

I'm still finding all the wonderful things that this Stack Cooker can do - and I know I've just scratched the surface.  Who knew you could make great meals in the microwave?

Tortellini, Chicken and Cheese

This is another one of those recipes from Better Homes and Gardens Special Interest Magazines (2009) that would work well with Tupperware and could be made and on the table in probably less than 30 minutes if you use leftover chicken from one of the Stack Cooker Chicken Recipes I've already shared here and here.



Tortellini, Chicken and Cheese

  • 9 ounce package refrigerated cheese tortellini
  • 1 cup frozen peas, corn, pea pods or any combination
  • 8 ounces cream cheese spread - garden veggie or chives and onion or your favorite
  • 1/2 cup milk
  • 9 ounces cooked chicken breast, chopped
In a large pot or Tupperware Pasta Cooker, cook tortellini.  Place frozen vegetables in a colander and drain pasta water over veggies.  Put tortellini and veggies in a microwave safe bowl (or large casserole of Stack Cooker). 

Heat chicken (small casserole of Stack Cooker with cover would work great).  While chicken heats, combine cream cheese spread and milk in a small saucepan, heat and stir until cream cheese is melted and combined with milk.

Pour cheese sauce over pasta and vegetables, stir to combine.  Cover and microwave till heated through.  Spoon into individual bowls or plates and top with chicken.

Now I would have put the chicken in the casserole with the pasta and vegetables before pouring the cheese over top and then heat to serving temperature - but that's me.  I would like to have the cheese sauce adding additional flavor to my chicken .... but it really is up to you.

So how does that sound?  Bet that would put smiles on the faces of your family during the week.  And you didn't have to "slave over the stove" to put that smile on their face!

Microwave Meatloaf?

Yes you can definitely make meatloaf in the microwave 
AND
 it doesn't look "grey" and "unappealing" like so many I've seen.

Here is the meatloaf I made in my StackCooker,  in the microwave, in less than 20 minutes - START TO FINISH!





I have to say I was a little surprised.  I really did "doubt" this one because, although the chicken I have made has been awesome, I've seen some microwaved meats before and well to be honest, wasn't impressed.  This one just blew me away.

Even my husband who 1) is rather picky (sorry hon but you are) and 2) isn't a big meatloaf lover (the joke is we can have meatloaf when it snows - well it didn't but we did) seemed to enjoy this one AND didn't say he would rather not have it again.  So I would pronounce this one a winner.  And yes I am going to make this one again.  This recipe came from my Tupperware Director Mary Ann, so it's called


Mary Ann’s Micro Meatloaf

  • 2 beaten eggs
  • 1 cup Italian seasoned bread crumbs 2/3 cup milk
  • 1 small to medium onion  (chopped in Quick Chef) 
  • 1 to 2 cloves of garlic (chopped in Quick Chef) 
  • 4 Tbsp. barbecue sauce, chili sauce, catsup (whatever floats your boat) I used Country Bob's All Purpose Sauce which worked wonderfully!
  • 2 1/2 lb. lean ground beef
Topping
  • 1/2 cup of additional bottled barbecue sauce, chili sauce, catsup 
  • Generous amount of shredded cheese for the topping (approx 1 cup more or less)
In the TupperWave Stack Cooker 3-Qt Casserole combine egg, bread crumbs, milk, onion, garlic and the 4 Tbsp. of sauce; mix well (I used a wisk).
Add ground beef  and mix well (clean hands work best). 
Scoop the meat mixture out of the 3-Qt dish, transfer into the Stack Cooker's Colander, 
Mold it into the shape of a doughnut ring, place the Colander back onto the 3-Qt Casserole dish and cover. 
Cook on high for approx 18 minutes (6 minutes per pound). 
Remove Casserole cover and cover with a paper towel to absorb moisture during standing time. 

Let stand approx 4 to 5 minutes. Spoon the topping sauce over the top of meat loaf and sprinkle the shredded cheese on top of sauce. Place in microwave long enough to melt the cheese.

You will find that most of the juices and yuk drain into the 3-Qt Casserole dish below; however, there may be juices trapped in the middle of the meatloaf. Simply tip the Colander slightly and use a spatula to gently lift the bottom of the meatloaf to drain it. You can also soak it up with a wadded paper towel.

