Microwave Meatloaf?

Yes you can definitely make meatloaf in the microwave 
AND
 it doesn't look "grey" and "unappealing" like so many I've seen.

Here is the meatloaf I made in my StackCooker,  in the microwave, in less than 20 minutes - START TO FINISH!





I have to say I was a little surprised.  I really did "doubt" this one because, although the chicken I have made has been awesome, I've seen some microwaved meats before and well to be honest, wasn't impressed.  This one just blew me away.

Even my husband who 1) is rather picky (sorry hon but you are) and 2) isn't a big meatloaf lover (the joke is we can have meatloaf when it snows - well it didn't but we did) seemed to enjoy this one AND didn't say he would rather not have it again.  So I would pronounce this one a winner.  And yes I am going to make this one again.  This recipe came from my Tupperware Director Mary Ann, so it's called


Mary Ann’s Micro Meatloaf

  • 2 beaten eggs
  • 1 cup Italian seasoned bread crumbs 2/3 cup milk
  • 1 small to medium onion  (chopped in Quick Chef) 
  • 1 to 2 cloves of garlic (chopped in Quick Chef) 
  • 4 Tbsp. barbecue sauce, chili sauce, catsup (whatever floats your boat) I used Country Bob's All Purpose Sauce which worked wonderfully!
  • 2 1/2 lb. lean ground beef
Topping
  • 1/2 cup of additional bottled barbecue sauce, chili sauce, catsup 
  • Generous amount of shredded cheese for the topping (approx 1 cup more or less)
In the TupperWave Stack Cooker 3-Qt Casserole combine egg, bread crumbs, milk, onion, garlic and the 4 Tbsp. of sauce; mix well (I used a wisk).
Add ground beef  and mix well (clean hands work best). 
Scoop the meat mixture out of the 3-Qt dish, transfer into the Stack Cooker's Colander, 
Mold it into the shape of a doughnut ring, place the Colander back onto the 3-Qt Casserole dish and cover. 
Cook on high for approx 18 minutes (6 minutes per pound). 
Remove Casserole cover and cover with a paper towel to absorb moisture during standing time. 

Let stand approx 4 to 5 minutes. Spoon the topping sauce over the top of meat loaf and sprinkle the shredded cheese on top of sauce. Place in microwave long enough to melt the cheese.

You will find that most of the juices and yuk drain into the 3-Qt Casserole dish below; however, there may be juices trapped in the middle of the meatloaf. Simply tip the Colander slightly and use a spatula to gently lift the bottom of the meatloaf to drain it. You can also soak it up with a wadded paper towel.

I only did 1/2 this recipe because it was only the two for dinner (week nights its just us) but I still had leftovers that went into one of my vent 'n serve containers so I can have it for lunch or dinner when it's just me.  I really am loving this.
