Mashed Potato Soup

I don't know about you but I always always seem to make too much when I make mashed potatoes.  I have a family of mashed potato and gravy lovers, so I have to make more than most, however I always seem to overdo it.  And there is only so many times you can make potato pancakes out of the leftovers.

This recipe looks like something I will be trying, especially since there are those cold days of Fall and Winter knocking on our doors - I know shhhh.

Mashed Potato Soup
  • 20 ounces of mashed potatoes (could use those refrigerator ones too)
  • 1 14 ounce can of chicken broth
  • 1/4 cup sliced green onions (about 2)
  • 1/2 cup shredded Swiss, Cheddar, or smoked Gouda (about 2 ounces)
  • Sour Cream (optional)

Combine potaoes, broth and green onions in a saucepan.  Cook over medium high heat until mixture is well combined and gently boiling. 
Add cheese and whisk until cheese is melted and combined.

Serve in a nice bowl or soup mug with dollop of sour cream if using.