I only did 1/2 this recipe because it was only the two for dinner (week nights its just us) but I still had leftovers that went into one of my vent 'n serve containers so I can have it for lunch or dinner when it's just me.  I really am loving this.

Tortellini Stir Fry

I have to say I am really loving going through my old recipe magazines (I told you I have a ton!) and finding things that would work with my Tupperware Products or make meal planning so much easier, especially since there are only 2 of us for meals during the week.  Here is another one from 2009 magazine for quick and easy recipes - I really love these Better Homes & Garden Special Interest Publications!


Tortellini Stir-Fry
  • 1 9ounce package cheese tortellini
  • 1 TBSP oil
  • 1 16ounce package fresh or frozen stir-fry veggies
  • 3/4 cup peanut stir-fry sauce
  • 1/4 cup chopped dry roasted cashews

Cook tortellini (Tupperware Pasta Cooker or Pot).  Drain and set aside

Heat oil in large skillet or wok over medium high heat.  Add veggies and cook/stir until tender crisp.  Fresh would be about 4 minutes, Frozen would be about 7 minutes.  Add tortellini and stir-fry sauce, tossing gently to coat and heat through.  Sprinkle with cashews before serving.

I bet this would also be good with chicken or shrimp ..... unless you really wanted a vegetarian meal or it was one of your "meatless" meals.  Ok now I have to look for a good peanut sauce recipe - mmmm

Soup Mugs

Looking for a soup mug to take to work .... I know we don't usually like to eat at our desks, but sometimes it is required - especially in the Fall/Winter months.  Using these you can take your home-made soup to work (no drips/leaks/messes) and have your soup from the microwave.


What is really great this month is that you can get 2 mugs (holds 2 cups each) for a reasonable cost ($16.50) that you can use yourself or share with a friend.  These are great containers - I've already "stocked up" for this coming Winter Season.

Out of Bed?

I just saw this from my cousin ....... it soooo fits my poor daughter's day.  I really think she would have loved to have stayed in bed this morning.




Poor kid has a sore shoulder and a problem with her computer ......... not a good way to start the week (somehow college professors don't understand aches, pains or computer problems).

Happy Birthday Mom

October is a very "busy" month for birthday's in my family,
First it was mine, then my brother John and now my Mom!

It is the start of a very busy time for celebrations (somehow the last half of the year is a constant celebration for us) at least in this family.





I know this is the same picture I used for my Dad's birthday last month ....... but I don't have a more current picture of mom (we don't get to see her until Thanksgiving) but I will get another one to put up.

Mom is 76 years old today!  I think she looks pretty darned good for 76, don't you?






Happy Birthday Mom ..... I hope today is a FANTASTIC day filled with only good things, and just the start of a FABULOUS new year!  Talk to you later today.

I just noticed that the cake carrier is an old Tupperware Rectangle Cake Carrier!  Geez even mom knows Tupperware lasts FOREVER!

Mashed Potato Soup

I don't know about you but I always always seem to make too much when I make mashed potatoes.  I have a family of mashed potato and gravy lovers, so I have to make more than most, however I always seem to overdo it.  And there is only so many times you can make potato pancakes out of the leftovers.

This recipe looks like something I will be trying, especially since there are those cold days of Fall and Winter knocking on our doors - I know shhhh.

Mashed Potato Soup
  • 20 ounces of mashed potatoes (could use those refrigerator ones too)
  • 1 14 ounce can of chicken broth
  • 1/4 cup sliced green onions (about 2)
  • 1/2 cup shredded Swiss, Cheddar, or smoked Gouda (about 2 ounces)
  • Sour Cream (optional)

Combine potaoes, broth and green onions in a saucepan.  Cook over medium high heat until mixture is well combined and gently boiling. 
Add cheese and whisk until cheese is melted and combined.

Serve in a nice bowl or soup mug with dollop of sour cream if using.

What is Faith

Perhaps today, being Sunday, is the perfect time to post this question.

Have you thought about it?  Have you listened to a talk or sermon or even had the discussion yourself about it?  What did you come up with for an answer to this question?

What is Faith? 

I received this definition the other day from one of my officemates that I have to admit was pretty straightforward but I think, hit the nail on the head.

What is Faith?

Faith is not believing that God can…
It is knowing that God will!!!

 Read these sentences very carefully…
 "To get something you never had,
   you have to do something you never did."

  When God takes something from your grasp He's not punishing you,
   but merely opening your hands to receive something better.

Concentrate on this sentence.
"The Will of God will never take you where
   the Grace of God will not protect you."

Now for just 25 Words,

   and please watch over and heal my family in your name,
                 Amen.'  

This prayer is so powerful.  At least it is for me.  It speaks to me deep down in my heart and soul.  It is something that I know can happen if it is God's will.

Some of you may click on this and "defriend" me or "unfollow" my blog.  I hope you don't, but I will accept that it can happen and there is nothing that I can do to change that.

I hope that this has touched you just as it has touched me.  Think about it.

Double Chicken Tortellini Soup

Another great recipe to use up "leftover" chicken.  I hate the term "leftover" because there are a lot of times that I make EXTRA on purpose so that I can make other things during the week without having to start from scratch but still not have to rely on take-out/fast food or those calorie and sodium laden frozen prepared meals.  This is another one of those recipes that would work well with the StackCooker chicken that was "leftover" ....

Double Chicken Tortellini Soup


  • 5 14-ounce cans of chicken broth or home-made broth
  • 1 14.5 ounce can Italian style diced tomatoes, undrained
  • 1 1/2 cups frozen whole kernal corn
  • 9 ounces refrigerator chicken tortellini
  • 2 1/2 cups cooked chicken, shredded (about 12 ounces)
  • salt and pepper
  • shredded Parmesan cheese (optional)
  • sliced green onion (optional)
In a large saucepan, combine chicken broth, tomatoes and corn.  Bring to a boil over medium high heat.
Add tortellini and chicken to broth, reducing heat to medium.  Cook uncovered for 10 minutes stirring occasionally.  Season with salt and pepper.

Serve with some nice crusty bread, Parmesan Cheese and/or green onion (if using).

Why you NEED the Tupperware Tower

I have had a few comments about this set


Some started with ...
Holy Moses WHAT am I going to do with 8 Pieces?

And then we went to just how BIG the bottom two bowls are.



Well lets see .... what are you going to do with 8 pieces?  How about splitting the set with a friend - you get 4 and she gets 4 and split the cost?  Makes it much more affordable for you both AND you each get 4 very usable bowls.

How big the two bottom bowls are .... I don't know, I don't  think they are that big AND if you tend to make a mess when you mix your baking dough ... they really aren't that big - they really aren't heavy (which with my sore shoulder was a blessing this morning) - they stack really nice together and I bet that "big" bottom bowl would make a great bowl for POPCORN!  Can you say MOVIE NIGHT!

I used one of mine this morning to make a really great pumpkin quick bread.  I mixed the batter in one of the bowls and then cooked my quick bread in the microwave (yes the microwave) in the Stack Cooker with the cone (think bundt cake) in about 8 minutes.

Can't wait for Jenn to see this, she's going to be really happy when she gets home from work this afternoon.  I'm thinking I might make a chocolate "frosting" for the top and then she can take the "leftovers" back to school on Monday morning.

You are Stronger ....



I think this is something that needs to be taught to our children ...... but taught by example.  Sometimes I think that is the only way to really teach something.  I don't get the "do as I say, not as I do" thing that many ascribe to.

What do you think - is this not a perfect quote?  Do you agree that our children ALL our children need to be taught this so that they UNDERSTAND what we are trying to teach them - by example?

I think I might be printing this one out and putting it on the wall ... geez my walls could be very covered at this rate.

Pineapple Pork Chili

This one looks interesting - we like Pork, we like Chili and we like Pineapple ... just never had them together.  I'm thinking this is another must try.  Let's face it ... it is getting to be Chili Time!


Pineapple Pork Chili
  • 1 lb ground pork (or beef)
  • 1 16 ounce jar pineapple salsa*
  • 1 15 ounce can of kidney beans, drained and rinsed
  • 1 8 ounce can tomato sauce (or home-made)
  • 1 TBSP chili powder
  • Pineapple slices (optional)


*If you can't find pineapple salsa, use regular salsa and add 1/3 to 1/2 cup crushed pineapple.

In a 3 qt saucepan, brown meat, drain off any fat.  If you have a Tupperware Stack Cooker, you can put your pork (or beef) in the colander over the 3 qt casserole and cook in microwave approx 6 minutes - no fuss, no muss, all the fat drains down into casserole so it is easily discarded.

Return meat to saucepan or 3 qt casserole of Stack Cooker.  Stir in salsa, beans, tomato sauce and chili powder and simmer or microwave, uncovered until all heated through.

Spoon into individual bowls.  Garnish dish with Pineapple slice, if using

I like this one because you can basically come home from work and make dinner in less than 30 minutes AND have something that is "stick to the ribs".  I bet this would make some awesome leftovers ...

Are you Beautiful?

Sometimes I really feel that we have totally missed the boat, so to speak, when we are teaching our children.  I hope that I have taught my children this lesson, if nothing else.



It is a "play" on that old saying .... Beauty is in the eye of the beholder.  If we LOOK for beauty on the outside only, we could be very very disappointed, especially when we realize that their beauty is "only skin deep".

I just love this.


I think all too often people, especially young girls, will compromise their believes or feelings so that they can "fit in" or "be accepted" or even worse "so they will be liked/loved".  We need to help them to understand that the people we want to be our friends, to be part of our lives will rise up to meet the high standards we have, that we live our lives by, IF they are meant to be a part of our lives.

But this doesn't just apply to young girls.  No it should be taught to our children - boys as well as girls - and lived in such a way that they will see that we also live this way.  That our friends live this way ---- and we are all better for it.

Think Pink Giveaway for Breast Cancer Awareness Month

I'm sure by now you are all aware that October is Breast Cancer Awareness Month.

Make your own gifts packaging solutions

Chocolate Snack Cake

Yes two of my favorite things ... Chocolate and Snack Cakes.  I mean who doesn't like Chocolate and "Snack" Cakes?  Chocolate is a given, Cake is wonderful but if you can make it into a "snack" cake then the guilt is less when you indulge right?  I could see this as a wonderful Birthday Cake .... oh Happy Birthday dear brother ...

I found this recipe in an "old" Taste of Home Best Light Recipes from 2006!  I'm thinking I'm going to make this for me sometime today - I mean why not?  Right?

Chocolate Snack Cake

  • 2 eggs
  • 2 egg whites
  • 2/3 cup Unsweetened Applesauce
  • 1/3 cup Canola Oil
  • 2 squares (1 ounce each) Semi-Sweet Chocolate, melted
  • 2 tsp vanilla 
  • 1 cup all purpose flour
  • 1 cup sugar
  • 1/3 cup baking cocoa
  • 1 tsp baking powder
  • 1/2 tsp salt

In bowl, beat eggs and egg whites.  Add applesauce, oil, chocolate and vanilla; mixing well.
Combine dry ingredients in another bowl.  Gradually add to egg mixture until just combined.
Pour into a 9 inch spring-form pan coated with non-stick cooking spray.
Bake at 350 degrees for 30 - 35 minutes.
Cool on wire rack.  Run knife around edges before removing sides.
Makes 12 servings.  Serve with 1/2 cup frozen vanilla yogurt

Now I will be making this in the base of my Tupperware Stack Cooker with cone insert that has been sprayed with cooking spray, and "cooking" it in the microwave ... for about 8 - 10 minutes.  Once cool, turn out on to my cake plate (I should have gotten one of Tupperware's Round cake carriers but alas not yet) and sift a little powdered sugar on top.  This way I can forgo the frozen yogurt (or ice cream) if I want .......... but hey I can have both too right?

I will post a picture later, once I make it, if I don't cut into it before I can take a picture.

And if I'm really really good today I will have the new creation by Tupperware - a Chocolate-tini!  I just saw this one the other day and I'm thinking oh yeah a definite must.  Now I have to find the recipe and it may very well include this in my list of celebration drinks/ideas.

Happy Birthday John

I had to do this post.  I just had to.
Today is my brother John's birthday ........ and guess what he is getting "old".  I can say this because he called me last week for my birthday and wanted to know how it felt to be celebrating the

 birthday.

So since today is HIS birthday I had to let him know that his day will come ....... in not too many years (3) he will be celebrating the same one .............


So in addition to wishing him a very HAPPY BIRTHDAY here so everyone can see, I'm passing on a message from Jimmy Buffet ....

'Cause all these birthdays ....... sure does beat the alternative - so I be celebrating again for you too!

Tupperware Tiramisu Trifle

Oh OH OH is this not a gorgeous looking dessert picture?
Would you like to be able to make one of these for yourself?
You CAN.


Tiramisu Trifle

  • 8 oz./225 g container mascarpone cheese 
  • 8 oz./225 g container whipped cream cheese 
  • 1/4 cup plus 1 tsp. Simple Indulgence Chocolate Dessert Blend 
  • 2 tbsp. instant espresso powder or instant coffee 
  • 3 cups heavy cream 
  • 6 tbsp. powdered sugar 
  • 2 tsp. vanilla extract 
  • 4 oz./115 g package ladyfingers 
  • 1 cup strong prepared coffee
Place mascarpone cheese, cream cheese, dessert blend and instant coffee in bowl of an electric mixer.  Beat at medium speed until well blended, set aside.
Place heavy cream in base of Whip 'N Prep Chef. Cover and turn handle to whip until cream holds soft peaks. Add powdered sugar and vanilla, replace cover and turn handle to whip until cream holds stiff peaks.
Fold 2 cups of whipped cream into chocolate filling.
Brush all ladyfingers with prepared coffee using a pastry brush and place a layer on the bottom Prep Essentials® Snack-Stor® Container.
Spread half the chocolate filling over the ladyfingers.
Top with another layer of lady fingers and remaining chocolate filling.
Spread with remaining whipped cream and dust lightly with 1 tsp. chocolate blend.
Seal and chill in refrigerator until serving.

I saw this one on my cousin's Facebook Page (you remember my creative photographer cousin, Fran) and just knew this would be perfect to share with you all.

I happen to think that Mark Twain was not just a great author, but was pretty darned smart too!  I think this really sums it all up.

I know there are lots of important days in our lives, but these I think are what help to make those other days special because we know why they are important.

Apple Upside Down Cake


I can't wait to check this one out.  We love this time of year with all the wonderful Apples from the local orchard - this just looks perfect.  I may try putting some of the apple mixture "inside" the cake (1/4 inside, 3/4 on top), since that's what hubby is use to, but this could be very interesting, AND I get to support the local farmers.  Yes we will definitely be trying this one very soon.

Ingredients 
  • 4 Granny Smith apples 
  • 1 1/2 tsp. Simple Indulgence™ Cinnamon-Vanilla Seasoning Blend 
  • 1/2 cup packed light brown sugar 
  • 3 tbsp. unsalted butter 
  • 1 box yellow cake mix (18.25 oz) with eggs, water and oil according to package directions 
Place one teaspoon of seasoning blend, brown sugar and butter in 2-cup/500 mL Micro Pitcher. Microwave on high power 1 minute; stir to melt and set aside. 

With Twistable™ Peeler, peel and core apples. 
Cut into 1/4-inch thick slices and place into Steamer Base of Tupperware® SmartSteamer

Fill Water Tray with 1 3/4-cups /400 mL of water, cover and microwave on high power 8-10 minutes or until apples are tender. Remove and place in Thatsa® Bowl Jr. and toss with cinnamon/vanilla/ sugar/butter mixture to coat.  

Place cake mix in Thatsa® Bowl. Add remaining 1/2 tsp. of seasoning blend along with eggs, water and oil and mix with a wire whisk until smooth. 

Apply cooking spray to Tupperware® Stack Cooker 3 Qt./3 L Casserole with Cone. Spread apple mixture on bottom and pour cake batter over top. 

Microwave on high power 10 minutes or until toothpick comes out clean when inserted near cake center. Cool 5 minutes, invert cake onto platter of Round Cake Taker

If desired, drizzle with caramel sundae syrup. Serve warm or at room temperature.
